⅛ cup olive oil
1 tablespoon minced garlic
½ teaspoon dried basil
½ teaspoon dried marjoram
½ teaspoon dried dill weed
½ teaspoon dried thyme
½ teaspoon dried oregano
½ teaspoon dried parsley
½ teaspoon crushed red pepper flakes
½ teaspoon salt
4 large potatoes, peeled and cubed

Steps:

  • Preheat oven to 475 degrees F (245 degrees C).
  • In a large bowl, combine oil, garlic, basil, marjoram, dill weed, thyme, oregano, parsley, red pepper flakes, and salt. Stir in potatoes until evenly coated. Place potatoes in a single layer on a roasting pan or baking sheet.
  • Roast for 20 to 30 minutes in the preheated oven, turning occasionally to brown on all sides.

2 pounds red or white potatoes, with skin intact
2 tablespoons olive oil
2 tablespoons fresh rosemary, minced
1 teaspoon garlic, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Preheat the oven to 425F.
  • Wash the potatoes and let them dry. You don't need to peel the potatoes, but cut out any surface blemishes.
  • Cut large potatoes into 2-inch pieces. If you're using small potatoes, they can be left whole.
  • Place the potatoes on a baking dish in a single layer. Drizzle olive oil over the potatoes. Add rosemary, garlic, salt, and pepper.
  • Toss the potatoes with a large spoon until the potatoes are coated evenly with the oil and seasonings.
  • Roast the potatoes uncovered for 45 minutes to 1 hour, turning them occasionally. The potatoes are done when the flesh is soft and easily pierced with a fork.

3 pounds small red or white potatoes
1/4 cup good olive oil
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons minced garlic (6 cloves)
2 tablespoons minced fresh parsley

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated.
