CROCK-POT® CHICKEN CHILI
Made a chicken chili recipe, and it was bland. So I took the ingredients and added my own flair. My family loves it when it gets cold out, because they know this will be on the menu. It's very flavorful. Serve with tortilla chips and sliced avocado for something different. Serve with sour cream and cheese.

Steps:
- Mix green salsa, diced tomatoes with green chile peppers, white beans, chicken broth, corn, onion, oregano, cumin, salt, and black pepper together in a slow cooker. Lay chicken breasts atop the mixture.
- Cook on Low until the chicken shreds easily with 2 forks, 6 to 8 hours.
- Remove chicken to a cutting board and shred completely; return to chili in slow cooker and stir.

- Combine great Northern beans, pinto beans, corn, onions, chicken broth, rotisserie chicken, green chile peppers, hot pepper sauce, oregano, cumin, garlic powder, salt, and pepper in a slow cooker.

EASY SLOW COOKER CHICKEN CHILI
Steps:
- Gather the ingredients.
- Dice chicken or cut it into strips. Put chicken pieces in slow cooker along with onion, bell pepper, garlic, drained and rinsed beans, tomatoes and tomato sauce, corn, chili powder, cumin, oregano, salt, pepper, and bay leaf. Stir to blend ingredients.
- Cover and cook on high for 1 hour, then cook on low for 3 to 4 hours longer, or until chicken is cooked and tender. Optionally, you can simply cook on high for 3 to 4 hours.
- Remove bay leaf.
- Spoon chili into bowls and garnish with sour cream or shredded cheese and chopped fresh cilantro, if desired.

HEARTY CHICKEN CHILI CROCK POT
This is a regular and favorite in my family. It was out of a crock pot magazine I saw on the shelves one day and I've been loving it ever since. It's easy to make, and is a great combination of healthy and comfort food. I am typing it as is in the magazine, but I personally don't use the jalapeno pepper, any extra salt and I use salt-free chicken broth. No one seems to notice anything missing. We try keep the sodium low for the most part, but to each their own! =D

Steps:
- Combine first 8 ingredients in 4 1/2qt. slow cooker.
- Add hominy, beans, chicken and broth. Stir well to combine. Cover and cook on LOW 7 hours or High 5 hours.
- If thicker gravy is desiered, combine 1 Tbl flour and 3 Tbl of cooking liquid in small bowl. Add to crock-pot and cover. Cook on high for 10 minutes or until thickend. Serve in bowls and garnish as desired.

- Crumble sausage into a large nonstick skillet. Add onion; cook and stir over medium heat until meat is no longer pink. Drain., Transfer to a 5-qt. slow cooker. Stir in remaining ingredients except green onions. Cook, covered, on low 4-5 hours or until chicken is no longer pink. Serve with green onions if desired.

HEARTY SLOW-COOKER CHILI
Steps:
- In a large skillet, heat oil over medium-high heat. Add green pepper, onion and garlic; cook and stir 3-4 minutes or until tender. Transfer to a 6-qt. slow cooker., Working in batches if necessary, cook beef in the same skillet over medium-high heat until no longer pink, 8-10 minutes, breaking meat into crumbles. Using a slotted spoon, transfer to slow cooker., Stir tomatoes, tomato sauce, chiles, parsley and seasonings into beef mixture. Cook, covered, on low 6-8 hours to allow flavors to blend. Serve with rice and toppings as desired. Freeze option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water or broth if necessary.

HEARTY DAKOTA CHILI (CROCK POT)
This is my own recipe i came up with for chili, combining what i thought was the best parts of several standard recipes. This has good flavor but is not for those who like a thin chili or one with lots of veggies. This is a thick hearty version that relies more on seasonings than chili peppers, though if you really like them you can certainly add them in, especially if you like your chili really spicy. I'd say this is more of a medium spiciness that suits my tastes. Don't let the long list throw you off, it's mostly things that are easy to keep on hand :) Hope you enjoy it :)

- Brown ground beef and onion in a skillet just until browned.
- Transfer the beef and onions to either a crock pot or a large pot on the stove.
- Add all of the liquid ingredients then all of the spices and stir together. If you think you need or like a little more liquid add a little bit of water, use your judgment on the amount of liquid, it should cover the beans and beef easily but not be overly soupy.
- Cook covered over low heat on the stove for at least an hour or two, stirring gently every 20 minutes or so, OR cook in a crock pot on low for about 6 hours.
- Let sit off the heat for about 15 minutes and serve with some crackers or bread and some shredded cheese. Enjoy! :).
