- Preheat oven to 475 degrees F (245 degrees C).
- In a large bowl, combine oil, garlic, basil, marjoram, dill weed, thyme, oregano, parsley, red pepper flakes, and salt. Stir in potatoes until evenly coated. Place potatoes in a single layer on a roasting pan or baking sheet.
- Roast for 20 to 30 minutes in the preheated oven, turning occasionally to brown on all sides.

- Preheat the oven to 425F.
- Wash the potatoes and let them dry. You don't need to peel the potatoes, but cut out any surface blemishes.
- Cut large potatoes into 2-inch pieces. If you're using small potatoes, they can be left whole.
- Place the potatoes on a baking dish in a single layer. Drizzle olive oil over the potatoes. Add rosemary, garlic, salt, and pepper.
- Toss the potatoes with a large spoon until the potatoes are coated evenly with the oil and seasonings.
- Roast the potatoes uncovered for 45 minutes to 1 hour, turning them occasionally. The potatoes are done when the flesh is soft and easily pierced with a fork.

Steps:
- Preheat the oven to 400 degrees F.
- Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.
