Slumgullion (also known as American Goulash, American Chop-Suey, or Beefaroni) is a classic -and incredibly cheap - comfort meal. But make no mistake, this slumgullion recipe is anything BUT cheap-tasting. Who knew basic ingredients like pasta, ground beef, onion, and tomato sauce could make such an easy, delicious dinner?

1 tbsp olive oil
1 ½ pound ground beef
1 pound pasta
1 onion (, chopped)
½ tsp onion powder
1 tsp garlic powder
2 (14 oz) cans tomato sauce
1 tbsp bouillon
1 tsp oregano
1 tsp rosemary
salt and pepper (, to taste )
1 tbsp red chili flakes
¾ cup cheddar cheese (, shredded (optional, but highly recommended))
¼ cup fresh parsley (, chopped (optional))

Steps:

  • In a large non-stick pot, add 1 tbsp olive oil. Once hot, add in onions and saute until fragrant.
  • Add the ground beef, onion powder, garlic powder, oregano, rosemary, salt, pepper, and red chili flakes. Stir up the ground beef with your spatula to break it into chunks, and stir until meat is fully cooked.
  • Mix in the tomato sauce and bouillon. Reduce the heat to low, and mix to combine. Allow the mixture to cook for 5-7 minutes. Turn off the heat.
  • Add in the cooked pasta and stir the mixture to combine.
  • You can serve the slumgullion as is at this point, or you can mix in the cheddar cheese.
  • Sprinkle some chopped parsley and the slumgullion is ready to serve. ENJOY!

After being gluten-free for 4 years and really missing out on eating burgers with buns, I experimented with a handful of bread recipes to come up with a good gluten-free, milk-free bun that the whole family enjoys.

2 tablespoons white sugar
1 tablespoon active dry yeast
2 cups warm water
1 ½ cups rice flour
1 ½ cups gluten-free oat flour
¾ cup tapioca starch
¾ cup cornstarch
1 tablespoon xanthan gum
1 teaspoon salt
5 eggs
½ cup canola oil
1 tablespoon sesame seeds

Steps:

  • Preheat the oven to 200 degrees F (95 degrees C).
  • Dissolve sugar and yeast in warm water in a bowl. Let stand until yeast softens and begins to form a creamy foam, about 5 minutes.
  • Combine rice flour, oat flour, tapioca starch, cornstarch, xanthan gum, and salt in a mixing bowl; mix to combine. Add yeast mixture, eggs, and oil; mix using an electric mixer on high speed for 3 minutes.
  • Distribute batter evenly between between eighteen 5-inch pie tins. Place onto 2 large cookie sheets. Sprinkle buns with sesame seeds.
  • Allow to rise in the preheated warm oven, 30 to 40 minutes.
  • Set the oven temperature to 400 degrees F (200 degrees C) without removing the buns.
  • Bake in the hot oven for 15 minutes. Switch baking sheets on oven racks and continue to bake until golden, 12 to 15 minutes more.

Slumgullion is delicious ground beef simmered in a tomato sauce all day, then elbow macaroni cooked up right in the slow cooker at the end! The perfect weekday dinner for busy families!

1 pound lean ground beef
1 medium white onion minced (minced)
1 tablespoon minced garlic
one 28 ounces can diced tomatoes
1 can condensed tomato soup
1 cup ketchup
1 tablespoons Italian seasoning
1 tablespoon Worcestershire sauce
1 tablespoons soy sauce
2 cups beef broth
2 cups dry macaroni

Steps:

  • Fry the ground beef and onion in a large skillet until cooked completely. Drain any excess fat then add in the garlic, saute until fragrant.
  • Place the ground beef mixture into the bottom of a slow cooker.
  • Add in all of the remaining ingredients, except the macaroni. Stir.
  • Cover and cook on HIGH for 4-5 hours or on LOW for 7-8 hours.
  • Half an hour before you are ready to eat, add in the macaroni noodles and stir until mixed through.
  • Cover and cook until the macaroni is soft, stirring once in a while to ensure that the macaroni doesn't stick to the bottom of the pot. If needed, add more beef broth to thin out the sauce at the end.
  • Remove from heat and serve with cheese sprinkled on top.

1 pound lean ground beef
1 large onion, chopped
2 cups tomato sauce
2 (4.5 ounce) cans mushrooms, drained
2 teaspoons minced garlic
salt and pepper to taste
1 (14.5 ounce) can stewed tomatoes

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and place in large saucepan.
  • Meanwhile, in a large skillet, brown beef over medium heat; just before beef is browned, stir in onion.
  • Add beef mixture to pasta, and stir in tomato sauce, mushrooms, garlic, salt, pepper and stewed tomatoes. Cook over low heat, 10 to 15 minutes, or until heated through.

This is a simple recipe handed down by my Mom. I have no idea where she came up with the name, but it makes for interesting conversation when someone asks what I'm fixing for dinner and it's "Slum Gum" night!

1 lb ground chuck
1 (14 ounce) can diced tomatoes, undrained
1 (14 3/4 ounce) can whole kernel corn, drained
1 small diced onion
1/2 teaspoon minced garlic clove
3 tablespoons Worcestershire sauce
1/4 teaspoon chili powder
1/4 teaspoon black pepper
1/2 teaspoon salt
1/2 cup ketchup

Steps:

  • In a large skillet over medium-high heat, brown the ground chuck and onions until the meat is no longer pink. Drain excess grease from the meat and return the meat to the skillet.
  • Add the remaining ingredients to the skillets and simmer over medium-low heat for 15 minutes.
  • Serve immediately.

1 roasted garlic clove, smashed
1 lb monterey jack cheese, coarsely grated (don't buy the pre-grated cheese)
2 tablespoons flour
tiny boiled new potato
cooked pasta (corkscrew, bowtie, "wagon wheels", etc.)
bread cubes (French, whole wheat, multigrain, etc.)
lightly steamed broccoli spears, zucchini, celery, asparagus, bell peppers, carrots or snap peas, cucumber, etc
sliced apples or pear

Steps:

  • Heat the milk and the garlic in a saucepan over medium-low heat until simmering, 2 to 3 minutes.
  • Toss the cheese and flour together in a bowl until the shreds are nicely floured.
  • Whisk the cheese mixture into the milk a handful at a time, waiting until each handful melts before adding more. Whisk until cheese is completely melted and mixture is smooth and velvety.
  • Holding the food with *fingers, a fondue fork or a regular fork, dip one or several of the options into the pot and swirl to coat with the cheese.
  • I added a light sprinkle of dried parsley to the top of the fondue.

1 pound ground beef (I used 80/20 - fattier meat means a juicier burger!)
1/2 cup shredded Monterey jack cheese
1/4 cup BBQ sauce
1/4 teaspoon seasoned salt
pepper, to taste
1/4 teaspoon onion powder
3/4 cup mayonnaise
1/4 cup ketchup
1/4 cup pickle relish
2 Tablespoons Worcestershire sauce
5 hamburger buns (we like sesame seed buns)

Steps:

  • In a large bowl, combine the ground beef, shredded cheese, bbq sauce, and seasonings. Don't add too much bbq sauce or the patties will have a hard time taking shape. Shape patties that are about 1 inch thick (about 5 patties). (You can also freeze the patties after shaping them for about 1 hour to help them hold their shape.)
  • Turn grill up to high and let it get hot.
  • Reduce heat to medium-high and place the burgers on the grill. Allow this side of the patty to cook for about 4-6 minutes, but make sure it does not burn. Then flip the burger over and cook until done.
  • For the sauce, combine all sauce ingredients and whisk until well mixed. Taste and adjust ingredients to your liking.
  • Assemble the burgers and serve with the special sauce and other hamburger toppings of choice.
