1 1/8 cup ChocZero Sugar-free Dark Chocolate Chips ((divided))
2/3 cup Besti Monk Fruit Allulose Blend
1/2 cup Unsalted butter
1/3 cup Cocoa powder
1/4 cup Wholesome Yum Coconut Flour
2 large Eggs
2 tbsp Heavy cream
1 tsp Vanilla extract
1/4 tsp Sea salt

Steps:

  • Preheat the oven to 350 degrees F (176 degrees C). Line an 8x8 in (20x20 cm) baking dish with parchment paper and grease lightly.
  • Melt the butter and 1 cup of chocolate chips in a double boiler on the stove, stirring occasionally. Set aside to cool for a couple of minutes.
  • Transfer the chocolate mixture to a food processor and add the eggs, vanilla and heavy cream. Pulse a few times until combined.
  • In a small bowl, whisk together the Besti, cocoa powder, coconut flour, and sea salt.
  • Add the dry mixture to the food processor and pulse until smooth.
  • Spread the batter in the prepared baking pan and top with 1/8 cup of chocolate chips.
  • Bake about 20-30 minutes, until brownies are barely set. The top should no longer be wet, but still be very soft. An inserted toothpick will come out with just a small amount of batter on it. Cool completely to firm up before cutting.

1/4 cup melted butter

  • Heat oven to 375° F. Prepare pan with a generous amount of butter. This recipe makes six "regular"-sized muffins. Whisk or beat the eggs until whites and yolks are well-mixed. Stream in the butter while continuing to whisk. Add salt and vanilla and mix until combined. If using liquid sweetener (preferred, as it is zero carb), add at this point. Mix the remaining dry ingredients, coconut flour, baking soda, and sweetener if using powder. Mix the dry and wet ingredients together. Now you will whisk in water, one tablespoon at a time. The coconut flour will absorb the liquid from the wet ingredients like crazy. You want to get it to a consistency that will hold up the berries, but not be too thick. I usually end up using about 4 Tablespoons of water. Gently mix in the berries and divide among 6 muffin cups. Bake for about 15 to 18 minutes, or until just turning golden on top.

Pinch salt

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish.
