Crescent Roll Breakfast Casserole with Sausage and Hash Browns image

Great crescent roll breakfast casserole for entertaining. Lots of flexibility.

1 pound breakfast sausage
2 cups frozen hash brown potatoes, thawed
6 large eggs
½ cup milk
salt and ground black pepper to taste
1 (8 ounce) package refrigerated crescent rolls
2 cups shredded pepper Jack cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Remove sausage to a plate; drain and discard most of the grease from the skillet. Add hash browns and cook until golden brown, 5 to 7 minutes.
  • Beat eggs, milk, salt, and pepper together in a bowl.
  • Arrange crescent rolls on the bottom of a 9x13-inch baking dish. Layer with sausage and hash brown potatoes. Pour egg mixture over top and sprinkle with pepper Jack cheese.
  • Bake in the preheated oven until a knife inserted into the center comes out clean, about 30 minutes. Remove from the oven and let set before serving, about 10 minutes.

3 tablespoons butter
1 small yellow onion, chopped
4 cups frozen shredded hash browns
1 lb bulk sausage, mild, hot (or 1 lb sage sausage)
2 1/4 cups whole milk
8 large eggs
1 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon freshly grated nutmeg
2 tablespoons Dijon mustard
8 cups cubed French bread or 8 cups Italian bread, crusts removed
2 cups grated cheddar cheese
2 cups freshly grated parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F.
  • Spray a deep 13 by 9-inch casserole dish with vegetable oil cooking spray.
  • Melt the butter in a large frying pan.
  • Add the onion and saute over medium-low heat until soft, about 5 minutes. Add the hash browns and break apart.
  • Saute until soft, about 5 minutes.
  • In a second frying pan, saute the sausage, breaking apart large clumps. When the sausage is cooked through, remove it from pan.
  • In a large mixing bowl, combine the milk, eggs, salt, pepper, nutmeg and mustard, briskly to blend.
  • To assemble, spread the onions and hash browns evenly at the bottom of the greased dish.
  • Place the bread cubes evenly on top of hash browns.
  • With a slotted spoon distribute sausage as the third layer.
  • Pour the milk and egg mixture over these layers.
  • Add Parmesan as the next layer, while then adding the Cheddar.
  • *Cook's Note: Save a few tablespoons of cheddar for the last 10 minutes of baking, where you can add a fresh topping of melted cheddar.
  • Bake the casserole, uncovered for 45 to 50 minutes, until puffed and golden brown.

I got this recipe from my mother-in-law after having it for breakfast at her house. I've never made it myself, but it was so delicious, I thought I'd share. I'm not sure if you can use another type of oil, so any reviews using a different oil would be appreciated.

4 eggs
2 cups evaporated milk
5 cups frozen hash brown potatoes, thawed
3 tablespoons corn oil
1 lb sausage, browned and well drained
2 cups grated cheddar cheese
4 tablespoons minced onions

Steps:

  • Beat eggs and milk, set aside.
  • In a large bowl, mix hashbrowns and oil.
  • Press along the bottom and up the sides of a 9x13 baking dish.
  • Bake at 475* for 15 minutes.
  • Layer the sausage, cheese, and onions over the potatoes.
  • Pour the egg/milk mixture evenly over the top.
  • Turn oven down to 350* and bake for 30 minutes until firm.

16 ounces breakfast sausage, bulk
2 tablespoons all-purpose flour
1 1/2 cups milk (do not use skim or fat free)
16 ounces frozen hash brown potatoes
4 green onions, finely chopped
2 teaspoons fresh parsley
2 teaspoons rosemary
1 1/4 cups sharp cheddar cheese, grated

Steps:

  • Preheat oven to 350°F Butter 8x8x2-inch glass baking dish.
  • Cook sausage in heavy large skillet over medium-high heat until brown, breaking into small pieces with back of spoon, about 5 minutes. Mix in flour, then milk. Cook until mixture thickens and comes to boil, stirring occasionally, about 5 minutes.
  • Layer potatoes in prepared dish. Top with 1/3 of green onions, 1 cup cheese, 1/3 of green onions, sausage mixture, sprinkle the herbs on top, and the remaining 1/4 cup cheese. Bake casserole until potatoes are tender, about 45 minutes. Sprinkle with remaining green onions and serve.

This is a recipe that my boss brings into work all the time. It's a big hit with everyone in the office.

2 lbs pork sausage
2 cups pre-shredded cheddar cheese
1 (10 ounce) can cream of chicken soup
1 cup sour cream
salt and pepper
8 ounces French onion dip
30 ounces frozen shredded hash browns

Steps:

  • In skillet, cook the sausage until brown. Drain well.
  • In large mixing bowl, combine the cheese, chicken soup, sour cream, French onion dip,salt and pepper.
  • Fold in thawed hash browns. Mix well.
  • Spread 1/2 of the hash brown mixture in bottom of 9x13" greased pan (or you can use PAM).
  • Spread 1/2 of the browned sausage over the hash browns.
  • Repeat.
  • Bake @ 350 approximately 1 hour until golden brown.
  • (I cover with foil the first 1/2 hour to avoid over cooking the sausage on top.).
