This recipe came about when I had all the ingredients for a great breakfast but didn't want to cook everything separately. Threw it into a casserole dish and voila! This is by far the best breakfast casserole I've ever had. It's wonderful when having "breakfast for dinner!"

1 teaspoon butter, or as needed
1 (16 ounce) package bacon
1 (16 ounce) can refrigerated biscuit dough
8 frozen hash brown patties, or to taste
8 eggs
¾ cup milk
2 cups shredded Cheddar cheese

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Butter a 9x13-inch baking dish and set aside.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crispy but not fully browned, 6 to 8 minutes. Drain bacon slices on paper towels.
  • Slice biscuits lengthwise and place on the bottom of the baking dish, sealing the dough to cover the bottom completely. Top with hash brown patties. Layer bacon over the hash browns.
  • Whisk eggs and milk together, then pour over the casserole. Top with Cheddar cheese.
  • Bake in the preheated oven until top is bubbling and bacon is crispy, 30 to 35 minutes. Let cool for 10 minutes before serving.

1 lb bulk spicy pork sausage
1 small onion, chopped (1/4 cup)
2 1/2 cups frozen diced hash brown potatoes
5 eggs
1 3/4 cups milk
1 cup Original Bisquick™ mix
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups shredded sharp Cheddar cheese (8 oz)
Picante sauce or green hot sauce, if desired
Sour cream, if desired

Steps:

  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 10-inch skillet, cook sausage and onion over medium-high heat 5 minutes, stirring occasionally. Stir in potatoes. Cook 5 to 7 minutes, stirring occasionally, until sausage is no longer pink and potatoes are lightly browned. Drain mixture on paper towels; spoon into baking dish.
  • In medium bowl, stir eggs, milk, Bisquick mix, salt and pepper with fork or whisk until blended. Stir in cheese. Pour over sausage mixture and stir well. Cover with nonstick foil; refrigerate 8 to 12 hours.
  • Heat oven to 350°F. Bake casserole covered 45 minutes. Uncover; bake 10 to 15 minutes longer or until knife inserted in center comes out clean. Let stand 5 minutes before serving. Serve with picante sauce and sour cream.

I made this up using a couple of different recipes and wanted to post this so I don't forget what I did!! You can make this the day before so it's perfect for holiday brunches. (I use the southwestern style for a spicy flavor) I may even try it southwestern style and post that separately. Let me know what you think!!

2 tablespoons canola oil
1 (20 ounce) package simply potatoes brand shredded hash browns
2 cups shredded swiss cheese
10 large eggs, slightly beaten
1 medium onion, diced
1 teaspoon minced garlic
4 ounces mushrooms, cleaned and sliced
1/2 cup milk
1/2 lb asparagus, washed, cut and blanched slightly
1 -2 small roma tomato, cleaned, seeds removed, diced
1/2 teaspoon pepper
1 dash nutmeg
8 -12 drops hot pepper sauce

Steps:

  • Add canola oil to bottom of skillet; heat to medium-high; add hasbrowns, onion and garlic. Spread them out and fry without disturbing for about 5 minutes, then turn them and fry for another 5 minutes until brown.
  • In a lightly sprayed 9 x 13 baking dish, spread hashbrowns on the bottom. Then spread the mushrooms, asparagus, roma tomatoes and 3/4 of the swiss cheese over the hashbrowns.
  • Beat eggs, milk, pepper, nutmeg and hot pepper sauce together and pour over everything. Press evenly down with edge of spoon or clean fingertips making sure all is coated. Top with remaining cheese.
  • At this point cover with foil and refrigerate till morning if making the day before.
  • Bake at 450 for 8 minutes; reduce oven temperature to 350 and continue baking for an additional 12 - 15 minutes.

1 lb chorizo sausage
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1/2 cup chopped yellow or white onion
1/2 cup canned black beans (drained, rinsed)
1 can (10 oz) Old El Paso™ mild red enchilada sauce
4 oz cream cheese, softened
1 package (1 oz) Old El Paso™ taco seasoning mix
2 teaspoons olive oil
8 eggs
3 tablespoons milk
Salt and pepper, to taste
2 cups shredded Mexican cheese blend (8 oz)
1 bag (1 lb) frozen shredded hash brown potatoes, thawed
Chopped fresh cilantro, if desired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish or casserole with cooking spray.
  • Heat 10-inch heavy-bottomed skillet over medium-high heat. Add chorizo, 1/4 cup of the green bell pepper, 1/4 cup of the red bell pepper and 1/4 cup of the onion. Cook about 10 minutes, stirring frequently and breaking up chorizo with wooden spoon, until chorizo is no longer pink and vegetables are softened.
  • Reduce heat to medium-low. Stir in black beans, enchilada sauce, cream cheese and taco seasoning mix until well combined. Cook about 2 minutes or until warmed through. Transfer mixture to baking dish.
  • Wipe out skillet, and return to stovetop over medium-low heat. Add olive oil. In large bowl, beat eggs, milk, and salt and pepper with whisk. Pour into skillet and cook 5 to 7 minutes, stirring occasionally, until eggs are a soft scramble. Remove from heat; stir in 1 cup of the shredded cheese. Spread evenly over top of mixture in baking dish.
  • In large bowl, mix remaining 1/4 cup green bell pepper, 1/4 cup red bell pepper, 1/4 cup onion, 1 cup shredded cheese and the hash brown potatoes. Spread evenly over eggs in baking dish.
  • Bake 30 to 35 minutes or until bubbly and baked through and potatoes on top are golden brown. Sprinkle with chopped fresh cilantro. Serve warm.

1 - 30 oz bag, shredded hashbrowns, thawed
1/2 c each - onion & green or red bell pepper, chopped

1/2 tsp dry mustard
8 eggs
2 c milk
2 c fresh shredded, medium cheddar cheese - divided

Steps:

  • 1. Preheat oven to 350 degree F. Par cook any vegetables you might be using, to release some of the water content. In a large bowl mix together the hash brown's, 1 cup cheese, salt, pepper, dry mustard, onion and other veggies you might be using. In another bowl, mix eggs with milk. Pour the egg mixture in with the hash brown and stir to incorporate.
  • 2. Spray a 9 x 13 baking dish with nonstick cooking spray. Spread hash brown mixture evenly into dish.

1 lb ground sausage ("hot" or "sage" flavored)
1/4 cup chopped onion
2 1/2 cups frozen cubed hash brown potatoes
5 large eggs, lightly beaten
8 ounces shredded sharp cheddar cheese (2 cups)
1 3/4 cups milk
1 cup baking mix
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook sausage and onion in large frying pan over medium-high heat for 5 minutes or until meat crumbles.
  • Stir in hash browns, and cook for 5 to 7 minutes or until sausage is no longer pink and hash browns are lightly browned.
  • Drain mixture well on paper towels.
  • Spoon mixture into a lightly greased 13 x 9-inch baking dish.
  • A stoneware baking dish works really well.

2 cups shredded sharp cheddar cheese
1 3/4 cups milk
1 cup baking mix
1/4 teaspoon salt
1/4 teaspoon pepper
picante sauce or green chili sauce
sour cream
fresh parsley sprig

Steps:

  • Cook sausage and onion in a large skillet over medium-high heat 5 minutes or until meat crumbles. Stir in hash browns, and cook 5 to 7 minutes or untl sausage is no longer pink and potatoes are lightly browned. Drain mixture on paper towels; spoon into a greased 13-x9-inch baking dish.
  • Stir together eggs, cheese, and next 4 ingredients; pour evenly over sausage mixture, stirring well. Cover and chill 8 hours.
  • Bake, uncovered with nonstick foil, at 350° for 45 minutes. Uncover and bake 10 to 15 minutes more or until a wooden toothpick inserted in the center comes out clean. Remove from oven, and let stand 5 minutes. Serve with desired toppings. Garnish, if desired.

BREAKFAST HASH BROWN CASSEROLE

A great casserole that you can assemble the night before and bake in the morning. I make this on Monday morning and have enough leftover for breakfast for most of the week. This works out well on school mornings.

1 package simply potatoes southwest hash brown
1 lb breakfast sausage (I like the Sage flavored. )
1 cup shredded Mexican blend cheese or 1 cup freshly grated sharp cheddar cheese
1 dozen egg
2/3 cup Bisquick
1/2 cup sour cream
3/4 cup milk
1/3 cup water

Steps:

  • Follow cooking instructions on sausage packaging and crumble while cooking. Drain any excess liquid when finished. In a large bowl, toss together hash browns, sausage and cheese, set aside. In a separate bowl combine the remaining ingredients and whisk or use a hand blender until the eggs start to foam on the top. Coat a 9 x 13 baking dish with cooking spay or butter. Place hash brown mixture into baking dish and pour egg mixture over the top. Make sure the egg mixture completely saturates the potatoes. Cover and place in the refrigerator if baking in the morning. Bake in a preheated 350 degree oven for 1 hour. Place foil over the casserole about half way through as the top will start to brown.
  • OPTIONS: You can sprinkle additional cheese on the top before taking it out of the oven.
  • I usually use some freshly grated cheese in the recipe, as it seems to have more moisture and I find the packaged shredded variety a little dry. This usually will make a difference when refrigerating and reheating leftovers, so the casserole won't become too dried out.
  • Try adding any leftover or fresh vegetables you might have on hand. Remember that frozen veges will contain some water, in which you would need to increase your baking time.
  • Substitute the sausage with precooked crumbled bacon. Not sure how much you would use.
  • Serve with salsa.

1 lb bacon
2 tablespoons butter
2 onions, chopped
2 cups sliced mushrooms
4 cups frozen hash brown potatoes, thawed
1 teaspoon salt
1/2 teaspoon pepper
6 large eggs
1 1/2 cups milk
2 tablespoons chopped fresh parsley
1 cup shredded cheddar cheese (mild or sharp)

Steps:

  • Preheat oven to 400°.
  • Separate bacon slices and arrange on a large rimmed baking sheet.
  • Place in the oven as it preheats and bake until the bacon is crisp, 10-12 minutes; drain off the fat.
  • Using 1 tablespoon butter, coat a shallow 3-quart casserole.
  • Melt the remaining tablespoon of butter in a nonstick skillet.
  • Add the onions and mushrooms and saute over medium heat, stirring, for 5-10 minutes, until the onions are tender.
  • Arrange the potatoes in the bottom of the dish, and sprinkle with salt and pepper.
  • Top with the cooked bacon slices, then the onions and mushrooms.
  • In a bowl, beat the eggs with the milk and parsley.
  • Pour over the casserole and top wih the cheese.
  • Bake the casserole, uncovered, for 45 minutes, or until set and the cheese is melted.
  • Serve immediately.

1 (30 ounce) package hash browns
7 eggs
2 lbs bulk sausage
1 lb shredded cheddar cheese
1 1/2 cups milk
1 tablespoon salt
1 tablespoon pepper
1 medium onion, diced
1 teaspoon cayenne pepper (optional)

Steps:

  • Brown bulk sausage in a skillet and drain very well.
  • Prepare hash browns according to package directions, season with the onions, salt, pepper and cayenne pepper while cooking.
  • Combine sausage, hash browns and cheese in a bowl making sure all ingredients are well mixed.
  • Use a whisk to mix the eggs and milk in a bowl.
  • Place the meat mixture in a baking pan and pat down evenly throughout.
  • Pour the egg mixture over the top.
  • Bake at 350 degrees for 40 minutes, broil on high for an additional 3 minutes at the end.
  • Remove from the oven and let sit for about 10 minutes and enjoy.
