When my kids were little, it was a little feat to get them to eat well. The one type of food that they "enjoyed" was piza-type-looking "stuffs". Here's one of them . . . lucky they didn't know!!!

2 can(s) 8 oz. pillsbury quick crescent dinner rolls
1/2 c miracle whip salad dressing
2 tsp lemon juice
1/8 tsp pepper
2 c shredded sharp cheddar cheese
6 oz imitation crab meat, shredded
1/3 c green onions, thinly sliced
1 Tbsp dried chopped parsley

Steps:

  • 1. Unroll dough into 4 rectangles.
  • 2. Place on 15x10x1-inch jelly roll pan and press onto bottom and halfway up the sides of the pan to form a crust. Seal the perforations.
  • 3. Bake at 375 degrees for 10 minutes.
  • 4. In a medium bowl, combine salad dressing, lemon juice and pepper, mix well.
  • 5. Then add in the cheese, crabmeat, green onions and parsley, mix lightly. Spread evenly over crust.
  • 6. Continue baking for 12 to 15 minutes or until cheese is melted.
  • 7. Let stand for 5 minutes, cut into squares. Serve on a platter.

This recipe won $ 2,000.00 at the Pillsbury Bake-Off in 2002, for Jann Stricklin from Mena Arizona. Crescents, crab and cream cheese make for a cream of the crop appetizer. Very easy to make & tastes good as well. The recipe has been tweaked a bit.

1 (8 ounce) can Pillsbury Refrigerated Crescent Dinner Rolls
1 (8 ounce) package softened cream cheese
1/2 cup sour cream
2 eggs
2 (6 ounce) cans crabmeat, drained, flaked
3/4 cup grated swiss cheese
8 green onions, finely chopped
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
salt & pepper

Steps:

  • Heat oven to 350°F.
  • Unroll dough into 2 long rectangles.
  • Place in ungreased 13x9-inch pan; press over bottom to form crust; firmly press perforations to seal.
  • Beat cream cheese in medium bowl until light & fluffy.
  • Add sour cream and eggs; beat well.
  • Add crabmeat, 1/2 cup of cheese, onions, garlic powder, onion powder salt & pepper; mix well.
  • Spoon and spread over dough in pan.
  • Sprinkle with remaining 1/4 cup of cheese.
  • Bake at 350F for 35 to 40 minutes or until canter is set and edges are golden brown.
  • Cool 10 minutes.
  • Cut into squares.

1/2 cup Miracle Whip
2 teaspoons lemon juice
1/8 teaspoon pepper
2 cups sharp cheddar cheese, shredded
6 ounces imitation crabmeat, chopped
1/3 cup green onion, slices
1 tablespoon chopped parsley

Steps:

  • Unroll dough into 4 rectangles.
  • Place in a 15x10 pan; pressing onto bottom and halfway up sides of pan to form a crust.
  • Bake at 375 degrees for 10 minutes.
  • Combine miracle whip, lemon juice and pepper; mix well.
  • Add cheese, crabmeat, onion slices and parsley; mix lightly.
  • Spread over crust.
  • Bake another 12- 15 minutes at 375 degrees or until cheese has melted.
  • Let stand 5 minutes; cut into squares.

For the best texture, use lump crab meat, little filler, and bake the cakes in a very hot oven. Serve with lemon wedges, a garnish of chopped parsley, and/or cocktail sauce or tartar sauce. For more success tips and to learn which crab meat to use, see blog post above.

1 large egg
1/4 cup (60g) mayonnaise
1 Tablespoon chopped fresh parsley (or 2 teaspoons dried)
2 teaspoons dijon mustard
2 teaspoons worcestershire sauce
1 teaspoon Old Bay seasoning (up to 1 and 1/2 teaspoons for a spicier kick)
1 teaspoon fresh lemon juice, plus more for serving
1/8 teaspoon salt
1 pound fresh lump crab meat*
2/3 cup (41g) Saltine cracker crumbs (about 14 crackers)
optional: 2 Tablespoons (30g) melted salted or unsalted butter

Steps:

  • Whisk the egg, mayonnaise, parsley, dijon mustard, worcestershire sauce, Old Bay, lemon juice, and salt together in a large bowl. Place the crab meat on top, followed by the cracker crumbs. With a rubber spatula or large spoon, very gently and carefully fold together. You don't want to break up that crab meat!
  • Cover tightly and refrigerate for at least 30 minutes and up to 1 day.
  • Preheat oven to 450°F (232°C). Generously grease a rimmed baking sheet with butter or nonstick spray or line with a silicone baking mat.
  • Using a 1/2 cup measuring cup, portion the crab cake mixture into 6 mounds on the baking sheet. (Don't flatten!) Use your hands or a spoon to compact each individual mound so there aren't any lumps sticking out or falling apart. For extra flavor, brush each with melted butter. This is optional but recommended!
  • Bake for 12-14 minutes or until lightly browned around the edges and on top. Drizzle each with fresh lemon juice and serve warm.
  • Cover leftover crab cakes tightly and refrigerate for up to 5 days or freeze for up to 3 months.

20 asparagus spears, ends trimmed, stalks peeled
4 6-ounce halibut fillets (preferably thick pieces from a large fish)
Salt and freshly ground black pepper to taste
1 tablespoon olive oil
1/2 cup unsalted butter
7 ounces crab meat, picked over
2 middle leaves iceberg lettuce, cut into 1/2-inch squares
2 plum tomatoes, blanched, seeded and diced
1 bunch fresh chives, finely chopped
1 tablespoon lemon juice

Steps:

  • Preheat the oven to 350 degrees. Bring a large pan of salted water to a boil. Add of the asparagus, cook 2 to 3 minutes, until tender, remove and refresh in ice water. Repeat with the remaining asparagus. Remove asparagus from the ice water, drain well and reserve.
  • Place a heavy-bottomed nonstick pan with an ovenproof handle over medium heat. Season the fish on both sides with salt and a little pepper. Put the olive oil into the pan and fry the fish until golden. Transfer to the oven for 4 to 5 minutes.
  • Put 1 tablespoon of warm water into a pan and add 1/2 of the butter. Bring to a boil and swirl the pan to emulsify. Add the asparagus, warm through, season to taste and reserve.
  • Put 1 tablespoon of water into a small pan and bring to a boil. Add the remaining butter and swirl the pan to emulsify. Add the crab, lettuce, tomatoes and chives. The result should be buttery but not too wet. Season with salt, pepper and lemon juice.
  • To serve, make a bed of the crab mix on each of 4 plates, top with the halibut and arrange 5 asparagus spears alongside.

This recipe was given to me by a coworker who highly recommends it. I haven't tried it myself ast yet. It comes from "500 Best Cookies, Bars & Squares. Note: If you find that the squares are a little watery, place them in the refrigerator. They should firm up nicely.

4 cups chopped rhubarb, thawed if frozen
1 cup sugar
2 tablespoons cornstarch
1 teaspoon grated orange zest
1 1/2 cups all-purpose flour
1/2 cup packed brown sugar
1/2 cup chopped pecans
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup butter or 1/2 cup margarine, softened

Steps:

  • Preheat oven to 350°F.
  • Grease an 8" square cake.
  • Filling:.
  • Combine rhubarb, sugar, cornstarch and zest in a saucepan.
  • Cook over medium heat, stirring constantly, for 5 minutes or until mixture has thickened.
  • Set aside and allow to cool.
  • Base:.
  • Mix together flour, sugar, pecans, cinnamon and salt.
  • Cut in butter until mixture resembles course crumbs using a pastry blender, 2 knives or your fingers.
  • Set aside 1 cup.
  • Press remainder evenly in greased cake pan.
  • Spread filling evenly over base and sprinkle.
  • reserved flour mixture evenly over top.
  • Bake in preheated oven or 35 to 40 minutes or until golden brown.
  • Place pan on a rack to cool.
  • After completely cooled, cut into squares.

2 cups frozen cooked baby shrimp or 2 cups baby shrimp
1 cup flaked imitation crabmeat, cut into small pieces (surimi)
1 teaspoon seafood seasoning (Old Bay)
1 teaspoon garlic powder
1 tablespoon chopped fresh parsley
6 ounces shredded Mexican blend cheese (1 1/2 cups)

Steps:

  • Heat oven to 375°F.
  • Thaw shrimp as directed on package.
  • Drain well; press between paper towels to remove excess liquid.
  • Cut half of the shrimp into small pieces.
