I was given this recipe years ago by my friend Debbie. I've had it written down on a torn piece of paper for years and decided today that this recipe needs to be on AllRecipes. It is a moist, sweet, and delicious bread with a crispy crust. By far my favorite bread recipe!

2 eggs
2 cups white sugar
½ cup vegetable oil
2 teaspoons vanilla extract
2 cups apples, peeled and diced
2 cups all-purpose flour
1 ½ teaspoons salt
1 teaspoon baking powder
½ teaspoon ground cinnamon, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  • Beat eggs, sugar, vegetable oil, and vanilla extract in a mixing bowl; add apples.
  • Mix flour, salt, baking powder, and cinnamon in a separate bowl; add to apple mixture and stir just until evenly combined into a thick batter. Pour batter into the prepared loaf pan.
  • Bake in the preheated oven for 45 minutes. Cover loaf pan with aluminum foil; continue baking until a toothpick inserted into the center comes out clean, about 15 minutes more. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

I got this apple quick bread recipe a long time ago and with a few changes it's become one of our favorites. Everyone who's ever tasted this apple bread has asked for the recipe! -Phyllis Herlocker, Farlington, Kansas

Yield 2 loaves (12 slices each).

Number Of Ingredients 11

3 cups all-purpose flour
2 cups sugar
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
4 large eggs, room temperature
1 cup canola oil
1/2 teaspoon vanilla extract
2 cups chopped peeled apples (about 2 medium)
1 cup coarsely chopped walnuts

Steps:

  • Preheat oven to 350°. Line 2 greased 8x4-in. loaf pans with parchment; grease paper., Whisk together first 6 ingredients. In another bowl, whisk together eggs, oil and vanilla; add to flour mixture, stirring just until moistened (batter will be thick). Fold in apples and walnuts. , Transfer to prepared pans. Bake until a toothpick inserted in each center comes out clean, 50-55 minutes. Cool in pans 10 minutes before removing to wire racks to cool.Freeze option: Securely wrap cooled loaves in plastic and foil, then freeze. To use, thaw at room temperature.

When my daughter was growing up, we both enjoyed having banana bread for breakfast. This apple bread recipe resulted from one of my happy experiments with variations on a theme. Served warm and topped with whipped cream, it also makes a nice dessert.

1/2 c butter
2/3 c white sugar
1/3 c brown sugar
2 eggs
1 c unsweetened applesauce
2 c all-purpose flour
1 tsp baking soda
3 Tbsp milk
1 tsp vanilla extract
1 tsp cinnamon
1 peeled and diced granny smith apple

Steps:

  • 1. Preheat oven to 350º F.
  • 2. Cream together butter and sugar.
  • 3. Add eggs and applesauce. Mix, using an electric mixer, until well blended.
  • 4. Add flour, milk, baking soda, vanilla, and cinnamon. Blend thoroughly, but do not over-mix.
  • 5. Fold in diced apple.
  • 6. Pour batter into two greased and floured loaf pans (8 1/2 " X 4 1/2" X 2")7.
  • 7. Bake for 45 minutes.
  • 8. Remove baked loaves from pans to cool. .
