HAMBURGER STEAKS WITH ONION AND MUSHROOM GRAVY
This recipe is an update of the classic Salisbury steak. With additions like smoked paprika in the beef mix and lightly caramelized onions in the gravy, this version will be a new family favorite to enjoy with a side of mashed potatoes.

- For the hamburger steaks: Whisk together the mustard, smoked paprika, egg, garlic, 1 teaspoon salt and 1/4 teaspoon pepper in a medium mixing bowl. Mix in the ground beef and breadcrumbs by hand, then form into 4 oval patties, about 1/2 inch thick.
- Set a large nonstick pan over medium-high heat and add the oil. Add the patties and brown on both sides, about 3 minutes per side. Transfer the patties to a plate; set aside.
- For the onion and mushroom gravy: Turn the heat down to medium and add the mushrooms and thyme. Cook until the mushrooms release their liquid and are browned, about 8 minutes. (The mushrooms might seem dry at first, but will eventually release liquid and add moisture to the pan.) Transfer the mushrooms to a plate; set aside.
- Melt the butter in the pan, add the onions and garlic and cook until translucent and lightly golden, about 10 minutes. Sprinkle in the flour and cook, stirring, until the butter and liquid are absorbed, about 1 minute. Pour the broth and Worcestershire into the pan and stir until the flour is dissolved.
- Turn the heat to high and bring to a boil. Stir the mushrooms back into the pan and nestle in the beef patties. Cover with a lid and reduce the heat to medium low. Let simmer until the sauce has thickened and a thermometer inserted into the patties registers 165 degrees F, about 10 minutes.
- Turn the patties over a few times to coat in the sauce. Season with salt and pepper and top with the parsley.

- Combine ground beef, bread crumbs, egg, seasoned salt, Worcestershire sauce, and garlic in a large bowl. Use your hands to lightly mix and combine the ingredients. Form into 4 equally sized patties and set aside.
- Heat olive oil in a 12-inch nonstick skillet over medium-high heat until shimmering. Add mushrooms, onion, and bell peppers. Season with salt and pepper. Stir the vegetables quickly, moving around in the skillet until the onion is just beginning to soften, 4 to 5 minutes. Remove the vegetables from the skillet and keep warm.
- Place beef patties in the same skillet and cook until browned, about 3 minutes per side. Add the vegetables on top of and around the patties. Pour in beef broth. Reduce heat to medium and cook until patties reach an internal temperature of 160 degrees F (71 degrees C) when tested with an instant-read thermometer, 4 to 5 minutes more.
- Transfer the patties to serving plates and top with the vegetables. Allow liquid in the skillet to boil and reduce to about 1/2 cup. Drizzle 2 tablespoons of the skillet sauce over each serving. Serve warm.

- In a large bowl mix together beef, egg, bread crumbs, 1 package soup mix, and Worcestershire sauce. Form into 8 balls and flatten into patties.
- Mix flour salt and pepper.
- Dredge patties in flour mixture.
- Heat large skillet over med-high heat. Fry the patties 4 minutes each side, then remove patties to a platter.
- Heat oil and sauté onions until translucent, about 10 minutes.
- Add the rest of the flour mixture to onions and stir to coat.
- Mix broth and last package of onion soup and add to the onions. Stir well.
- Return the patties to the pan, cover and reduce heat to low.
- Simmer 15-20 minutes until beef is cooked through. Stir occasionally to make sure gravy is not sticking to bottom of the pan or clumping.

- 1. In a large bowl, mix together ground beef, egg, bread crumbs, pepper, salt, onion powder, garlic powder, and Worcestershire sauce. Form into 5 balls, and flatten into patties.
- 2. Heat oil in a large skillet over medium heat. Fry the patties and onion in the oil until patties are nicely browned, about 4 minutes per side. Remove patties to a plate, and keep warm.
- 3. Saute onion and mushrooms in hamburger skillet until onions are transparent. Sprinkle flour over the mushroom-onion mixture. Stir in with a fork. Gradually mix in beef broth and sherry. Season with seasoned salt. Simmer and stir over medium-low heat, scrapping the bottom, until gravy thickens. Turn heat to low, return patties to the gravy, cover and simmer for another 10 minutes.

- 1. In a large bowl, crumble meat - to this add soup mix, salts, pepper, egg, crumbs, milk, A-1 steak sauce, worcestershire sauce and mix just until combined. Make into desired size patties.
- 2. Preheat oven to 375 degree F. Grease a 9 x 13 baking dish. In a large skillet, over med high heat add oil and 3 tablespoons butter. Once butter has melted into the oil, carefully add your burgers. Cook until browned well on each side.
- 3. Place evenly into prepared dish.
- 4. In the same skillet with juices, saute the mushrooms until starting to brown, add the garlic nowcand cook another minute or two.
- 5. Spoon mushrooms over the burgers evenly.
- 6. Melt 1 tablespoon butter in same skillet and cook onions until golden. Spoon over the mushrooms. Preheat oven to 375 degree F.
- 7. In a med bowl, whisk together broth, kitchen bouquet, worcestershire sauce and buillion. To the same skillet, melt 2 tablespoons butter and to this whisk in the flour, stirring constantly for at least 1 minute. To this slowly whisk in the broth mixture, making sure to smooth out any lumps. Stir in sherry if using. Cook until becomes a gravy thickness. Doesn't take but a minute.
- 8. Pour this evenly over the steaks. Cover tightly with foil and bake for 40 - 45 minutes. Should be good and bubbly.
- 9. Remove foil and serve while good and hot, along side of whipped potatoes or noodles. The rich, tasty gravy would be great with either. Enjoy!
CHEESY HAMBURGER STEAKS
This recipe was shared with me by a nurse friend named Rene. She said that she got it from a restuarant in south Louisiana.

- 1. Mix all ingredients for the patties (except cheese) in a large bowl. Use your hands. It is messy, but the easiest way to do it.
- 2. Once you have mixed the beef ingredients thoroughly, form four large, flat patties.
- 3. Cook patties to your liking in a large nonstick skillet over medium heat. I don't cook them all the way done. They finish cooking in the oven.
- 4. Remove patties from skillet. Place them in a 9x13-inch casserole dish. Place cheese slices over the patties right after you remove them from the heat.
- 5. For the gravy: In the skillet that you cooked the ground beef in, add the oil. Heat oil over medium heat.
- 6. Add the onion and garlic. Saute for about 10 minutes until the onions are tender. Add the mushrooms and saute for a few minutes until tender.
- 7. Add the mushroom soup and mix well.
- 8. Add the beef broth and water and stir until all ingredients are combined.
- 9. Let the gravy simmer over medium heat for about 15 minutes.
- 10. Add the cayenne and remove from heat.
- 11. Pour the gravy over the hamburger patties. Cover with foil. Place in a preheated 300 degree oven. Bake for 30 minutes.
EASY SAUCEY HAMBURGER STEAKS
One of my husband's favorite dishes. Absolutely a must for all meat and potato loving men. Also, it is satisfying and inexpensive to prepare.

- 1. Combine ground beef, garlic powder, onion powder and black pepper in large bowl. Form into six patties. In a large skillet, at medium heat, brown the patties on both sides.
- 2. Remove the patties from skillet and drain off the remaining fat. Add the butter to the skillet and when melted; add the sliced onions and saute at medium heat until softened and browned slightly.
- 3. Stir in the can of cream of mushroom soup, water, milk, beef bouillon granules and worcestershire sauce. Add a dash of pepper if desired. Return beef patties to skillet and spoon the sauce over each. On low heat, covered; simmer for about 20 to 30 minutes.
- 4. Serve over mashed potatoes, rice or noodles of your choice.

- In a mixing bowl, mix together the meat, black pepper, and garlic salt. Divide mixture into 6 even-sized balls of meat then flatten into patties about 1/2-inch thick. In a large skillet, cook patties over medium/medium-high heat until done, 4-5 minutes per side. Remove patties from skillet; keep warm. Reduce heat to medium; add the onions to the skillet and a teaspoon of oil if needed to saute. Sprinkle lightly with a little salt and pepper. Saute onions until lightly browned and tender, but not mushy. Remove onions from skillet; keep warm. Add flour to skillet and a teaspoon of oil if needed to blend. Whisk and cook for 1 minute. Add the Worcestershire sauce and about 1 cup of the broth, whisking vigorously to blend until smooth. (You may need to remove it from heat to do this.) Add remaining broth and cook for about 10 minutes or until reduced by half and thickened, whisking frequently. Return steaks to the skillet; spoon the gravy over the meat.
