1 tablespoon unsalted butter, melted
1 teaspoon olive oil
1 teaspoon finely chopped fresh thyme leaves
1 garlic clove, finely grated on a microplane
Kosher salt and freshly ground black pepper
1/3 cup nonfat Greek-style yogurt
1 scallion, white and green parts chopped

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with aluminum foil.
  • Make a series of 1/8-inch slices along each potato, slicing 2/3 of the way through.
  • Stir together the butter, oil, thyme, garlic, 1/4 teaspoon salt and 1/4 teaspoon pepper in a small bowl. Rub the potatoes all over with the mixture, getting in between the slices.
  • Place on the baking sheet and roast until the center of the potatoes are tender and the outside is crisp, 50 minutes to 1 hour. Halfway through the roasting time, remove the potatoes from the oven and run a fork gently across the tops of the potatoes, using light pressure, to fan the slices and separate them from one another.
  • Meanwhile, stir the yogurt and scallions with a pinch salt and a pinch pepper. Serve the sauce with the potatoes.

6 medium sweet potatoes
6 tablespoons salted butter, at room temperature
1/4 cup brown sugar
1 teaspoon ground cinnamon
Kosher salt and freshly ground black pepper
Fresh sage and rosemary sprigs, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Place a potato between the handles of 2 wooden spoons or chopsticks. Slice the potato into thin slices, leaving 1/4 inch at the bottom unsliced; the spoons or chopsticks will prevent you slicing all the way through. Repeat with the remaining potatoes.
  • Mix together the butter, brown sugar and cinnamon with a pinch of salt and pepper in a small bowl.
  • Place the sweet potatoes on a baking sheet. Using a spatula, spread the butter mixture all over the potatoes. Bake until tender and golden, 40 to 45 minutes. Transfer to a platter and garnish with the sage and rosemary.

  • Preheat oven to 425°F (218 degrees Celsius). Place a sweet potato between two chopsticks for stability and knife guidance. Every ¼-inch along the length of the sweet potato, slice ⅞ of the way through, or until the knife hits the chopsticks. (The chopsticks will help prevent the knife from cutting all the way through the sweet potato.) Repeat with the second potato. Brush the sweet potatoes with the vegetable oil. Place in a small baking dish and season with salt and pepper to taste. Bake the sweet potatoes for about 30 to 40 minutes, or until soft. In a small bowl, combine the melted butter, ground cinnamon, chopped pecans, maple syrup, vanilla extract, and kosher salt. Stir to mix. 4 slices thick-cut bacon
2 teaspoons maple syrup
1 teaspoon paprika
Kosher salt
4 medium sweet potatoes (about 2 pounds)
Chopped fresh chives, for garnish

Steps:

  • Preheat the oven to 425 degrees F.
  • To a large cast-iron pan, add the bacon in an even layer. Turn the heat to medium and cook until crispy, around 4 minutes per side. Drain on paper towels and set aside. When cool enough to handle, break into pieces.
  • To the bacon fat in the pan, add the maple syrup, paprika and 2 teaspoons salt. Set aside.
  • One at a time, place a potato between the handles of 2 wooden spoons or 2 chopsticks. Slice each potato into 1/8-inch-thick slices; the spoon handles will prevent the knife from cutting all the way through. Place the potatoes in the pan and baste with the bacon fat/maple syrup mixture all over, including the bottoms and in between the slices. Tender in the middle, with charred ruffles on top, hasselback potatoes - sliced thinly all the way through so that they fan open like an accordion - are the ultimate treat for people who can't choose between creamy and crisp. In this recipe, the sweet potatoes are halved first, so they cook faster and so their flat sides sear in the hot pan, leaving a caramelized edge. If your spice cabinet is fully stocked, try adding red-pepper flakes, smoked paprika or dried oregano to your garlic-butter mixture. A sprinkling of chopped parsley, right before you're ready to eat, would also be welcome. Serve these as you would roasted potatoes, like alongside roast chicken.

2 medium sweet potatoes (about 8 to 10 ounces each), scrubbed and dried

  • Heat the oven to 425 degrees. Pour 1 tablespoon olive oil into a large cast-iron skillet, swirl it so it coats the whole pan, then put it in the oven while you cut the potatoes.
  • Cut the potatoes in half lengthwise, place cut side down on a cutting board, then use a knife to make 1/8-inch slices on a slight bias from the top to the bottom of the potato half. Cut almost all of the way through the potato, stopping before you reach the bottom. (A serrated knife makes the job easier. You can also lay chopsticks down on either side of the potato to keep the knife from slipping through the potato.)
  • Carefully remove the skillet from the oven and nestle the sweet potato halves inside in a single layer. Drizzle the top of each with 1/2 teaspoon olive oil, sprinkle with salt, then bake for 30 minutes.

8 sweet potatoes
Extra-virgin olive oil, for drizzling
kosher salt
Freshly ground black pepper
6 tablespoons extra-virgin olive oil
1/2 cup light brown sugar, firmly packed
2 cloves garlic
1 1/2 cups pecans, chopped
2 cups grated Parmesan, divided
4 sprigs thyme
Freshly ground black pepper, to taste

Steps:

  • Potatoes: Preheat oven to 400 degrees F. Use a sharp knife to cut each sweet potato crosswise into ⅛-inch slices, but leave them attached across the bottom. (Tip: To prevent potato from wobbling, cut a flat base for the potato to rest on as you make your slices. For the thicker middle section, place two chopsticks on either side of the potato. The chopsticks will create a barrier for your knife to prevent it from slicing through. If you do slice through to the bottom, simply use a toothpick to reconnect the potato.) Place the potatoes sliced side up on a sheet pan lined with parchment paper. Drizzle with olive oil, and rub the oil all over the skins. Season generously with salt and pepper. Bake for 45-60 minutes, depending on size.
  • Topping: In a bowl, mix together the olive oil and brown sugar. Use a Microplane grater to grate the garlic cloves directly into the bowl; stir to combine. Add pecans and 1 cup of the Parmesan; stir again. Remove thyme leaves from the stems by pinching the top of the sprig and pulling straight down. Roughly chop leaves and add to the bowl; stir to combine and taste for seasoning. Add pepper, mix, and set the topping mixture aside. (Note: Topping can be made 1 day ahead and stored in an airtight container in the refrigerator. Bring to room temperature before using.)
  • When the potato skins are crispy and the interiors soft, remove from the oven. Nestle the topping between the slices and all over the tops of the potatoes. Place back in the oven, 10 more minutes. Remove potatoes from oven and transfer to serving dish. Scrape up any topping that has caramelized on the baking sheet and pile back onto the potatoes. Sprinkle remaining Parmesan on each potato and serve.
