Steps:
- On four slices of bread, layer mozzarella cheese and tomatoes; sprinkle with the basil, vinegar, salt and pepper. Top with remaining bread. , In a small bowl, combine the oil, Parmesan cheese and garlic powder; brush over the outsides of each sandwich. , In a skillet over medium heat, toast sandwiches until golden brown on both sides and cheese is melted.

Steps:
- Blend basil, parmesan cheese, olive oil and garlic in food processor or blender until well combined. Add yogurt, and process until smooth. Season with salt and pepper.
- Preheat broiler. Place muffins on baking sheet. Broil 1 to 2 minutes, or until lightly toasted. Spread each half with basil mixture, and top with some tomato slices. Broil 1 to 2 minutes or until heated through.

TOMATO SANDWICH WITH BASIL MAYONNAISE

- Whisk together the mayonnaise, basil, salt, pepper, lemon juice, olive oil and garlic. Spread the mayonnaise mixture on the top of 2 slices of bread. Place the sliced tomato on top of one
- bread slice. Place the remaining slice of bread, mayonnaise side down, on top of the tomato. Cut the sandwich in half and serve.
FRESH TOMATO, BASIL GRILLED CHEESE SANDWICH
This is a low good fat version of a grilled cheese seasoned with fresh and dried herbs and garden fresh tomatoes. I used a regular pan but for ease you can use a nonstick pan.

Steps:
- Mix oil and dried herbs and spread on 1 side of both slices of bread.
- Preheat non stick pan to medium heat.
- Seasoned side down add slice of cheese, tomato, fresh ground pepper, basil and other slice of cheese topping with second slice of bread seasoned side up.
- Place in pan with a weight on it and cook for 1 minute till browned flip and cook for an other minute till cheese is melted.

HEALTHY MEALS MONDAY: TOMATO, BASIL, AND CHEESE SANDWICH

Steps:
- Cut the rolls in half and put them in the bottom of a 9x13 pan. Spread on the balsamic vinegar and oil on the bottom rolls.
- Next layer on the tomatoes, cheese and basil - in that order.
- Turn your oven to Broil and put the pan in the oven. Once the cheese starts to melt, take it out and put on the tops of the rolls. Broil for just 1 more minute.
- Cut and serve.
