HEART SMART OLD FASHIONED OATMEAL COOKIES

1/2 c. diet vegetable oil tub butter
1/2 c. brown sugar
1/4 c. sugar
2 egg whites
1 teaspoon vanilla
1 c. flour
2 teaspoon baking pwdr
1/2 teaspoon salt
1 c. oatmeal
1/2 c. raisins (optional)

Steps:

  • Cream butter and sugars. Add in egg whites and vanilla. Blend well. Mix flour, baking pwdr and salt. Add in gradually to butter and sugar mix. Add in oatmeal and raisins. Mix till well blended. Drop by teaspoonsful onto nonstick cookie sheet (can use pan spray on cookie sheet). Bake 10 to 12 min at 375 degrees.

From Health, January 2008. I made these with dried figs (soaked thoroughly in water) in place of the dates. Very chewy and delicious cookies and plenty sweet.

6 tablespoons unsalted butter
3/4 cup packed light brown sugar
1/3 cup all-purpose flour
1/3 cup whole wheat flour
3/4 teaspoon baking soda
1 1/2 cups oats
1/2 teaspoon salt
1 lightly beaten egg
1 teaspoon vanilla extract
1 cup chopped pitted dates
3 ounces coarsely chopped bittersweet chocolate

Steps:

  • Preheat oven to 350º.
  • Melt butter in a small saucepan over low heat.
  • Remove from heat and add brown sugar.
  • Stir until smooth.
  • In a medium bowl, combine all-purpose flour, whole-wheat flour, baking soda, oats, and salt.
  • Combine the butter mixture with the dry ingredients, and add egg, vanilla, and chopped dates.
  • Fold in bittersweet chocolate.
  • Mix well and spoon mixture by tablespoon-fulls out onto lightly greased (or silicone baking mat-covered) baking sheets.
  • Bake for 12 minutes, until tops are dry to the touch.

Crisco® Original No-Stick Cooking Spray
3/4 cup Crisco® All-Vegetable Shortening or 3/4 stick Crisco® All-Vegetable Shortening Sticks
1 1/4 cups firmly packed brown sugar
1 large egg
1/3 cup milk
1 1/2 tsps. vanilla extract
3 cups old-fashioned rolled oats
1 cup Pillsbury BEST® All Purpose Flour
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. ground cinnamon
1/2 cup raisins
1/2 cup coarsely chopped walnuts

Steps:

  • HEAT oven to 350 degrees F. Coat baking sheets lightly with no-stick cooking spray.
  • COMBINE shortening, brown sugar, egg, milk and vanilla in bowl of electric mixer; beat at medium speed until well blended.
  • COMBINE oats, flour, baking soda, salt and cinnamon. Mix into shortening mixture at low speed just until blended. Stir in raisins and walnuts. Drop by rounded measuring tablespoonfuls of dough 2 inches apart onto prepared baking sheets.
  • BAKE 8 to 10 minutes or until lightly browned. Cool 2 minutes on baking sheets. Place on cooling racks to cool completely.

1 cup raisins
½ cup hot water
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups quick cooking oats
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup packed brown sugar
½ cup chopped walnuts
2 eggs
¾ cup vegetable oil
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Soak raisins in hot water and set aside.
  • In large bowl, sift flour with soda, salt and spices. Blend in rolled oats, sugar and nuts. In a separate bowl, beat eggs with fork and add oil, vanilla, and raisins and water mixture. Pour into dry ingredients, stirring until well mixed. Drop by teaspoonfuls about two inches apart onto ungreased cookie sheets.
  • Bake 10 to 13 minutes in the preheated oven, until the edges are golden.
