1 1/4 cups quick oats
1 cup white whole wheat flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1/2 teaspoon kosher salt
1/4 cup unsweetened applesauce
4 tablespoons unsalted butter (melted and cooled)
1 large egg
1 teaspoon pure vanilla extract
1/2 cup honey
1/3 cup dark chocolate chips
1/4 cup raisins
1/4 cup well chopped raw walnuts or pecans

Steps:

  • In a large bowl, whisk together the oats, flour, baking powder, cinnamon, and salt.
  • In a medium bowl, combine the applesauce, butter, egg, vanilla, and honey. Whisk until blended. Pour the liquid mixture into the flour mixture and stir just until combined. The dough will be wet and sticky. Fold in the chocolate chips, raisins, and walnuts. Place in the refrigerator and let chill for at least 30 minutes or up to 3 days.
  • When ready to bake, place a rack in the center of your oven and preheat the oven to 350 degrees F. Line a large rimmed baking sheet with parchment paper or a silicone baking sheet. Remove the dough from the refrigerator (if it is very stiff, you may need to let it sit out for 5 to 10 minutes). With a cookie scoop or spoon, drop the dough into 1 1/2-inch balls and arrange on the baking sheet, leaving 1 inch of space around each. With your fingers, gently flatten each cookie to be about 3/4-inch thick.
  • Bake until the cookies are golden and firm around the edges and set on top, about 9 to 10 minutes. Place the baking sheet on a wire rack and let the cookies cool on the baking sheet for 2 minutes, then transfer the cookies to the rack to cool completely.

1/2 cup (4 oz) unsweetened applesauce
1 cup quick oats
1/2 cup mix-ins of your choice (chopped dried fruit, chocolate chips, etc)

Steps:

  • Preheat oven to 350°F. Line a baking sheet with silicone baking mat or parchment paper.
  • In a large bowl, add applesauce and oats. Mix with a spoon until evenly combined and all oats are moistened. Stir in mix-ins (you can add them onto the cookies right before baking instead for a prettier presentation. See notes for more details).
  • Use a 1.5 tbsp cookie scoop and scoop dough balls, placing them onto prepared baking sheet, spaced 2 inches apart. Using the back of your spoon or the palm of your hand, press down on dough balls to form thick round disks (about 3/8 inch thick). The cookies will not spread or change shape during baking so shape them as needed until they are how you want them to be.
  • Bake cookies about 13-15 minutes or until they are set. If you are unsure if the cookies are set, use a cookie spatula and try to lift a cookie off of the baking sheet. You should be able to lift the cookie off of the sheet in one piece when they are done. Let cookies cool before removing and eating. Store cookies in airtight container at room temperature for 1-2 days or in the fridge or freezer for longer.

1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon baking soda
1/4 teaspoon salt
1 and 3/4 cups (175 grams) old-fashioned rolled oats
1/2 cup (115 grams) unsalted butter (softened)
1/2 cup (100 grams) light brown sugar (packed)
1/4 cup (50 grams) granulated sugar
1 large egg (at room temperature)
1 teaspoon pure vanilla extract
1 cup (120 grams) chopped apple

Steps:

  • Preheat the oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats.
  • In a large mixing bowl, whisk together the flour, cinnamon, nutmeg, baking soda, and salt until well combined. Stir in the old-fashioned rolled oats and set aside.
  • Using a handheld mixer or stand mixer fitted with the paddle attachment, beat the butter, brown sugar, and granulated sugar together for 1 to 2 minutes or until fully combined. Mix in the egg and vanilla extract, making sure to stop and scrape down the sides of the bowl as needed.

1 large apple, (Gala, Fuji or any sweet apple*)
3 tablespoons mashed banana (1/2 ripe small banana)
48 grams (1/2 cup) gluten free old fashioned rolled oats (or regular rolled oats if not gluten sensitive)
1-2 tablespoons peanut butter**
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350°F(177C°). Line baking sheet with parchment paper or silicone baking mat. Set aside.
  • Slice the banana and place in a medium bowl. Mash with a fork. Set aside the bowl.
  • Peel the apple and grate. When you grate the apple, there will be some excess juice left. Leaving that excess juice (don't squeeze the apple, I mean the excess juice that stay on where you zest the apple) place the grated apple over the mashed banana and add the cinnamon, mix with a spoon/fork.
  • Add the peanut butter and mix again. Finally mix in the oats.
  • Make 1 and ½ tablespoon big balls. The mixture will be sticky so you should either use a cookie scoop or a spoon. Place them on the baking sheet and flatten with your fingers.
  • Bake for almost 14 minutes or until the cookies become firm on top and they don't stick to the parchment paper. When you remove the cookies from the oven, they will be soft to handle but they will be firm as they cool on the baking sheet for 10 minutes.

Steps:
