- In a small bowl, combine the first 7 ingredients; stir in spinach. Cover and refrigerate at least 1 hour before serving. Serve with vegetables.

- 1. Preheat oven to 350.
- 2. Sautee finely chopped onion and garlic for 3 minutes until starting to brown. Add in spinach, and artichokes and sautee for about 6 minutes or until well combined and tender (You may want to food process this depending on your desired texture).
- 3. In a food processor or blender add white beans, veganaise, vegetable broth, nutritional yeast, ACV, and spices until creamy.
- 4. Combine all ingredients in a baking dish and bake for 20 minutes until hot.
- Add extra vegetable broth during cooking to give it a silky, bubbling texture.
- (this batch is for a large party, make 1/2 if under 10 people).

- In a large nonstick skillet, heat 1 tablespoon of the oil, over medium heat.
- Add the garlic and cook until fragrant, about 1 minute.
- Add one bag of spinach and cook for 2 minutes until wilted. Repeat with the remaining bag of spinach. Let the mixture cool for a few minutes.
- Place the remaining olive oil, spinach mixture, cannellini beans, lemon juice, balsamic vinegar, salt, and pepper in the bowl of a food processor.
- Blend until the mixture is smooth.

HEALTHY HOT ARTICHOKE-SPINACH DIP

- Preheat the oven to 450. Bring a pot of salted water to a boil and prepare a bowl of ice water. Stir the spinach and basil into the boiling water and cook until bright green, about 30 seconds. Remove with a slotted spoon and immediately plunge in the ice water. Drain and squeeze dry, then roughly chop. Puree the beans, cream cheese, garlic and chicken broth in a food processor until smooth, scraping the sides as needed. Transfer to a medium bowl and fold in the spinach and basil, artichokes, parmesan and 1/2 cup mozzarella. Add the cayenne, Worcestershire sauce, 1/2 teaspoon salt, and black pepper to taste. Mist a deep 1-quart casserole dish with cooking spray. Spread the dip mixture in the dish and top with the remaining 1/4 cup mozzarella. Bake until golden and bubbly, 20 to 25 minutes. HEALTHY SPINACH ARTICHOKE DIP
Steps:
- In a large bowl blend chopped spinach, artichoke hearts, and lemon juice (and a few drops tabasco if desired). Set aside. Lightly saute the chopped onion in olive oil til nearly translucent and add garlic 1 minute before removing from heat. Add sauteed veggies to spinach/artichoke mixture. Add the mayo, sour cream, and shredded cheese til well-blended. Spread into an oiled casserole dish, sprinkle with a handful of leftover cheese and bake at 350 til lightly brown and bubbling, about 45 minutes.
HEALTHY SPINACH DIP
I came up with this based partly on the Knorr recipe and partly on a recipe I found on Pinterest for low fat, high protein ranch dressing using cottage cheese! I am posting to get the nutritional content : ) I also highly recommend trying Spinach dip with the new dill flavored Triscuits! YUM!

Steps:
- In food processor combine Greek yogurt and cottage cheese. Blend until smooth.
- Add water chestnuts and pulse a few times to chop them up.
- Pour into mixing bowl. Add chopped green onions and Knorr soup mix.
- Rinse and drain spinach. Wring dry. Mix with other ingredients until well combined. Enjoy!
