DELICIOUS GLUTEN FREE SUGAR FREE HEALTHY CARROT CAKE

Delicious Gluten Free Sugar Free Healthy Carrot Cake image

There is an old recipe I was given for this ULTRA moist carrot cake that was to die for. Since I am a health nut I try to stay away from cake slices that are 900+ calories per serving (just a small exaggeration). But my boyfriend also has celiac disease, so I modified this recipe to be not only gluten free, but sugar-free as well (natural sugar, anyway) Here is the OLD recipe if you want it, of course you can make it healthy and keep all the calories, but really you can get almost the same taste out of this new one.

Categories     Dessert

Time 1h20m

Yield 20 squares, 20 serving(s)

Number Of Ingredients 23

1 1/2 cups applesauce or 1 1/2 cups extra virgin olive oil
3 tablespoons Splenda sugar substitute
3 eggs (cage free)
1/2 cup brown rice flour
1/2 cup sorghum flour
1/2 cup quinoa flour
1/4 cup potato starch
1/4 cup tapioca starch
2 teaspoons xanthan gum
3 teaspoons cinnamon
2 teaspoons baking soda
2 teaspoons vanilla
3 cups carrots
20 ounces pineapple
1 cup coconut (sugar free)
1 cup walnuts
8 ounces light cream cheese
1 teaspoon vanilla
5 tablespoons Splenda sugar substitute
cinnamon (optional)
1/4 cup walnuts (optional)
1/4 cup almonds (optional)
1/4 cup coconut (optional)

Steps:

  • (Make sure the carrots are grated before using them in the recipe, as well as chopping the almonds).
  • Mix all ingredients together and bake in a 9x13-inch pan or in small cupcake holders (spray Pam butter-like spray) for 45 minutes on 350 degrees. If using oil instead of apple sauce, allow to cook one hour.
  • Whip frosting ingredients together. Wait till cool to frost.
  • To entice my daughter to eat them I put orange and yellow sprinkles on it, or you could also decorate it with little "frosting carrots". Have fun with this cake; it's very versatile and good for you. You can use all of the optional toppings as well if you'd like. You can reference the other cake here.
  • On a side note, this frosting is also good with some sugar free fat free vanilla or cheesecake pudding, and also makes a great dipping sauce for apples.

HEART HEALTHY CARROT CAKE

Heart Healthy Carrot Cake image

EXTRA moist carrot. very dense mixture does not raise much but is absoultly FAB. I prepare in mini loafs and sharing with friend(I am the only one in the house who like Carrot cake)but everyone else is gradually trying this recipe and liking it. I omit the raisins and nuts and does great(if you ever wonder. Cuts very easily due to its denseness. Unfrosted "bars" Great for breakfast, no crumbs travels well in the car for on the go mornings.

HEALTHY VEGETARIAN CARROT SNACK CAKE

Healthy Vegetarian Carrot Snack Cake image

A truly healthy snack cake! This makes a large panful - cut into squares it keeps well in the fridge in a sealed container for a few days and makes a light but satisfying snack, or breakfast, or picnic munchie. This recipe comes from an Indian cooking website, the name of which I have lost. If you recognize this recipe and know who invented it, please let me know!

Provided by Elise and family

Categories     Dessert

  • Mix anise, bananas, oil and brown sugar in a smaller bowl.

HEALTHY AND HEARTY CARROT CAKE MUFFINS

Healthy and Hearty Carrot Cake Muffins image

This is a variation on my favorite blueberry muffin recipe. It's a delicious healthy take on carrot cake - lots of fiber from the whole wheat flour and rolled oats, and you can use less sugar because the pineapple, raisins and shredded coconut add sweetness. I've also reduced the oil, since the crushed pineapple makes the muffins nice and moist. For an extra treat, top with cream cheese frosting. I love to make extra on weekends and freeze the extras for later.

Categories     Quick Breads

Time 35m

Yield 12 regular sized muffins

Number Of Ingredients 16

1 1/2 cups whole wheat flour
1 cup rolled oats
1/2 teaspoon baking soda
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon pumpkin pie spice or 1 teaspoon cinnamon
1 cup buttermilk
2 eggs, beaten
1/3 cup packed brown sugar
1 teaspoon vanilla extract
2 tablespoons butter or 2 tablespoons coconut oil, melted
1 (8 ounce) can crushed pineapple (gently press out excess juice)
1/4 cup shredded coconut (optional)
1 1/2 cups shredded carrots
1/4 cup chopped walnuts or 1/4 cup toasted pepitas
1/4 cup golden raisin

Steps:

  • Preheat oven to 400 degrees F. Spray a 12 cup muffin pan with non-stick spray or line with paper baking cups.
  • Mix dry ingredients in a large bowl with a whisk.
  • In a medium bowl, mix buttermilk, eggs, brown sugar, vanilla, crushed pineapple, and butter/coconut oil with a whisk.
  • Make a well in the middle of the dry ingredients and pour liquid ingredients in, stirring a few times with a wooden spoon or scraper to incorporate gently. Don't mix too much!
  • Fold in shredded carrots, walnuts or pepitas, shredded coconut, and golden raisins. (Note: if you use bagged shredded carrots, you may want to coarsely chop them so the shreds don't stick out of your muffin).
  • Scoop 1/3 cup of batter per muffin into tin.
  • Bake for 18-20 minutes until golden brown and a toothpick inserted in the center of a muffin comes out clean.
  • Wait patiently for a few minutes before popping your muffins out of the tin!

HEALTHY CARROT CAKE (EXCEPT THE FROSTING!)

Healthy Carrot Cake (Except the Frosting!) image

This is a yummy carrot cake that is delicious. I got the recipe from the Jack LaLanne's power juicer cookbook and use my juicer to make the carrot and apple pulp needed. I completely take away all healthy aspects of this carrot cake by slathering it with icing. The cake itself is a little dry - but the icing makes if perfect!

Provided by packeyes

Categories     Dessert

Time 1h30m

Yield 1 two-tiered cake, 10 serving(s)

Number Of Ingredients 12

3 1/2 cups carrots, pulp
1/2 cup apple, pulp
1 cup canola oil
1 cup honey
3 eggs
1 tablespoon vanilla
3 cups whole grain wheat flour
1 tablespoon baking soda
2 tablespoons cinnamon
2 teaspoons nutmeg
1 1/2 cups crushed walnuts
frosting (Cinnamon Cream Cheese Frosting compliments this cake perfectly)

Steps:

  • Preheat oven to 350.
  • Mix together apple pulp, carrot pulp and oil.
  • Add in the honey, eggs, and vanilla.
  • In a separate bowl combine flour, baking soda, cinnamon and nutmeg. Mix in with the wet ingredients.
  • Stir in walnuts.
  • Grease 2 round cake pans. Put half the mixture in each pan.
  • Bake for about 1 hour. I always check on mine after about 45 minutes.
  • Let cool for 5-10 minutes. Take cakes out of pan and onto a cooling rack until almost all the way cooled off.
  • Put one cake upside down on a plate. Cover with frosting. Put the other cake right side up on top of the upside down one. Cover the entire cake (top and sides) with frosting.
  • I usually put aside a small part of the frosting and color part of it orange and part of it green with food coloring and make carrots on the top of the cake (as best I can - my artistic talents are extremely limited!).
  • ENJOY!

HEART HEALTHY CARROT CAKE

Heart Healthy Carrot Cake image

Based on my favorite carrot cake recipe, I have drastically cut the fat, saturated fat, and sugar in this cake. Using fruits and vegetables provides a moisture factor. And using the olive oil gives you monounsaturated, heart healthy fats in smaller amounts, and guess what - it does not taste like olive oil! Avocado oil can also...

Provided by Susan Feliciano

Categories     Cakes

Time 1h25m

Number Of Ingredients 18

8 oz canned crushed pineapple with liquid
1 c splenda, stevia, or other sugar substitute for baking
1 c brown sugar
1/2 c olive oil
1 c egg beaters egg substitute
2 1/2 c cake flour
2 tsp baking soda
2 1/2 tsp baking powder
2 1/2 tsp cinnamon
1/2 tsp salt
3 c finely grated carrots (about 1/2 pound)
1 tsp vanilla
ICING
4 oz fat free cream cheese
1/2 tsp lemon extract or vanilla
1 pinch salt (optional)
2-3 c powdered ideal brand xylitol sugar substitute
1/2 c chopped pecans (optional)

Steps:

  • 1. Preheat oven to 350°F. Prepare a Bundt or tube pan with shortening or cooking spray, and dust lightly with flour. Or, use Baker's Secret or other cake pan prep spray.
  • 2. With electric mixer, cream pineapple, sugar, sugar substitute, and oil. NOTE: this cake will NOT taste like olive oil! Beat in egg beaters in two batches.
  • 3. Sift together the dry ingredients one time. On low speed, add it in 3 parts to the oil mixture. Scrape down sides of bowl a couple of times during this step. Stir in carrots and vanilla.
  • 4. Spread batter evenly in prepared pan. Bake for 45-55 minutes, until cake springs back when lightly touched. Cool in pan 10 minutes, then invert onto serving plate.
  • 5. TO MAKE ICING: Soften cream cheese in microwave. With mixer, beat cream cheese with lemon extract and salt. Sift the powdered sugar substitute, then beat in 1 cup at a time until a thick spreading consistency is achieved. If necessary, warm this icing over a double boiler or in the microwave so it can be poured over the cake. If desired, top cake with chopped pecans. Store cake in refrigerator.
  • 6. SPECIAL NOTE: This cake can be made with real powdered sugar for the icing, and a cup of white sugar in place of the substitute in the cake. It will raise the sugar content and calories considerably, but would not change the fat content. I've also found that using half powdered sugar and half xylitol powdered sweetener for the icing works well, too.
