Traditional waffles are a butter-laden, high-carb indulgence, but they make the transition to good fats and smart carbs beautifully, yielding crisp, nutty-tasting waffles with all the sweet pleasure of the original. The batter can also be used for pancakes.

2 cups buttermilk
½ cup old-fashioned rolled oats
⅔ cup whole-wheat flour
⅔ cup all-purpose flour
1/4 cup toasted wheat germ, or cornmeal
1 ½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 teaspoon ground cinnamon
2 large eggs, lightly beaten
¼ cup packed brown sugar
1 tablespoon canola oil
2 teaspoons vanilla extract

Steps:

  • Mix buttermilk and oats in a medium bowl; let stand for 15 minutes.
  • Whisk whole-wheat flour, all-purpose flour, wheat germ (or cornmeal), baking powder, baking soda, salt and cinnamon in a large bowl.
  • Stir eggs, sugar, oil and vanilla into the oat mixture. Add the wet ingredients to the dry ingredients; mix with a rubber spatula just until moistened.
  • Coat a waffle iron with cooking spray and preheat. Spoon in enough batter to cover three-fourths of the surface (about 2/3 cup for an 8-by-8-inch waffle iron). Cook until waffles are crisp and golden brown, 4 to 5 minutes. Repeat with remaining batter.

Cornmeal and chia seeds add a bit of crunch to these waffles. My family can't get enough of these light waffles. We love to make these Christmas morning and top them with crushed strawberries, whipped cream, and ground up candy canes.

2 egg whites
1 cup all-purpose flour
1 cup cornmeal
1 tablespoon chia seeds
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon white sugar

2 egg yolks

Steps:

  • Preheat waffle iron according to manufacturer's instructions.
  • Beat egg whites in a glass or metal bowl using an electric mixer on high until stiff peaks form. Lift your beater or whisk straight up: the egg whites will form sharp peaks.
  • Whisk flour, cornmeal, chia seeds, baking powder, baking soda, white sugar, and salt together in a bowl. Whisk buttermilk, canola oil, and egg yolks together in a separate bowl; stir into flour mixture until batter is smooth. Gently fold egg whites into batter until just mixed.
  • Pour about 1/4 cup batter into preheated waffle iron; cook according to manufacturer's instructions until golden brown, about 5 minutes. Repeat with remaining batter.

The heartiest, tastiest most wonderful whole grain waffles. I'm just gonna say now, 'You're welcome.' These are where-have-you-been-all-my-life waffles. Serve with your favorite toppings; great with blueberries and non-dairy whipped topping or pure maple syrup.

3 cups whole wheat pancake mix
2 cups flax milk
2 ripe bananas, mashed
⅓ cup old-fashioned oats
½ cup amaranth
½ cup millet
4 tablespoons aquafaba (liquid from can of chickpeas)
4 tablespoons medium-chain triglyceride (MCT) oil
4 tablespoons vegan sour cream
2 tablespoons lemon juice
¼ cup sunflower seeds
¼ cup chopped walnuts

Steps:

  • Combine pancake mix, flax milk, bananas, oats, amaranth, millet, aquafaba, MCT oil, sour cream, and lemon juice in a large bowl. Mix well. Fold in sunflower seeds and walnuts. Let batter rest for 5 minutes.
  • Preheat a waffle iron according to manufacturer's instructions.
  • Pour 3/4 cup batter in the hot waffle iron and cook until waffle is golden brown and the iron stops steaming, 2 1/2 to 3 minutes. Repeat with remaining batter. Break each waffle into quarters.

I love experimenting with recipes, and I came up with this one after a lot of experimenting with my favorite waffle recipe. These are more filling than your average waffles. I use aluminum-free baking powder. These are wonderful with homemade blueberry syrup.
