HEAVENLY HASH BROWN CASSEROLE
This easy casserole recipe of cheesy hash brown potatoes, loaded with sausage, is a crowd-pleasing side dish.

Steps:
- Heat oven to 375°F. Spray 3-quart casserole with cooking spray.
- In 10-inch skillet, cook sausage over medium-high heat 3 minutes, stirring to crumble. Add onions and peppers. Cook 5 minutes longer or until sausage is no longer pink and vegetables are tender. Place mixture in large bowl. Add hash browns, 11/2 cups of the cheese, the sour cream and soup; stir to coat. Spoon mixture into casserole. Top with remaining 1/2 cup cheese.
- Bake uncovered 50 minutes or until potatoes are tender and top is golden brown.

HEAVENLY HASH BROWNIES
Steps:
- Preheat oven with a rack in the middle of the oven to 350 degrees. Coat a 9 by 13-inch baking pan with nonstick vegetable spray.
- Melt the chocolate and butter in a completely dry bowl or in the top of a double boiler set over barely simmering water. In a large bowl, mix together the eggs, granulated sugar, brown sugar and corn syrup until blended. Mix in the chocolate mixture. In a separate bowl, stir the flour, baking powder and salt together with a fork. Mix it into the egg mixture. Stir in the nuts and 1/4 cup of the marshmallows. Scrape the mixture into the prepared pan. Bake for 25 minutes, until barely set. Coat the top with the remainder of the marshmallows and bake for 5 more minutes. Set the pan on a rack to cool. Cut into 1 1/2 by 3-inch bars.
HEAVENLY HASH BROWN CASSEROLE
This is another recipe handed down from my husband's family. During the stressful meeting-of-the-parents times over the course of our relationship, this hash brown casserole was perhaps one of the only things I could look forward to without some level of hesitation! We still make it as often as we can justify it, which sadly is less often than we wish it were. (Stupid calories.) We have tried making it with low-fat ingredients and it does work nicely, but full-fat ingredients will make it shine. Note that the sizing of frozen hash brown bags doesn't always allow for you to buy a two-pound bag, so you may need to mix and match until you get that amount. We usually have some frozen hash browns left over when we make it, which can be used in any number of other recipes as desired. Also note that the topping is technically optional, but we highly recommend using it. It adds a wonderful texture that we would miss if it weren't included. If you have any casserole left over (no promises!) then this reheats well too.

Steps:
- Mix all casserole ingredients together in a large bowl, then pour into a greased 9x13 pan.
- If using the topping, mix the topping ingredients together in a medium bowl, then sprinkle it over the top of the casserole.
- Bake at 350 degrees, uncovered, for 1 hour.
HASH BROWNS HEAVEN
It was thrown together one morning when I had my husbands family visiting. I had all the ingredients and just began adding it to a skillet. My family called it "heaven", hence the name.

- Melt butter; add potatoes, onion and pepper.
- Cook until all are tender about 10 minutes, add ham and continue to cook until ham is heated through.
- Remove from heat and add cheese, serve on a warm platter sprinkled with chopped chives.

HASH BROWN HEAVEN
Steps:
- 1. Dice green pepper and onion very small. Dice kielbasa very small. Brown and set aside.
- 2. Combine all ingredients reserving one half of the cheese in a greased 9x13 pan. Top with the remainder of the cheese.
- 3. Bake at 350°F for 40-50 minutes or until set.
