Spice Mix, optional, recipe follows
1 tablespoon vegetable oil
4 slices cheese, such as Cheddar, American, Saga blue cheese, and Swiss, optional
4 soft hamburger-style buns, split
4 slices beefsteak tomatoes, optional
Assorted lettuces and greens, such as iceberg, romaine, or watercress
Assorted mustards, such as whole-grained, Dijon, or French's, optional
Mayonnaise, optional
Ketchup, optional
1 tablespoon Worcestershire sauce
2 teaspoons garlic powder
2 teaspoons onion powder
Hot Sauce, to taste

Steps:

  • Preheat the oven to 450 degrees F. Place a roasting rack on a foil-lined baking sheet in the oven.
  • Using your hands, break the meat into small pieces and combine evenly but loosely on a parchment or waxed paper-lined baking sheet. Spread the meat out and season it generously with salt and pepper. If desired, add the spice mix at this time.
  • Divide the meat into 4 portions (about 6 ounces each). Using your hands, form each portion into a ball-shape by gently tossing it from 1 hand to the other. (Don't over work or press too firmly on the meat.) Gently form each portion into a patty about 3 1/2 inches wide and 1-inch-thick.
  • Preheat a large cast iron skillet over medium-low heat for 5 minutes. Raise the heat to high and add the oil. Add the patties and cook, turning once, until well-browned, about 2 minutes each side.
  • Using a spatula, transfer the hamburgers to the roasting rack in the oven and continue cooking to desired doneness, 8 to 9 minutes for medium-rare, 10 to 11 minutes for medium, and 13 to 15 minutes for well-done. If you are using the cheese, top the hamburgers during their last couple of minutes of cooking to melt.
  • Transfer the hamburgers to a plate, let rest for a couple minutes before serving. Meanwhile, toast the hamburger buns. Assemble the hamburgers with the condiments and toppings of your choice. Serve.
  • When cooking on a countertop grill, turn on grill, then place burgers on the heated grill.
  • Timing for a countertop grill:
  • For Medium-Rare: Cook for 3 minutes covered and then unplug the machine and continue to cook covered for 2 to 3 more minutes.
  • For Medium: Cook for 4 minutes covered and then unplug the machine and continue to cook covered for 4 more minutes.
  • For Well: Cook for 5 minutes covered and then unplug the machine and continue to cook covered for 5 more minutes.
  • Combine all ingredients.

1/2 teaspoon dried onion flakes
2 teaspoons boiling water
1/8 lb ground beef (I have used extremely lean ground beef for this, like 5% fat kind)
1 plain hamburger bun (I use Hot Dog/Hamburger Buns/Rolls/Cinnamon Buns Dough Cycle A.b.m.)
salt, to taste
1 tablespoon ketchup
1/2 teaspoon prepared mustard (American yellow)
1 dill pickle, slice (sour kind, not sweet)
1 slice American cheese (I have used those plastic cover cheese singles with good success if other American Cheese is unavail)

Steps:

  • Mix the dried onion with the boiling water and let sit until re hydrated and no longer dry & crunchy.
  • Roll ground beef into a ball and press flat on waxed paper until about 1/8 inch thick.
  • Brown faces of bun in a dry frying pan over medium heat. Remove bun and cook burger in the same pan for 2 min per side, salting each side lightly during cooking.
  • On the top bun-half spread the ketchup, mustard, and onion, in the order, and top with the pickle slice.
  • put the beef patty on the bottom bun and quickly slap the top and bottom together. Microwave the burger on high for 10-15 seconds. FOR CHEESEBURGERS: follow the above recipe, but add a slice of American cheese on top of the beef patty in the final assembly. Microwave for 15 seconds on high to help steam the bun and simulate being wrapped in paper.

HAMBURGERS (DINER STYLE)

This is the traditional, griddled hamburger of diners and takeaway spots, smashed thin and cooked crisp on its edges. It is best to cook in a heavy, cast-iron skillet slicked with oil or fat, and not on a grill. For meat, ask a butcher for coarse-ground chuck steak, with at least a 20 percent fat content, or grind your own. Keep it in the refrigerator until you are ready to cook, and try not to handle it with your fingers - use an ice-cream scoop or spoon instead. Plop down a few ounces in the pan, smash it with a spatula, salt it, let it go crisp and flip. Add cheese and get your bun toasted. The process moves quickly.

1/2 teaspoon neutral oil, like canola, or a pat of unsalted butter
2 pounds ground chuck, at least 20 percent fat
Kosher salt and black pepper to taste

8 soft hamburger buns, lightly toasted
Lettuce leaves, sliced tomatoes and condiments, as desired

Steps:

  • Add oil or butter to a large cast-iron or stainless-steel skillet and place over medium heat. Gently divide ground beef into 8 small piles of around 4 ounces each, and even more gently gather them together into orbs that are about 2 inches in height. Do not form patties.
  • Increase heat under skillet to high. Put half the orbs into the skillet with plenty of distance between them and, using a stiff metal spatula, press down on each one to form a burger that is around 4 inches in diameter and about 1/2 inch thick. Season with salt and pepper.
  • Cook without moving until patties have achieved a deep, burnished crust, a little less than 2 minutes. Use the spatula to scrape free and carefully turn burgers over. If using cheese, lay slices on meat.
  • Continue to cook until meat is cooked through, approximately a minute or so longer. Remove burgers from skillet, place on buns and top as desired. Repeat process with remaining burgers. Serving two hamburgers on a single bun is not an outrageous option.

  • Place ground beef,onion powder, salt and 1/2 cup of the water in a food process, and process for a few seconds to ensure that water,onion powder and salt are blended through the beef.
  • Place plastic wrap on the counter. Place hamburger in the middle, then place another pieces of plastic wrap on top of the meat.
  • Roll the hamburger out to 1/4-inch thick. Remove plastic wrap cut meat into 3-inch squares. Poke holes in each piece five times with a plastic straw.
  • Cover hamburger squares with plastic wrap. Freeze until partially frozen, but not frozen solid.
  • Place onions, beef bouillon and 1/2 cup water in a frying pan. Sauté over medium-low heat, stirring until the onions are soft, and adding more water as needed.
  • Remove from heat until ready to cook hamburger patties.
  • To prepare patties, heat frying pan over medium-low heat, add water to onions just until the bottom of the frying pan is covered.
  • Place patties in pan; cover with lid. It will only take a short time for the patties to cook on one side. Turn, and cook on the other side for a very short time. The patties should be juicy.
  • When done place each hamburger on top of a roll. Add pickles, then cover hamburgers so they heat up the roll.

This is an absolutely wonderful grilled Italian hamburger. You may add a little garlic powder also, and top with a thin slice of Mozzarella cheese as well. I do suggest you make the full recipe as leftovers never last more than two days at my house. These are wonderful with a big slice of very sweet onion and catsup. Some people like to add a slice of Mozzarella cheese before popping them in the foil and before heating again.

1 pound lean ground beef
½ teaspoon Worcestershire sauce
1 teaspoon dried parsley
salt and pepper to taste
1 cup crumbled feta cheese

Steps:

  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Knead together the ground beef, Worcestershire sauce, parsley, salt, and pepper in a bowl. Form the mixture into 8 equal-sized balls; flatten to make thin patties. Place about 1/4 cup of feta cheese onto each of four of the patties. Top each of the patties with cheese with one of the patties without; press the edges together to seal the cheese into the center.
  • Cook on the preheated grill until the burgers are cooked to your desired degree of doneness, 7 to 8 minutes per side for well done. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

1/2 cup chopped onion
1 tablespoon butter
1 egg, lightly beaten
1/4 teaspoon seasoned salt
1/4 teaspoon ground sage
1/4 teaspoon salt
1/8 teaspoon pepper
1 pound lean ground beef (90% lean) or ground beef
40 mini buns, split
8 ounces process American cheese slices, cut into 1-1/2-inch squares, optional
40 dill pickle slices, optional

Steps:

  • In a large skillet, saute onion in butter. Transfer to large bowl; add egg and seasonings. Crumble beef over mixture and mix well. Spread over bottom halves of the buns; replace tops. Place on baking sheets; cover with foil. , Bake at 350° for 20 minutes or until meat is no longer pink. If desired, place a cheese square and pickle on each hamburger; replace tops and foil and return to the oven for 5 minutes.

2 cups seeded and chopped jalapeno pepper
2 (8 ounce) packages cream cheese, softened
2 pounds ground beef
8 hamburger buns, split

Steps:

  • Preheat a grill for medium heat. When hot, lightly oil the grate. In a medium bowl, stir together the jalapenos and cream cheese.
  • Divide the ground beef into 16 portions and pat out each one to 1/4 inch thickness. Spoon some of the cream cheese mixture onto the center of 8 of the patties. Top with the remaining patties, pressing the edges together to seal.
  • Grill for about 10 minutes per side, or until well done, taking care not to press down on the burgers as they cook. This will make the cheese ooze out. Serve on buns with your favorite toppings.

This is as close as I think you could ever get to the real thing. I found it in a posting on a newsgroup about a year ago, a former Mc D's employee I think.

1 lb ground chuck (80% lean)
10 small hamburger buns
10 slices dill pickles
10 teaspoons dried onion flakes
mustard
ketchup
4 tablespoons salt
2 tablespoons Accent seasoning (MSG)
1 teaspoon ground black pepper
1/4 teaspoon onion powder
1/4 cup Miracle Whip
1/4 cup mayonnaise
2 tablespoons Wishbone Deluxe french salad dressing (the orange stuff)
1/2 tablespoon Heinz® sweet relish
2 teaspoons Vlasic dill pickle relish (Heinz dill relish also works)
1 teaspoon sugar
1 teaspoon dried onion flakes
1 teaspoon white vinegar
1 teaspoon ketchup
1/8 teaspoon salt

Steps:

  • ----------Burger Seasoning-----------.
  • Mix all ingredients well in a spice shaker with big enough holes to allow pepper to flow.
  • Makes about 3 ounces.
  • Use on ALL McDonald's hamburgers.
  • (Unless you're allergic to MSG, then just use salt and pepper.).
  • ---------The Beef Patties:-------------.
  • Divide 1 lb of beef into 10 equal sized balls.
  • Form a patty out of each ball about 4 inches in diameter and 1/4 inch thick.
  • Do this on waxed paper.
  • Now freeze the patties for at least an hour. (This keeps them from falling apart when you grill'em) Obviously you'll do this in advance of "burger time".
  • It is pretty tough to make patties this small, so if you come up with 9 patties, I'll forgive you.
  • ----------For PERFECT McDonald's® Hamburger Patties------------.
  • Forming your regular hamburger patties.
  • Cut waxed paper into twelve sheets, about 6"x6" square.
  • Divide the ground chuck into six equal pieces, and form each into a ball.
  • Press the meatballs into a 1/4" thick circular patty. It will be about 6" in diameter. Make sure the thickness is uniform. It doesn't have to be perfectly round.
  • Take the tumbler, turn it upside down, and use it like a cookie cutter on the pressed out meat.
  • Scrape away the beef that's on the outside of the rim, and retain.
  • Remove the tumbler, leaving the perfectly round patty on the waxed paper. (Clear away any excess from the edge)
  • Place the now finished meat patty on a flat surface that will fit in the freezer. (Like a cutting board or a cookie sheet, and you'll need at least two) Repeat the procedure with all of the beef.
  • Eventually the beef from around the edges will pile up enough to form additional patties as well.
  • You should come out with ten perfectly round, perfectly thick regular patties. (You may end up with nine, or maybe eleven. Weight variables occur. It is no big deal as long as the patties are all uniform in size.)
  • Place the formed beef patties in the freezer and freeze at least an hour.
  • DO NOT STACK THEM!
  • Put them in as if they were cookies being placed in an oven. Why? Because they'll stick together if you stack them.
  • After an hour, take them out, and NOW you can STACK them.
  • Put them in a zip-lock type freezer bag, and keep frozen until needed.
  • You can do more than one pound (ten burgers, five Big Macs® worth) at a time.
  • In fact, do as many as you want, provided you have room in your freezer for the initial freezing.
  • NOTE:Keep the beef patties on the waxed paper when you put them in the storage bag because they will stick together when your freezer defrosts if you don't.
  • ----------The Onions-----------.
  • Put the dried onions in a container, like Tupperware, and add water.
  • Water should be a few inches over the top of the onions (better to have too much water than not enough).
  • Cover, and refrigerate about 1/2 hour.
  • Drain the liquid, and you have McDonald's little baby onions.
  • Cover again and refrigerate until "burger time".
  • --------The Pickles----------.
  • McDonald's® pickle slices are unique in flavor, very sour dills. The only product I know of that comes close to the distinctive flavor is HEINZ Genuine Dills. (Original sour dill.) But they don't come in slices, so slice your own VERY thin. I can't do it very well with a knife, so I use a K-Tel"dial-a-slice" home vegetable slicer.
  • ALSO Classic "original" dills have that tart flavor.
  • Make sure they're not "kosher" dills.
  • Wal-Mart® carries Classic ORIGINAL dills, and you have to slice those too (****Note,these pickles are pretty small, so slice at an angle, you'll get bigger dill chips).
  • USE THESE PICKLES ON ALL McDonalds® HAMBURGERS!
  • -----------The Buns-------------.
  • Use the small, plain cheapo store brand hamburger buns.
  • When it's "burger time", you'll be toasting the buns.
  • Those instructions are coming up.
  • ----------Special Sauce-------------.
  • Mix everything very well in a small container.
  • There better be no streaks!
  • Microwave 25 seconds, and stir well again.
  • Cover, and refrigerate at LEAST 1 hour before using (to allow all of the flavors to"meld").
  • Makes nearly 1 cup, enough for about 8 Big Macs.

BLUE CHEESE HAMBURGERS

1 1/2 pounds ground chuck beef
2 tablespoons minced garlic
2 eggs, beaten
Salt and freshly ground black pepper
6 ounces crumbled blue cheese
6 ounces unsalted cold butter, cut into small cubes, divided
1/4 cup canola oil, for frying
6 large potato rolls, or rolls of choice
Iceberg lettuce
2 tomatoes, sliced
1 red onion, sliced into rings
Mustard, ketchup and mayonnaise, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large mixing bowl combine the beef, garlic, beaten eggs, and salt and pepper, to taste.
  • Divide the meat mixture into 6 round even patties. Press 1-ounce of blue cheese and 1-ounce of the cold butter into the center of the formed patty. Remold the patty so that all the cheese and butter are hidden inside the center. Continue until all the beef patties have been formed. Refrigerate for 10 to 15 minutes.
  • Pour the oil into a large skillet over medium-high. When the oil is smoking, add the beef patties and cook on both sides until golden brown. Remove to a sheet pan and roast in the preheated oven until desired doneness is reached, about 6 minutes. Cook's Note: They can be also cooked on a charcoal grill.
  • Warm the buns slightly, then put the burgers on the buns and top each with lettuce, tomato and an onion ring. Enjoy. You can, if you wish, use mayonnaise, ketchup or mustard to enhance this dish.
