1/4 cup unsalted butter
2 tablespoons semisweet chocolate chips
8 cups cubed challah or brioche
1/2 cup chopped hazelnuts
4 large eggs
1-1/2 cups fat-free milk
1/2 cup fat-free half-and-half
1/2 cup Nutella
1/4 cup sugar
1/2 teaspoon vanilla extract
1/4 teaspoon salt
Sweetened whipped cream, optional

Steps:

  • Microwave butter and chocolate chips until melted, 30-45 seconds; stir until smooth. Cool. In a 3- or 4-qt. slow cooker coated with cooking spray, combine bread cubes and hazelnuts. In a large bowl, combine next 7 ingredients, mixing well. Add chocolate mixture to bowl; whisk until smooth., Pour egg mixture over bread and hazelnuts, gently pressing bread cubes to help them absorb liquid. Cook, covered, on low 4-5 hours or until a knife inserted in center comes out clean. Serve warm, dolloped with whipped cream if desired.

24 soft ladyfingers, divided
1/2 cup Nutella, divided
1-1/2 cups half-and-half cream
1 package (3.4 ounces) instant French vanilla pudding mix
1 carton (12 ounces) frozen whipped topping, thawed
Grated or shaved chocolate

Steps:

  • Arrange 12 ladyfingers in an 11x7-in. dish. Spread with half of the Nutella., In a large bowl, whisk cream and pudding mix 2 minutes. Stir in whipped topping. Spread half the mixture over the Nutella. Top with remaining ladyfingers; spread with remaining Nutella and then remaining pudding mixture. Sprinkle with grated or shaved chocolate. Refrigerate, covered, 8 hours or overnight. Refrigerate leftovers.

From Cooking Light Magazine. Vanilla low-fat ice cream melts over the warm bread pudding to form a sauce. If you have whole hazelnuts, toast them at 350 degrees F. for 8-10 minutes, or until the skins are loosened. To rub off the papery skins, roll the nuts in a clean dish towel. Then chop as needed. Prep time does not include chill time.

1/4 cup unsweetened cocoa

Steps:

  • Combine first 4 ingredients in a medium saucepan. Cook over medium-low heat 3 minutes or until chocolate melts, stirring constantly (do not boil).
  • Combine egg whites and egg in a large bowl; gradually add hot milk mixture to egg mixture, stirring constantly with a whisk. Stir in liqueur, vanilla and salt. Add bread, tossing gently to coat.
  • Spoon mixture into an 8-inch square baking dish coated with cooking spray. Cover with foil, chill 30 minutes or up to 4 hours.
  • Preheat oven to 350 degrees F. Sprinkle hazelnuts evenly over pudding. Place dish in a 13x9 inch baking pan; add hot water to pan to a depth of 1 inch. Bake, covered at 350 degrees for 30 minutes. Uncover and bake an additional 5 minutes or until a knife inserted in center comes out clean. Serve each bread pudding piece warm with 1/4 cup ice cream.

1/2 cup hazelnuts, toasted, chopped
Unsweetened whipped cream (optional)
6 crisp ladyfingers

Steps:

  • Whisk sugar, egg yolks, cornstarch and salt in large bowl to blend. Gradually whisk in 3/4 cup half and half.
  • Bring 1 1/4 cups half and half to simmer in heavy medium saucepan. Gradually whisk hot half and half into egg mixture; return mixture to saucepan. Whisk over medium-low heat until pudding thickens and comes to boil, about 5 minutes. Boil 1 minute longer, whisking constantly.
  • Remove pudding from heat. Add chocolate, Frangelico and vanilla; whisk until chocolate melts and pudding is smooth. Divide among six 3/4-cup custard cups. Sprinkle hazelnuts over puddings. Refrigerate until cold, about 2 hours. (Can be made 1 day ahead. Cover; keep chilled.)
  • Spoon whipped cream atop puddings, if desired. Serve with ladyfingers.

  • Stir cornstarch with 1/2 cup of the milk in a bowl until cornstarch completely dissolves. Heat remaining 1 1/2 cups milk, chocolate, sugar and salt in a small saucepan over medium-low heat, whisking occasionally, until chocolate melts. Raise heat to medium; cook, whisking occasionally, until almost boiling (steam will rise from the surface). Stir cornstarch-milk mixture again until smooth; add to saucepan in a thin stream, constantly whisking. Bring pudding to a simmer, continuing to whisk. Simmer, constantly whisking, 1 1/2 minutes more. Pour pudding into a bowl or four 5-ounce cups; press plastic wrap against the surface of pudding to prevent a skin from forming. 3 egg yolks
1 3/4 ounces white bread, diced

Steps:

  • Whip together butter and powdered sugar.
  • Moisten diced white bread with milk. Add diced bread and chocolate heated gently until liquid to butter mix. Whip egg whites and granulated sugar to an oily consistency, carefully fold the whisked egg whites into the mixture. Stir in flour, bread crumbs and grated hazelnuts.

TRUFFLED PARSNIP & BRIOCHE PUDDING WITH HAZELNUT & THYME BUTTER

This decadent, savoury take on the classic bread & butter pudding can be served as a vegetarian centrepiece, or an indulgent side dish

300g parsnips , peeled and cut into small chunks
1 tbsp olive oil , plus extra for greasing
350ml double cream
3 large eggs , beaten
85g unsalted butter , softened
100g vegetarian-style parmesan , grated
1 tbsp picked thyme leaves , plus extra to serve
2 tbsp good-quality white truffle oil , plus extra to drizzle
300g brioche loaf, cut into small chunks
25g blanched hazelnuts , halved
1 small black truffle , thinly sliced (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the parsnips on a baking tray, drizzle with the olive oil, season well and roast for 30 mins or until tender and nicely caramelised. Reduce the temperature to 180C/160C fan/gas 4.
  • In a large bowl, whisk together the cream, eggs, half the butter, half the cheese and half the thyme. Season well, then add the truffle oil, brioche and parsnips, and leave for 10 mins.
  • Lightly oil a medium baking dish and tip in the soaked brioche mixture. Heat the remaining butter in a shallow pan and cook until the butter turns brown. Add the hazelnuts and remaining thyme and cook for 2 mins before spooning over the top of the pudding. Cover the dish with foil, and cook in the oven for around 50 mins until puffed up and starting to caramelise. Remove the foil, sprinkle with the remaining cheese and place back in the oven for 15 mins to brown fully. Scatter over the black truffle, if using, add an extra drizzle of truffle oil, the extra thyme and serve.

50 g (1/4 cup) bittersweet couverture or cooking chocolate
30 g (1/8 cup) icing sugar
3 egg yolks
3 egg whites
3 cl (0,1 pt) rum
2 tbsps sugar
50 g (3/8 cup) breadcrumbs
50 g (3/8 cup) crumbed ladyfingers
2 tbsps milk
50 g (1/4 cup) hazelnuts or walnuts, roasted and grated
pinch of salt
100 g (1/2 cup) butter (melted for greasing)
3 tbsps sugar (for the baking forms)
For the chocolate sauce:
150 g (2/3 cup) dark chocolate
150 ml (0,25 pt) milk
20 g (1/8 cup) sugar
100 ml (1/2 cup) cream
1/2 pod vanilla (cut open)
80 g (3/8 cup) soft butter
1 cl (0,02 pt) cognac
300 ml (0,5 pt) cream (half-whipped, for decoration)

Steps:

  • Grease some small soufflé molds with melted butter and dust with sugar. Refrigerate (so that the mixture can rise without running over the sides). Melt the chocolate in a double boiler. Whisk the egg yolks with rum and icing sugar until fluffy. Pour in the melted chocolate. Whisk the egg whites and sugar and a pinch of salt until half stiff and carefully fold in about 1/3 of the egg whites. Combine the breadcrumbs, ladyfinger crumbs and milk and fold into the mixture, along with the nuts and the rest of the egg whites. Fill the molds 3/4 full with the mixture. Fill a deep baking tray with about 2 cm of water (or use a double boiler) and place the molds in the water. Bake in a preheated oven at 170 °C for about 20 minutes. For the chocolate sauce, heat the milk with the cream, sugar and vanilla pod. Remove the vanilla pod and melt the finely chopped chocolate in the mixture. Whip up the butter and pour in the chocolate mixture, stirring regularly. Pour in some cognac for extra aroma. Loosen the small cakes from their molds and arrange on plates. Pour on the warm chocolate sauce, and decorate with whipped cream.

1/2 cup honey
1/4 cup virgin coconut oil
1 tsp. vanilla extract
1/2 tsp. flaky sea salt
3 cups brewed rooibos tea, cooled
3/4 cup chia seeds
Assembly:
4 cups plain Greek yogurt
2 tsp. honey
1/2 tsp. vanilla extract
4 Tbsp. apricot jam
Chia seeds (for serving; optional)

Steps:

  • Granola and chia pudding:
  • Preheat oven to 300°F. Toss oats, hazelnuts, almonds, coconut flakes, pumpkin seeds, sunflower seeds, cinnamon, and kosher salt in a large bowl.
  • Heat honey, oil, and vanilla in a small saucepan over medium-low, whisking until melted and combined, about 2 minutes. Pour over oat mixture and mix thoroughly to coat. Spread out on a rimmed parchment-lined baking sheet and sprinkle with sea salt.
  • Bake granola 10 minutes. Remove from oven and stir. Return to oven and bake until golden brown and crisp, 8-10 minutes. Remove from oven and stir again. Let cool on baking sheet.
  • Combine tea and chia seeds in a 1-qt. jar or airtight container. Cover and shake to combine. Let sit 5 minutes, then shake again. Let sit at least another 15 minutes before serving. (You'll have enough granola and chia pudding for about 16 servings. Keep on hand for making more bowls or other uses (try a scoop of chia pudding in a smoothie!).
  • Assembly:
  • Mix together yogurt, honey, and vanilla in a small bowl, then divide among 4 shallow bowls. Top each with 1/4 cup granola, 1/4 cup chia pudding, and 1 Tbsp. jam. Sprinkle with more chia seeds if desired.
  • Do Ahead
  • Granola and chia pudding can be made 10 days ahead. Store granola airtight at room temperature and chill chia pudding.

1/2 lb butter
2/3 cup confectioners' sugar
6 eggs, separated
1 ounce brandy
1/2 cup granulated sugar
6 ounces toasted ground hazelnuts
2 3/4 cups dry breadcrumbs
1 dash salt

Steps:

  • Butter 10 6-ounce ramekins.
  • Cream butter with confectioners' sugar.
  • Beat in egg yolks one at a time.
  • Beat in brandy.
  • In a separate bowl, beat egg whites until foamy.
  • Gradually beat in granulated sugar.
  • Fold toasted nuts, bread crumbs, and salt into the creamed butter mixture.
  • Add one third of the egg whites; continue folding.
  • Fold in remaining egg whites.
  • Turn mixture into ramekins and cover each ramekin with aluminum foil.
  • Place in water bath.
  • Bake in 350-degree oven 35 to 40 minutes or until puddings are firm.
  • To serve, turn warm pudding out of ramekin onto plate.
  • Sprinkle with confectioners' sugar.
  • Garnish with crème anglaise or fresh strawberries.
