1 cup brown sugar
1 tablespoon dry mustard
3/4 cup water
2 1/2 tablespoons vinegar
8 ounces crushed pineapple

Steps:

  • Combine all ingredients& heat to boiling, then pour over loaf (or balls) and continue baking as directed.

Mom used to make this when we had leftover bits of ham from Thanksgiving or Christmas. It doesn't take a huge amount of ham, and of course, it doesn't have to look perfect because it is getting ground up anyway. It is yummy with any of the glaze variations, just bacon or catsup. One of my favorite ham recipes.

FOR HAMLOAF: SEE NOTES IN STEP 4 FOR HAMLOAF VARIATIONS
1 1/2 lb ground ham
3/4 lb hamburger
3/4 lb ground pork
3 eggs
2 tsp dry mustard or 2 tbsp of prepared honey mustard
5 c cornflakes, (measure, then crush cornflakes)
2 to 2 1/4 c milk
pepper to taste
FOR BROWN SUGAR PINEAPPLE GLAZE: MIX INGREDIENTS TOGETHER, POUR OVER HAMLOAF AND BAKE
1 1/2 c brown sugar
1 tsp dry mustard
1 can(s) crushed pineapple (16 or 20 oz size) undrained
FOR CRANBERRY SAUCE AND ORANGE GLAZE: COOK INGREDIENTS TOGETHER UNTIL THICKENED AND POUR OVER LOAVES DURING LAST 10-15 MINUTES OF BAKING
1 can(s) whole berry cranberry sauce
2 Tbsp red wine or port
1/2 c brown sugar (or to taste)
2 oz orange juice concentrate (undiluted)
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1 1/2 Tbsp cornstarch, mixed into 3 tbsp. cold water
FOR CRANBERRY JUICE AND RAISIN GLAZE: MIX CORNSTARCH INTO JUICES ADD REMAINING INGREDIENTS AND COOK UNTIL THICKENED. POUR OVER LOAVES DURING LAST 10 - 15 MINUTES OF BAKING.
1/2 c orange juice (not concentrated)
1/2 c cranberry juice
2 Tbsp cornstarch
1/2 c brown sugar, firmly packed
3/4 c raisins
1 to 2 dash(es) ground cloves
1 to 2 pinch salt

Steps:

  • 1. Preheat oven to 350° F. In a large mixing bowl place all hamloaf ingredients and mix thoroughly with large spoon or clean hands.
  • 2. Shape into loaves (you can either use 2 loaf pans or shape two loaves side by side in a 2" deep 10x12" baking pan)
  • 3. Bake at 350° for 1 1/4 to 1 1/2 hours or until internal temperature is 160° Use whichever glaze you like, following the directions with the glaze.
  • 4. This is a very versatile recipe, You can use half ham and half ground pork and leave out the hamburger, or you can add finely chopped onion and/or green pepper to the meat mixture before baking. Also, you may substitute 1 1/2 to 2 cups of fresh bread crumbs for the cornflakes but remember to reduce the milk amount to approx 1 1/2c. You may also omit the glaze and place strips of bacon over the top of the loaves before baking or use catsup or barbecue sauce over the top during the last half hour of baking.

Number Of Ingredients 12

2 pound(s) 1 lb smoked ham & 1 lb fresh ham ground together
1 can(s) pineapple juice (6 fl oz)
2 - eggs
1 tablespoon(s) ground mustard
2 cup(s) cracker crumbs
1 - small onion chopped
Dash - pepper
GLAZE
1 cup(s) brown sugar
1 tablespoon(s) ground mustard
1/4 cup(s) white vinegar
1/4 cup(s) water

Steps:

  • Mix all together in bowl and form into 2 loaves (if not baking both, freeze them - allow to thaw completely before baking).
  • Bake at 350 degrees for 1 1/2 hours. Place foil over loaf loosely while baking.
  • GLAZE: 1. Mix in sauce pan and bring to a boil. 2. Pour half over top of loaf when you start to bake. 3. Pour 2nd half over loaf 20 minutes later. 4. Continue to spoon over loaf while baking every 15 minutes.
  • This recipe can be varied by making into individual loaves as well.
