- In a 4-qt. slow cooker, combine the beans, pineapple, barbecue sauce and ginger. Cover and cook on low for 5-6 hours. Stir in bacon before serving.

- Cut bacon into ¼ inch lengthwise pieces. In a Dutch oven over medium-high heat, cook bacon until crispy, about 10 minutes. Remove bacon and reserve.
- Add ground beef to Dutch oven, cook until browned, about 5 minutes. Remove beef and reserve.
- Reduce heat to medium, sauté onion until translucent, about 8 minutes. Add pineapple and cook for 2 minutes.
- Return bacon and beef to Dutch oven. Add remaining ingredients except cilantro. Bring to a boil. Reduce heat and simmer for 1 hour, stirring occasionally. Garnish with cilantro.
