6 Tablespoon mayonnaise
2 teaspoon Dijon mustard
2 teaspoon fresh lemon juice
8 large eggs (hard boiled, peeled and cut in small cubes)
1 stalk celery (diced small)
1/4 cup chopped green onions
1/4 cup chopped fresh dill
1/4 teaspoon Salt
1/8 teaspoon freshly ground black pepper
Red onion (thinly sliced, for serving)
Green leaf lettuce (for serving)
8 slices bread (I used gluten-free bread)

Steps:

  • In a medium bowl, whisk together the mayonnaise, Dijon mustard, and fresh lemon juice, until smooth.
  • Gently fold in the chopped eggs, celery, green onions, and dill. Season with salt and pepper to taste.
  • Assemble the egg salad between two slices of bread, green leaf lettuce, and topped with thinly sliced red onions (optional).
  • Store leftover egg salad in the refrigerator for up to 5 days.

Because it doesn't use mayo, this is a lighter and healthier version of the standard egg salad sandwich, and the mustard and scallion give it a little kick.

2 hard-boiled eggs
2 chopped scallions (white and green parts)
2 tablespoons Dijon mustard
2 pieces lettuce (I prefer romaine)
4 slices whole grain bread, toasted
salt and pepper

Steps:

  • With the back of a fork, mash egg yolk with mustard to make a thick paste.
  • Stir in chopped scallions and chopped egg white. Mix in salt and pepper as desired.
  • Divide mixture on top of 2 slices of bread.
  • Top with lettuce leaves, and cover with remaining slices of bread. Makes 2 sandwiches.

10 hard-boiled egg whites
2 hard-boiled egg yolks
2 to 3 tablespoons light mayonnaise
1 teaspoon Dijon mustard
1 tablespoon freshly squeezed lemon juice
1/2 avocado, mashed, plus 1/2 avocado roughly chopped
Coarse salt and freshly ground pepper
Boston lettuce, arugula, and tomato slices (optional)
12 white sandwich bread, such as Pullman, sliced about 1/2-inch thick, toasted

Steps:

  • Using a pastry blender or fork, mash together egg whites and yolks in a large bowl; carefully fold in avocado. Stir in mayonnaise, mustard, and lemon juice; season with salt and pepper.
  • Place 6 slices of bread on a work surface. Evenly divide egg salad among bread slices. Add lettuce greens or tomato, if desired. Top with remaining 6 slices bread. Serve.
