1/2 cup fat-free plain yogurt
1 ounce fat-free cream cheese
2 teaspoons thinly sliced green onion
2 teaspoons finely chopped sweet yellow pepper
2 teaspoons finely chopped sweet red pepper
2 teaspoons Italian salad dressing mix
1/8 teaspoon ground nutmeg
1 cup frozen leaf spinach, thawed and squeezed dry
Radishes and carrot sticks

Steps:

  • In a small bowl, combine the first 7 ingredients; stir in spinach. Cover and refrigerate at least 1 hour before serving. Serve with vegetables.

  • Cook on high for 4 hours, or until all cheese is melted

12 ounces frozen spinach
2 (12 ounce) cans artichoke hearts, chopped fine
1 onion, chopped fine
3/4 cup nutritional yeast
6 garlic cloves
1 (12 ounce) can white beans
5 tablespoons apple cider vinegar
3 tablespoons vegan mayonnaise
1 1/2 cups vegetable broth
1 tablespoon salt
1 tablespoon ground pepper
1 teaspoon dried basil
1 dash cayenne

Steps:

  • 1. Preheat oven to 350.
  • 2. Sautee finely chopped onion and garlic for 3 minutes until starting to brown. Add in spinach, and artichokes and sautee for about 6 minutes or until well combined and tender (You may want to food process this depending on your desired texture).
  • 3. In a food processor or blender add white beans, veganaise, vegetable broth, nutritional yeast, ACV, and spices until creamy.
  • 4. Combine all ingredients in a baking dish and bake for 20 minutes until hot.
  • Add extra vegetable broth during cooking to give it a silky, bubbling texture.
  • (this batch is for a large party, make 1/2 if under 10 people).

2 tablespoons extra virgin olive oil, divided
2 -3 garlic cloves, minced
2 (10 ounce) bags spinach
1 (15 ounce) can cannellini beans, drained and rinsed
1 tablespoon lemon juice
1 tablespoon balsamic vinegar
1 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • In a large nonstick skillet, heat 1 tablespoon of the oil, over medium heat.
  • Add the garlic and cook until fragrant, about 1 minute.
  • Add one bag of spinach and cook for 2 minutes until wilted. Repeat with the remaining bag of spinach. Let the mixture cool for a few minutes.
  • Place the remaining olive oil, spinach mixture, cannellini beans, lemon juice, balsamic vinegar, salt, and pepper in the bowl of a food processor.
  • Blend until the mixture is smooth.

1 10-ounce bag baby spinach
1 cup packed fresh basil
3/4 cup canned cannellini beans, drained and rinsed
6 ounces Neufchatel cream cheese
1 clove garlic, smashed
1/2 cup low-sodium chicken broth
1 14-ounce can artichoke hearts, drained, squeezed dry and finely chopped
1/4 cup grated parmesan cheese
3/4 cup shredded low-fat mozzarella cheese
Pinch of cayenne pepper
2 or 3 dashes Worcestershire sauce
Freshly ground black pepper
Cooking spray
Baked chips, for serving

Steps:

  • Preheat the oven to 450. Bring a pot of salted water to a boil and prepare a bowl of ice water. Stir the spinach and basil into the boiling water and cook until bright green, about 30 seconds. Remove with a slotted spoon and immediately plunge in the ice water. Drain and squeeze dry, then roughly chop. Puree the beans, cream cheese, garlic and chicken broth in a food processor until smooth, scraping the sides as needed. Transfer to a medium bowl and fold in the spinach and basil, artichokes, parmesan and 1/2 cup mozzarella. Add the cayenne, Worcestershire sauce, 1/2 teaspoon salt, and black pepper to taste. Mist a deep 1-quart casserole dish with cooking spray. Spread the dip mixture in the dish and top with the remaining 1/4 cup mozzarella. Bake until golden and bubbly, 20 to 25 minutes. 1 box chopped frozen spinach, thawed
2 cans artichoke hearts in water, drained and chopped
the juice of 1 lemon
1 medium onion, chopped fine
1 clove garlic, minced
1 few drops of tabasco sauce (optional)
2 Tbsp reduced-fat mayonnaise
2 Tbsp sour cream
1 bag shredded (~12 oz) cheese blend (such as asiago, cheddar, parmesan and mozzarella) - reserving a handful for sprinkling on top before baking
wheat crackers, french loaf or sliced sour dough bread for dipping

Steps:

  • In a large bowl blend chopped spinach, artichoke hearts, and lemon juice (and a few drops tabasco if desired). Set aside. Lightly saute the chopped onion in olive oil til nearly translucent and add garlic 1 minute before removing from heat. Add sauteed veggies to spinach/artichoke mixture. Add the mayo, sour cream, and shredded cheese til well-blended. Spread into an oiled casserole dish, sprinkle with a handful of leftover cheese and bake at 350 til lightly brown and bubbling, about 45 minutes.

I came up with this based partly on the Knorr recipe and partly on a recipe I found on Pinterest for low fat, high protein ranch dressing using cottage cheese! I am posting to get the nutritional content : ) I also highly recommend trying Spinach dip with the new dill flavored Triscuits! YUM!

1 cup fat free Greek yogurt
16 ounces fat-free cottage cheese
1 (8 ounce) can water chestnuts
3 green onions
1 (1 1/2 ounce) package Knorr vegetable soup mix
20 ounces frozen chopped spinach

Steps:

  • In food processor combine Greek yogurt and cottage cheese. Blend until smooth.
  • Add water chestnuts and pulse a few times to chop them up.
  • Pour into mixing bowl. Add chopped green onions and Knorr soup mix.
  • Rinse and drain spinach. Wring dry. Mix with other ingredients until well combined. Enjoy!
