- Soak the oats, apple juice, sugar and vanilla for 30 minutes.
- Mix in the flour, baking powder, grated apple and cinnamon.
- Fold in the beaten egg whites; Spoon into 12 muffin tins.
- Top muffins with 2 sliced apple wedges (cut quarters of apple into 3 or 4 wedges) and bake at 170° C (338°F) for 25 - 30 minutes until muffins and cooked though and golden.
- Cool in pan for a few minutes, then remove from pan and cool on wire rack.

Steps:
- Heat oven to 425 degrees.
- Line muffin cups of standard muffin pan with paper liners or spray with non-stick cooking spray.
- In a measuring cup combine milk and vinegar; set aside.
- In a large bowl combine 7 dry ingredients. Make a well in the center; set aside.
- In a medium bowl, combine milk and next 5 ingredients.
- Pour wet mixture into the well of the dry ingredients and mix until just combined and slightly lumpy.
- Pour into muffin pan.
- Make the streusel topping by combining flour and cinnamon. Stir in oil until mixture represents course crumbs. Stir in apple. Sprinkle over batter.
- Bake 15-18 minutes, or until tops are golden and toothpick comes out clean.
- Cool for 5 minutes in pan on rack. Remove from pan and cool completely.
HEALTHY APPLE CARROT ZUCCHINI MUFFINS
These are moist, yummy muffins without all the fat and calories. I came up with this recipe when craving something sweet but not too much on the unhealthy side. They are quick and easy to make as well.

Steps:
- In a bowl grate zucchini/courgette and carrot. Cut the apple into small chunks.
- Preheat the oven to 170°C/340°F.
- In another bowl cream the egg and molasses with a pinch of salt. Add the grated veggies, oats and grated hazelnuts.
- Mix baking powder and flours and add to the egg mixture. Stirr until just combined.
- Now fold in the apples and pour batter into prepared muffin pan.
- Bake for about 30 minutes.

- Preheat Oven to 375 degrees F.
- Grease 12 standard size muffin pan cups, or use paper liners.
- In a medium bowl, mix together flour, baking soda, cinnamon, ginger, allspice, nutmeg, salt, and oat bran.

- Put 2 of the chopped apples in a pan with 50ml water. Simmer over a low heat, covered, for 10-12 mins, until the apples are softened and collapsing. Set aside to cool a little, then tip into a small food processor and whizz to a purée.
- Heat the oven to 180C/160C fan/gas 4. Line a muffin tray with 12 paper cases.
- In a bowl whisk the oil, eggs, yogurt, sugar and apple purée. In a separate bowl, combine the flour, 70g of the oats, baking powder, bicarb, mixed spice, cinnamon and ¼ tsp salt. Make a well in the centre, then stir in the wet ingredients until you have a smooth batter, stir in the remaining chopped apple, then divide into the 12 cases. HEALTHY APPLE OATMEAL MUFFINS

- 1. Heat the oven to 350 degrees. Lightly spray a muffin pan with vegetable oil. 2. In a small saucepan, bring one-half cup water, one-half cup of the milk and a pinch of salt to a boil. Add the oats, cover and simmer at medium-low heat until cooked, about 5 to 7 minutes, stirring occasionally. Most of the liquid will evaporate. 3. Heat the butter and 2 tablespoons of the white sugar over medium-high heat until bubbling. Add the apples and 1 teaspoon of the cinnamon, toss, then allow to caramelize without stirring. Toss again, each time allowing the apples to color. Once finished cooking, the apples should have lost their edges and be caramelized, about 5 minutes. 4. Into a medium mixing bowl, sift together the flour, oat flour, graham flour, the remaining 2 tablespoons white sugar, the brown sugar, baking powder, nutmeg, the remaining 1 teaspoon cinnamon and one-half teaspoon salt. Add any remaining grain from the sifter and stir to combine. 5. Whisk the remaining 1 cup milk, theapplesauce, the melted butter, the egg and the vanilla with the oatmeal in a separate bowl. Pour in the dry-ingredients mixture. Add the apples and fold until the mixture just comes together. 6. Using an ice cream scoop (about one-half cup capacity), scoop the mixture into each of 12 muffin cups, about 1 scoop per muffin. Bake for 35 to 40 minutes. The bottom of the muffins will be dark golden brown.

- To grate apples I use my food processor, but you can use a hand grater if you want. I also usually send the dates through with the apples in the processor.
- Then chop up your 1/2 cup of apples, nuts, and dates (if not thrown in processor with apples). The apples and nuts add to the texture and the dates make it a little sweeter.
- Combine all items from the Dry list. Then all from the Wet list.
- Slowly add Dry to wet and mix until combined well.
- Pour batter in sprayed muffin tin (or use papers if you like) and place in 350°F oven about 12-15 minutes. Remove and place on cooling rack.
