MUSHROOM PILAF

Number Of Ingredients 12

4 tablespoons butter
3 cloves garlic, finely minced
2 medium onions, chopped
1 pound cremini mushrooms, roughly chopped
1 pound white mushrooms, roughly chopped
8 ounces shiitake mushrooms, stems removed, roughly chopped
2 cups long-grain rice
1/2 cup white wine
3 cups chicken stock
1/4 teaspoon turmeric
Salt and freshly ground black pepper
2 tablespoons chopped fresh parsley

Steps:

  • In a medium pan, melt the butter. Add the garlic and onions and cook for 2 minutes. Add the cremini, white mushrooms and shiitakes and cook until most of the liquid has reduced, about 5 minutes. Add the rice and stir to coat. Deglaze with the wine. Add the chicken stock, turmeric and salt and pepper and stir. Bring to a simmer and simmer with the lid on until the liquid is absorbed and the rice is tender, 15 to 20 minutes.
  • When it's done, sprinkle over some chopped parsley and serve.

1/2 cup butter, cubed
2 cups uncooked long grain rice
1/2 pound sliced fresh mushrooms
8 green onions, chopped
2 teaspoons dried oregano
2 cans (10-1/2 ounces each) condensed beef broth, undiluted
1-1/2 cups water

Steps:

  • In a large saucepan, heat butter over medium heat. Add rice; cook and stir until lightly browned, 5-6 minutes. Transfer to a 3-qt. slow cooker. Add mushrooms, green onions and oregano. Stir in broth and water. Cook, covered, on low until rice is tender and liquid is absorbed, 3-4 hours.

1 (8 ounce) package sliced fresh mushrooms
¼ cup chopped green pepper
2 tablespoons chopped onion
1 ⅓ cups water
⅔ cup white rice
1 teaspoon chicken bouillon granules
⅛ teaspoon salt
1 pinch garlic powder
1 pinch ground black pepper

Steps:

  • Melt butter in a saucepan over medium heat; cook and stir mushrooms, bell pepper, and onion until tender, about 5 minutes. Stir in water, rice, bouillon granules, salt, garlic powder, and black pepper. Bring to a boil; reduce heat to medium-low, cover, and simmer until liquid is absorbed and rice is tender, 14 to 16 minutes.

Mushrooms with Pasta and Hazelnut Oil image

2 tablespoons of unsalted butter
1 pound mushrooms, ends trimmed and sliced into 1/4 inch thick slices
2 cloves garlic, minced
8 ounces dry linguine fini
2 to 3 tablespoons hazelnut oil
1/2 cup chopped parsley
1/2 cup toasted hazelnuts, chopped
Salt and freshly ground black pepper

Steps:

  • Cook the linguine; while it is cooking, make the mushroom topping.
  • Heat butter in a large skillet. Add the mushrooms and saute for a moment, Add a cover and a tad of water and simmer for 5 minutes or until tender. Remove the cover and evaporate the liquid. Add the garlic and saute just until aromatic. Remove mushrooms from the heat and season well to taste with salt and pepper.
  • When the pasta is done, return it to the cooking pot and toss with mushrooms, hazelnut oil and parsley; keep on tossing until well combined and transfer to 2 heated pasta bowls. Garnish with hazelnuts and dinner is done. Accompany with steamed vegetable salad.

ROASTED MUSHROOMS WITH TOASTED BUTTERY HAZELNUTS



Roasted Mushrooms with Toasted Buttery Hazelnuts image

3 tablespoons butter
2 medium shallots, peeled and thinly sliced
Kosher salt
Freshly ground pepper
1/2 pound white button mushrooms, cleaned and quartered
Vermouth
2 tablespoons hazelnuts, slightly crushed
1/4 teaspoon Hungarian paprika
Juice from 1 lemon
12 slices French bread, toasted

Steps:

  • Heat a skillet large enough to hold the mushrooms in a single layer over medium-high heat. Add 1 tablespoon of butter, which should, ideally, melt quickly and turn a light brown color. Add the shallots, season with salt and pepper, and give them a quick stir. Add mushrooms, 1 more tablespoon of butter and season with a bit more salt. Cook for about 4 minutes until mushrooms begin to turn golden brown and release some of their water. To avoid a possible flame up, move pan away from the stove and carefully add the vermouth. Return pan to stove and let cook for 2 to 3 minutes to reduce the vermouth.
  • While mushrooms are cooking melt remaining 1 tablespoon butter in a small skillet over low heat. Add the hazelnuts and let them "simmer" in the butter over low heat until they turn light brown, about 4 minutes.
  • Once the vermouth has reduced and been absorbed by the mushrooms sprinkle in the paprika (use a mesh strainer to evenly distribute the paprika over all the mushrooms). Add the lemon juice and hazelnuts and give it a stir. Remove from heat and let cool for 2 minutes.
  • Top each slice of toasted French bread with about 2 tablespoons of the mushroom mixture, place on platter and serve.

HAZELNUT-MUSHROOM PILAF

I created this to incorporate two of our favorites: hazelnuts and mushrooms. It combines rice, orzo pasta, and lots of goodies - very delicious!

¼ cup butter
½ cup uncooked long-grain rice
¼ cup uncooked orzo pasta
½ cup sliced fresh mushrooms
½ cup chopped onion
¼ cup minced celery
2 cups chicken broth
2 tablespoons chopped fresh parsley
¼ teaspoon dried marjoram
¼ teaspoon ground black pepper
½ cup chopped toasted hazelnuts

Steps:

  • Place a large skillet over medium-low heat. Melt butter, then saute rice, orzo, mushrooms, onion, and celery. Stir constantly until rice is lightly browned.
  • Mix in chicken broth, parsley, marjoram, pepper, and hazelnuts. Bring to a boil, then reduce heat to low, cover skillet, and allow to simmer 15 minutes. Remove from heat and let stand 10 minutes before serving.

If you're after a lighter alternative to risotto, this low-fat mushroom pilaf is just the ticket

500ml vegetable stock
1 onion , sliced
300g mixed mushrooms , sliced
2 garlic cloves , crushed
200g mixed basmati rice and wild rice
zest and juice 1 lemon
small bunch snipped chives
6 tbsp light soft cheese with garlic and herbs

Steps:

  • Put 2 tbsp of the stock in a non-stick pan, then cook the onion for 5 mins until softened - add a splash more stock if it starts to dry out. Add mushrooms and garlic and cook for 2 mins more. Add the rice and lemon zest and juice, mixing well. Pour in remaining stock and seasoning and bring to the boil. Turn down, cover and simmer for 25-30 mins until rice is tender. Stir through half each of the chives and soft cheese, then serve topped with the remaining chives and soft cheese.
