My husband loves oatmeal cookies, so I have created a low fat, low sugar recipe. The addition of raisins adds more sweetness.

Number Of Ingredients 12

1/2 cup brown sugar
2 egg whites
2/3 cup applesauce (unsweetened)
1 teaspoon vanilla
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt (optional)
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1 1/2 cups old fashion oatmeal
2/3 cup raisins
1/2 cup walnuts (optional)

Steps:

  • Mix brown sugar thru vanilla together.
  • Add flour, soda, salt, cinnamon, nutmeg.
  • Stir in oatmeal, raisins& walnuts.
  • Drop on cookie sheets which have been sprayed or I use parchment paper.
  • (flatten with fork) Bake in 350 oven for about 10 minutes.
  • (I do not like a lot of sugar so by adding raisins you also add a little additional sweetness) Enjoy!

Number Of Ingredients 14

1 cup whole wheat flour
1 1/2 cups rolled oats
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon cinnamon (or more as desired)
1/2 teaspoon nutmeg (optional)
1/2 cup honey
1/2 cup oil (corn, grapeseed or olive)
1 tablespoon molasses
1 egg (beat with 1 Tbsp Water)
1 teaspoon vanilla
1/2 cup raisins
1/2 cup walnuts

Steps:

  • 1.In a large bowl, mix all the dry ingredients together.
  • 2.In a medium bowl, mix all the wet ingredients together. Hint: when measuring out the honey, spray the measuring cup with oil or baking spray--your honey won't stick).
  • 3.Mix the wet stuff with the dry stuff. Add the raisins and walnuts and mix. If the mixture seems too wet, add a bit of flour. If it isn't binding together very well, you may wish to add an egg white.
  • 4.COOL the mix for 20 minutes in the fridge.
  • 5.Preheat the oven to 335 degrees (lower temperature due to the honey in the recipe which will burn more easily).
  • 6.Drop by teaspoonfuls onto your baking sheet (I recommend lining the baking sheet with parchment paper). Press down with a fork to ensure even cooking.
  • 7.Bake for about 15 - 20 minutes or until golden on the bottom of the cookie. The cookies freeze very well and make a great snack! Enjoy.

3/4 cup brown sugar
1/2 cup Splenda sugar substitute
3/4 cup raisins
2 cups rolled oats
1 cup all-purpose flour or 1 cup whole wheat flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsweetened applesauce
1 eggs or 1/4 cup Egg Beaters egg substitute
1 teaspoon vanilla

Steps:

  • Mix all dry ingredients.
  • Add in applesauce, egg and vanilla.
  • Mix until completely blended. You may need to finish mixing with your hands.
  • Shape into balls the size of walnuts. Place on a greased cookie sheet 2 inches apart.
  • Bake at 350 degrees F (175 degrees C) for 11-13 minutes until edges are lightly browned.
  • Cool 5 minutes on baking sheet, then remove cookies to baking rack to finish cooing.

This is a healthy low-calorie version of my original recipe. This recipe uses lower calorie ingredients such as Splenda Sweetener, Splenda Brown Sugar, and wheat flower. These cookies are plump, chewy, and full of crunchy pecans and raisins. The honey really sets if off with a unique taste. Once you make these cookies with the honey in them, you will never want to make oatmeal cookies without honey ever again! And it can be easily altered to your liking by changing the add-ins from raisins & pecans, to just about anything you want (walnuts, dates, dried cranberries, etc).

1/2 cup wheat flour
1 teaspoon baking powder

Steps:

  • Preheat oven to 350°F Line 2 baking sheets with parchment paper, or almunim foil (butter foil).
  • OPTIONAL: Soak 1 cup of rasins overnight in water to make them nice and plump.
  • In a small bowl, mix the flour, baking powder, cinnamon, baking soda, and salt with a fork.
  • In a seperate large bowl, beat the butter and both sugars in with an electric mixer until fluffy. Then beat in honey, eggs, and vanilla.
  • Gradually add the flour mixture to the large bowl while beating on low.
  • Stir in oats, raisins, and pecans.
  • Drop batter by large tablespoonfuls onto prepared sheets, spacing mounds 2 inches apart. Flatten mounds only slightly if you want a fat, chewy cookie; or flatten mounds more if you want a thinner cookie.
  • Bake cookies until the tops start to turn golden brown, about 11-12 minutes.
  • Cool for 3-5 minutes on cookie sheets, then move cookies to a cooling rack.
  • Store cookies in an airtight container to keep them nice and moist.

They are very moist and fluffy and taste even better the days after being baked. These are very adaptable so feel free to substitute chocolate chips and a bit of lemon zest for the raisins or add some cranberries and sliced almonds for some added fun!

2 cups oatmeal, Whole Grain
1/2 cup applesauce, unsweetened
1 cup raisins

Steps:

  • Preheat your oven to 350 degrees.
  • Line a cookie sheet with foil or wax paper and spray with non-stick cooking spray, I use Pam.
  • Place peeled bananas in a large bowl and beat with a mixer until smooth.
  • Add remaining ingredients and stir until incorporated.
  • Drop on prepared cookie sheet using a tablespoon. Spread out slighty but make sure they are not too thin.
  • Place in preheated oven and bake for 15-20 minutes or until the tops begin to brown slighty.

  • Preheat oven to 350°F. Line 2 large baking sheets with silicone baking mats or parchment paper. In a large bowl, stir together the canola oil, honey, eggs, vanilla extract, raisins, chopped walnuts, wheat germ, and rolled oats. In a medium bowl, sift together the flour, powdered milk, and salt. Stir the dry ingredients into the wet until well-combined. Using a mini ice cream scoop or small spoon, scoop out spoonfuls of the cookie dough and place on the prepared baking sheet.
