1 (18 1/2 ounce) package banana cake mix
1 (8 ounce) can crushed pineapple, drained and juice reserved
1 (3 ounce) package instant vanilla pudding
4 eggs
1/2 cup oil
1/2 teaspoon cinnamon
1/2 cup chopped nuts
1/2 cup sliced ripe banana
coconut (optional)

Steps:

  • Add water to reserved pineapple juice to equal 1 cup. Combine cake mix, pudding mix, pineapple, and the cup of pineapple liquid, eggs, oil, and cinnamon. Beat at medium speed with electric mixer for 2 minutes. Stir in banana slices and nuts. Pour into two 9 inch layer cake pans which have been greased and floured. Bake at 350 degrees for 40-45 minutes. Frost with a cream cheese icing.
  • Sprinkle coconut on top. (optional).

1/2 cup butter
1 (16 ounce) box powdered sugar
1 (7 ounce) can coconut
1/2 cup almonds, slivered, toasted

14 ounces sweetened condensed milk
15 ounces cream of coconut
20 ounces crushed pineapple (juice reserved)
2 cups heavy whipping cream
½ cup powdered sugar
1 teaspoon coconut extract
1 cup sweetened shredded coconut

Steps:

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, combine cake mix, water, vegetable oil and eggs until well combined.
  • Spray a half sheet pan (13"x18"x1") with nonstick cooking spray and spread batter in pan in an even layer.
