HAMBURGER SPINACH CASSEROLE
My husband's favourite weekday meal (really I could make it any day of the week, weekend included!). Serve with mashed potatoes or over short-cut pasta. Adapted from a recipe found on another site. Originally posted by Micha in AZ.

Steps:
- Preheat oven to 400°F.
- In a non-stick fry pan, soften onion, then brown hamburger. Add frozen spinach, cover and cook until spinach thaws, scraping spinach as it melts.
- Stir in soup, soy sauce, pepper, Cajun seasoning and 1/3 cup cheese. Cook until cheese melts, then place in a greased 2-quart casserole.
- Sprinkle with the 1/4 cup cheese and bread crumbs.
- Bake at 400°F for about 10 minutes or until cheese melts.

HAMBURGER SPINACH CASSEROLE
Steps:
- 1. Cook and drain spinach.
- 2. Mix cream cheese, sour cream, milk and onion in separate bowl and let set to soften.
- 3. Cook noodles in boiling water for 10 minutes.
- 4. Drain.
- 5. Brown beef and drain well.
- 6. Add tomato sauce, sugar, garlic powder, salt, pepper and noodles.
- 7. Heat through.
- 8. In 2 quart casserole, place a layer of the meat-noodle mixture (use 1/2).
- 9. Top with 1/2 of the cream cheese mixture.
- 10. Top with all of spinach and finish with remainder of meat-noodles.
- 11. Cover and bake at 350 for 40 minutes.
- 12. Remove from oven and top with remaining cream cheese mixture.
- 13. Cover completely with cheddar.
- 14. Return to oven UNcovered until cheese melts completely (about 5-10 minutes).
HAMBURGER SPINACH CASSEROLE
When my kids were little they would ask for "that hamburger thing you make" and I knew this was what they wanted. Imagine kids actually wanting to eat spinach! Simple and quick I usually serve it with buttered noodles. You can also vary the meat(chicken,turkey) and cream soup flavor to your liking.

- 1. Brown beef in saute pan, drain fat
- 2. Add frozen spinach cover cook until spinach thaws stirring occasionally
- 3. Add soup and cheese continue to cook until cheese melts
- 4. Put mixture into a casserole dish top with french fried onions and bake at 400 degrees for 10 minutes or until onions brown.
