1 pound ground beef
1 egg
¼ cup bread crumbs
⅛ teaspoon ground black pepper
½ teaspoon seasoned salt
½ teaspoon onion powder
½ teaspoon garlic powder
1 teaspoon Worcestershire sauce
1 tablespoon vegetable oil
1 cup thinly sliced onion
2 tablespoons all-purpose flour
1 cup beef broth
1 tablespoon cooking sherry
½ teaspoon seasoned salt

Steps:

  • In a large bowl, mix together the ground beef, egg, bread crumbs, pepper, salt, onion powder, garlic powder, and Worcestershire sauce. Form into 8 balls, and flatten into patties.
  • Heat the oil in a large skillet over medium heat. Fry the patties and onion in the oil until patties are nicely browned, about 4 minutes per side. Remove the beef patties to a plate, and keep warm.
  • Sprinkle flour over the onions and drippings in the skillet. Stir in flour with a fork, scraping bits of beef off of the bottom as you stir. Gradually mix in the beef broth and sherry. Season with seasoned salt. Simmer and stir over medium-low heat for about 5 minutes, until the gravy thickens. Turn heat to low, return patties to the gravy, cover, and simmer for another 15 minutes.

3 tablespoons Worcestershire sauce
1 tablespoon fresh parsley, minced
2 garlic cloves, minced
3/4 teaspoon salt
1/2 teaspoon ground black pepper
1 (8 ounce) package fresh mushrooms, sliced
1 large onion, thinly sliced
1 (10 1/2 ounce) can beef consomme
1 cup beef broth
1 (1 5/8 ounce) package brown gravy mix
hot cooked egg noodles (optional)
chopped fresh parsley (optional)

Steps:

  • In large bowl, combine ground beef, worcestershire, parsley, garlic, salt and pepper; shape mixture into 5 (1/2-inch thick) patties.
  • Heat a large skillet over medium-high heat.
  • Add beef patties, and cooke for 4-5 minutes per side or until browned.
  • Remove patties from skillet, and set aside.
  • Drain skillet, reserving 1 T skillet drippings.
  • In the same skillet, heat reserved drippings over medium high heat.
  • Add mushrooms and onion, and cook, stirring frequently, for 5-6 minutes, or until tender.
  • Return beef patties to skillet.
  • In small bowl, combine consomme, broth, and gravy mix; add to skillet.
  • Bring to a boil over medium-high heat.
  • Reduce heat, and simmer for 15 minutes, or until beef patties are cooked through and sauce is thickened.
  • Serve immediately over hot cooked egg noodles, if desired.
  • Garnish with fresh parsley, if desired.

2 eggs
2 tablespoons minced onion
1 tablespoon beef base
½ teaspoon black pepper
3 slices white bread
2 pounds lean ground beef
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can water
1 dash Worcestershire sauce

Steps:

  • Whisk together the eggs, onion, beef base, and pepper in a bowl. Tear the bread into large pieces, and place into the bowl. Let the bread soak for a few seconds and add the ground beef. Mix the meat into the egg-bread mixture, and form into 8 patties.
  • Heat a large heavy skillet over medium-high heat, and fry the patties until they are browned and the meat is no longer pink in the center, about 8 minutes per side. Set the patties aside.
  • Remove the excess grease from the skillet, and whisk the mushroom soup, water, and Worcestershire sauce together in the skillet until smooth. Place the patties back into the skillet, spoon sauce over them to cover, and bring to a boil over medium-high heat. Reduce the heat to a simmer, and cook until the sauce is thickened and the flavors have blended, about 20 minutes.

This recipe may already be used by many, so easy I almost didn't post. But, you just never know who may have never thought of it...delicious with fried onions and mushrooms too! Enjoy!

1 lb ground beef or chuck
1/2 pkg lipton beefy onion soup mix for 1 pound burger - whole package for 2 pounds or to taste
1/4 onion - grated
salt & pepper to taste

Steps:

  • 1. Place beef in bowl- stir in soup mix and grated onion. Shape into oval patties. However many you're making. I usually make 2 - 3 for the men of my house. They start out pretty big, but as you know they shrink when cooking. I turn my grill to high. I coat both sides of meat with olive oil. Salt & pepper. Place on hot grill. I don't touch for 3 - 4 minutes. Turn to other side and cook another 3 - 4 min or until juices run clear. They should be very juicy as you shouldn't press down on then anytime during grilling. These could be broiled as well. Enjoy! So easy, yet satisfying.

If I'm just cooking for me, I skip the gravy (they're very juicy without) and increase the onions because I like extra with every bite! Add the gravy to turn it into a wonderful smothered "steak". I found the recipe during a web search and tweaked it. Listed cooking time is for the steaks, onions and gravy.

1 lb ground chuck
1 egg, lightly beaten
1/4 cup plain breadcrumbs
1/8 teaspoon ground black pepper
1/2 teaspoon seasoning salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 teaspoon Worcestershire sauce, plus an extra dash
1 cup halved thinly sliced onion
1 tablespoon oil
2 tablespoons self-rising flour
1 cup beef broth
1 tablespoon dry sherry (don't use cooking sherry)
salt and pepper, to taste

Steps:

  • Mix together the ground beef, egg, bread crumbs, pepper, seasoned salt, onion powder, garlic powder and Worcestershire sauce. Form into 4 patties, or as many as you want, depending on how large you want your "steaks".
  • Heat the oil in a large skillet over medium heat. Fry the patties and onions in the oil until patties are nicely browned, about 4 minutes per side, or until done if not making gravy. Remove the patties to paper towels.
  • If NOT MAKING GRAVY, continue cooking the onions until they turn golden brown and caramelize. Remove onions and serve atop hamburger "steaks". Stop here!
  • If MAKING GRAVY, sprinkle flour over the onions and drippings in the skillet. Stir, scraping up brown bits off the bottom as you go. Gradually add the beef broth and sherry.
  • Bring to a boil, then simmer and stir over medium-low heat about 5 minutes, or until gravy thickens. Taste and adjust seasonings with salt and pepper as needed.
  • Reduce heat to low, return patties to the gravy, cover and simmer 15 minutes or until cooked through.

Steps:

I got this recipe, years ago, when visiting out in California. It is good for family and/or company (even plain meat and potatoes people like this one!). I am posting it as it was written, but I always double the sauce ingredients.

1 1/2 lbs ground chuck
1 1/2-2 tablespoons peppercorns, crushed
2 tablespoons butter
1 tablespoon shallot, finely chopped
1/4 cup red wine
1 tablespoon cognac
1/4 cup beef broth
2 tablespoons parsley, finely chopped

Steps:

  • Shape meat into patties of equal size.
  • Sprinkle with salt.
  • Sprinkle all over with the crushed peppercorns and press down on meat to help peppercorns adhere.
  • Heat a heavy skillet and do not add fat of any kind.
  • When skillet is quite hot add the patties.
  • Cook about 5 minute on one side.
  • Using a spatula, quickly up patties and turn.
  • Cook about 5 minute longer (10 minute for well-done).
  • Remove patties to a warm platter.
  • Add 1 tablespoon of the butter to the skillet.
  • Add shallots to the skillet and cook, stirring with a wooden spoon until shallots are wilted.
  • Add the wine and cook 1 minute.
  • Add the cognac and let reduce to about half.
  • Add the beef broth and cook until reduced to about 3 tablespoons.
  • Swirl in the remaining butter.
  • Return patties to skillet (off the heat) and turn once.
  • Serve garnished with the parsley.

3/4 c chopped onion
1 egg
1 Tbsp salt and pepper
1/3 c of all purpose flour, for dipping the patties in
1/4 c vegetable oil
1 large onion
1 c beef broth
1 c water
1/4 tsp of seasoned salt
1/4 c of all purpose flour, for the gravy
2 c sliced mushrooms, optional
1 tsp garlic powder

Steps:

  • 1. Heat the oil over medium high in a large heavy-bottomed stainless skillet.
  • 2. In a medium sized bowl, combine the ground chuck, chopped onion, egg, seasoned salt, garlic powder and pepper.
  • 3. Shape into 4 to 6 equal sized patties. Dip each patty into the flour and cook until browned on both sides; remove and set those aside.
  • 4. Add the sliced onions to the skillet and cook over medium heat until lightly caramelized, stirring regularly. Add Mushrooms if so desired. Whisk together the beef broth and water with 1/4 cup of flour, 1/2 teaspoon of seasoned salt and pepper to taste until well combined. Pour into the skillet with the onions and stir constantly, until mixture begins to thicken.
  • 5. Return the hamburger steaks to the skillet, turn to coat, add sliced mushrooms if using, and reduce heat to simmer. Cook, covered, for about 20 minutes longer. Serve with mashed potatoes and some green beans, or a mixed garden salad on the side.
  • 6. Cook's Notes: The brown gravy for these is pretty good all on its own since its reliant on the pan drippings, but if you have it, just a splash of Kitchen Bouquet adds a bit more depth and is delicious. If you find that you need a binder, add in some fresh bread crumbs to the ground beef. If using pre-made hamburger steak patties, omit the onion, egg and hot sauce, and sprinkle both sides of the patties with the seasoned salt, garlic powder and pepper, pressing in the seasoning a bit. Then dip each patty in the flour and proceed with the remaining recipe.

3 lbs fresh ground beef
1 lb fresh fresh cajun sausage (or your choice, not smoked sausage)
4 -6 slices bacon, chopped
2 lightly beaten eggs
1 medium onion, minced
1/2 bell pepper, minced
1/2 cup minced green onion
1 tablespoon minced garlic (2 cloves)
1 teaspoon creole seasoning
1 teaspoon black pepper
1/2 teaspoon salt
cayenne, if you want to spice it up
1 teaspoon your favorite dry steak seasoning
5 dashes Worcestershire sauce
5 dashes liquid smoke
5 dashes soy sauce
1/4 cup water

Steps:

  • Sauté onions and bell pepper until wilted.
  • Add green onions and saute a few more minutes.
  • Add this to the meat mixture along with other seasonings and mix well.
  • Form the steaks, and broil on each side until brown.
  • Move the pan to the oven and add about 1/2 cup of water to the pan and cover with foil.
  • Continue to cook at 350 degrees for about 15 minutes then use a meat thermometer to check internal temperature; it should be: no less than 160°F (medium) and 170°F (well done).
  • Add more water if needed and brush a little water over the steaks.
  • Continue to cook until desired temperature is achieved.
  • Lower fire to 250°F, check and add water if needed and cook for another 5 minutes.
  • Remove from oven, brush with water, and/or sauce and leave covered for about 10 minutes.
  • On the side sauté some onions, bell pepper and mushrooms.
  • Add seasoning and a little instant roux to make a sauce.
  • You can also make a roasted pepper sauce.
  • Pour sauce and some veggies on top of the steak, or just put them on the side.

2 scallions, chopped (green onions)

  • Combine egg, ground beef and soup mix. Shape into 4 patties. Brown patties, add white parts of onions to saute with patties.
  • When the onions are softened, add the gravy and green onion tops. Cover and simmer for 15 minutes.
  • Serve with Garlic Mashed Potatoes with Spinach and Sweet Peas.

1/4 cup flour
1/4 teaspoon garlic powder

1 medium sliced onion
gravy

2 boneless beef cubes

Steps:

  • Mix hamburger, 1/4 cup flour, garlic powder, salt and pepper. Form into 4 square patties and brown. Add onions to pan and Saute. Remove patties and onions from pan. Mix 1/4 cup flour and water in pan. Add beef cubes stir and heat until thickened. Add salt, pepper and a little browning sauce if desired. Add patties and onions back to pan and simmer for 30-45 minutes.
  • Serve with potatoes, noodles, or rice. If sauce is to thick or boils down add a little more water as it simmers.

1 Tbsp Worcestershire sauce
1 Tbsp A1 sauce
1 can(s) beef consomme (10.5 oz)
1/2 c diced onion
1/2 onion, cut into thin rings
1 tsp salt
1 tsp pepper
1 can(s) beef gravy (14.5 oz), reserve one tablespoon
8 slice Sara Lee classic french bread
3 Tbsp olive oil
1 1/2 Tbsp self-rising flour
1 small can diced mushrooms

Steps:

  • 1. In a large bowl add the beef, A1 sauce, worcestershire, the reserved beef gravy, diced onion, salt and pepper.
  • 2. Using hands knead meat until combined.
  • 3. Make meat into five patties.
  • 4. In a lightly sprayed skillet cook patties 15 minutes per side or until your desired doneness!
  • 5. In a smaller skillet add a teaspoon of oil and saute onion rings until lightly brown, drain on paper towel.
  • 6. Once patties are done remove from skillet and add the 3 tablespoons of olive oil, let get hot then add the flour. Scrape bottom of skillet to get meat drippings.
  • 7. When flour is brown add the consomme and beef gravy, stir to mix.
  • 8. Add the mushrooms, put patties back in skillet. Use a spoon and coat meat with the gravy and mushrooms. Simmer for 10 minutes.
  • 9. Toast the french bread. Add two slices of bread per plate. Put meat on top of bread, spoon gravy and mushrooms on top. Garnish with onion rings.

1 (8 ounce) can cream of mushroom soup
1 cup water (1/2 to 1 cup) or 1 cup milk (1/2 to 1 cup)
1 (1 ounce) package brown gravy mix (packet size varies)

Steps:

  • Dice onion and add to the ground beef. (If using onion soup mix, blend well in ground beef.).
  • Mix and form into patties.
  • Fry the patties in skillet on medium heat until cooked to your liking.
  • I usually fry until they are medium-well to well done.
  • While patties are cooking, mix 1 can cream of mushroom soup, 1/2 to 1 cup water or milk, and brown gravy packet/mix in a bowl, stirring well.
  • After patties are browned and ready, add the soup mixture to the skillet. Reduce heat to simmer; spread the mixture over the patties and turn them once or twice as the mixture warms.
  • Stir mixture occasionally.
  • Simmer for 5 to 10 minutes or until gravy is good and hot.
  • Serve with mashed potatoes, your choice of veggies, a good salad, hot rolls or bread, and a cold glass of iced tea.
  • Of course, this recipe can be doubled. Serving size depends on how hungry your family or company is! ;).

2 lb ground beef
1 tsp ea. garlic gran., onion, gran., blk pepper
pinch coarse sea salt
1/2 tsp worchestshire sauce
2 c mushrooms, 1/2 c chopped, 1 1/2 c sliced
1/2 c celery, finely chopped
2 c onion, 1/2 c finely chopped, 1 1/2 c sliced
2-3 c beef broth, homemade or low sodium
olive oil

Steps:

  • 1. Note: If using lean ground beef, you may want to add a couple TBLS of olive oil to the meat to keep it moist during cooking.
  • 2. Place 1/2 chopped mushrooms, & 1/2 c. finely chopped onions, 1/2 c. finely chopped celery & 1 tsp of olive oil in microwavable bowl. Stir ingredients to lightly coat veggies with O.O. Microwave for 2 min. or till nice & tender. Cool.
  • 3. Mix together ground beef, seasoning & micro veggies. Form into oval shaped patties. Fry in skillet till done. Remove from skillet.
  • 4. In same skillet used to cook patties, add 2 TBL of olive oil & saute 1 1/2 c of sliced onions & mushrooms till tender. Remove from skillet. Add alittle more olive oil if needed, add 1/2 c flour & make a roux, scraping bottom of pan to release the yummies, add alittle salt & pepper if desired. Cook on med heat for a couple of minutes to brown roux. Add beef stock stirring till thickened, return sauted onions & mushrooms to pan, mix in.
  • 5. Place patties over a slice of toasted bread, cover with gravy, also great on mashed potatoes.

1-1/2 lb. extra-lean ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1-1/2 cups water, divided
3/4 cup chopped onions
1 pkg. (8 oz.) fresh mushrooms, sliced
1/2 cup KRAFT Original Barbecue Sauce

Steps:

  • Heat oven to 375ºF.
  • Mix meat, stuffing mix, 1-1/4 cups water and onions just until blended. Shape into 6 (1/2-inch-thick) oval patties. Place on rimmed baking sheet.
  • Bake 25 min. or until done (160°F). Meanwhile, cook mushrooms in large nonstick skillet on medium-high heat 5 min. or until tender, stirring occasionally. Stir in barbecue sauce and remaining water; simmer on low heat 1 to 2 min. or until heated through.
  • Serve meat patties topped with sauce.

1 1/2 lb lean hamburger meat
1/2 c yellow bell pepper finely chopped
1/2 c onion
1 tsp salt
1/2 tsp black pepper
2 Tbsp olive oil
1/4 c cheese sliced to fit

Steps:

  • 1. Mix all the ingredients together except the oil and the cheese. Heat oil in a skillet. Form meat mixture into 8 balls and flatten into patties.
  • 2. Slice cheese and lay a piece of cheese on 4 of the meat patties and cover with another meat patty. Seal by pinching edges together.
  • 3. Cook in hot oil on medium for 4 to 6 minutes on each side. Remove and plate.

1 1/2 tbsp. black peppercorns
2 lbs. ground sirloin
salt
4 tsp. butter
1/4 cup brandy
3 tbsp. lemon juice
1/4 cup butter,sliced, optional
parsley sprigs for garnish, optional

Steps:

  • 1. With flat end of cleaver or with meat pounder, crush peppercorns between sheets of waxed paper.Shape beef lightly into four patties and press pepper into both sides of patties.
  • 2. Sprinkle a light layer of salt over bottom of heavy skillet just large enough to hold the hamburger patties.When salt begins to brown, add 4 tsp. butter and heat til very hot. Add hamburgers and cook til well browned on one side. Turn and cook 30 seconds over high heat, then lower heat to medium and cook for 1 to 2 minutes for rare. Transfer to warmed platter.
  • 3. Pour fat from skillet. Add brandy and carefully ignite with long match. Shake skillet til flames go out. Add lemon juice. Swirl in the sliced butter and pour sauce over hamburgers. garnish platter with sprigs of parsley
