CREAMY HASH BROWN POTATO SOUP
A friend brought me this soup when I was sick. It tastes like it simmered for hours, but basic ingredients make it a snap to prepare. -Pat Maruca, Philippi, West Virginia

- In a large saucepan, combine the potatoes, water and onion. Bring to a boil. Reduce heat; stir in soup and cheese. Cook and stir until cheese is melted. , Stir in the sour cream, salt and pepper. Cook and stir until heated through (do not boil).

This recipe freezes well and is easily halved. Serve with shredded Cheddar cheese and garlic croutons.

- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels, reserving drippings in the skillet. Chop bacon into smaller pieces.
- Combine hash brown potatoes, O'Brien hash brown potatoes, chicken bouillon, celery seed, and black pepper in a large pot over medium heat; bring to a boil. Reduce heat and simmer, covered, until potatoes are tender, 20 to 30 minutes.
- Puree potatoes with an immersion blender until smooth.
- Pour reserved bacon drippings, cream of chicken soup, and milk into the pot. Simmer until heated through, about 10 minutes. Sprinkle chopped bacon on top.

~ QUICK CHEESY SOUTHERN HASH BROWN POTATO SOUP ~
Another excellent Potato soup, using Southern cut hash browns. Using hash browns instead of raw potatoes cuts the cooking time in half. This is my creation and so very yummy! Enjoy!

- 1. In a dutch oven over medium heat - melt butter. Add onion, celery and garlic - cook and stir until celery and onion are tender, about 5 minutes.
- 2. Stir in the hash browns - continue cooking and carefully stirring for another 5 - 10 minutes or so. Making sure not to stick.
- 3. Next, stir in the milk, cream, soup, salt, pepper, garlic salt, sour cream, parsley. Stir, making sure the sour cream and soup is thoroughly combined and cheese is melted.
- 4. Continue cooking and stirring for another 15 - 20 minutes or until potatoes are nice and tender. Serve in bowls and top with sour cream, cheese and bacon bits if preferred. It's delicious and very satisfying.
HASH BROWN POTATO SOUP (CROCK POT)
I've always prepared potato soup the hard way and it took forever to make - but it was darn good when it was done. HOWEVER, I found this recipe on PINTEREST and it is delicious and so very easy! So, I'm tossing the old recipe and using this new one. I bet if you try it, you'll use it all the time, too!! :)

- 1. Turn crockpot on high. Put your hash browns (southern style, not the shredded style) in first. Sprinkle garlic and onion powder and beef bouillon granules on top. Pour chicken broth on it. Stir. Pour cheese on top of it and DO NOT STIR! If you turn your crockpot on at noon, your soup will be ready to thicken at 5PM!
- 2. After at least 5 hours of cooking on HIGH (that's counted as soon as you turn on your crockpot because it takes a little while to get hot), you'll need to thicken your soup. To do that...... Mix Half and Half with the flour and blend well - I use a shaker so it's really mixed good. Pour into your soup mixture and stir together easily - you don't want to smash all your cubes of potatoes. Take the "crock" out of the "pot" and salt and pepper to taste. I never have to salt it if I use bouillon. Be careful that it doesn't burn after you've added your cream mixture.
- 3. When you're ready to serve, garnish with bacon, cheese and sour cream, if desired. I did not want to garnish it, but I did want the taste of bacon in this soup, so I used a teaspoon of TASTEFULLY SIMPLE's BACON BACON and it was heavenly.
- 4. I serve with hot corn bread and sweet iced tea. Garlic bread would be nice, too. I'm not kidding here, this soup is to die for and SO easy!

- 1. Boil hash browns in salted water with bouillon cubes, pepper, celery seed and flakes and onions until tender. Use 4 cups water; most boils away.
- 2. In another large (8 quart) pan, mix soup and milk; stir until smooth. Add cooked potatoes, bacon, bacon grease, ham, butter, and garlic salt. Heat on low temperature. Be sure to taste before adding garlic salt or put into potato water. If too much water remains in potatoes, drain some off.
HASH-BROWN POTATO SOUP
Easy and good. If you have a bag of hash browns, but no potatoes on hand -- you can still make a great soup. Got this from Relish Magazine in our local paper last weekend. Yummy!

- Heat olive oil in a large saucepan. Add onion and sauté until tender about 8 minutes. Add hash browns and broth. Bring to a boil, reduce heat, and cook covered 8-10 minutes.
- In small bowl, whisk together flour with 3/4 cup evaporated milk. Add to potato mixture with remaining milk. Bring to boil, reduce heat, and cook, stirring, 10 minutes or until thickened.
- Remove from heat and stir in yogurt, salt, and pepper. (Don't boil after adding yogurt.) Stir until well combined. Top with desired toppings.
CROCK-POT HASH BROWN LOADED POTATO SOUP
Steps:
- Mix all ingredients together in a 3 1/2 to 5 quart crock-pot/slow cooker.
- Turn on High and let cook for approximately 6 hours.
