This creamy, cheesy Hamburger Casserole with Rice is an old-fashioned, easy dinner with just 15 minutes of prep! Perfect for busy weeknights!

1 lb. ground beef
1 small onion, diced (or about 1 cup of frozen pre-diced onion for a shortcut)
1 (10.5 ounce) can condensed cream of mushroom soup, NOT diluted
1 (10.5 ounce) can condensed cream of celery soup, NOT diluted
1 ¼ cups milk
½ teaspoon salt
½ teaspoon dried chives
¼ teaspoon black pepper
¼ teaspoon garlic powder
4 cups cooked rice ((I use 2 packages (8.8 oz each) of Uncle Ben's Ready Rice microwaved according to package instructions))
2 cups frozen mixed vegetables, thawed ((I use a 10-ounce package))
1 cup grated cheddar cheese
1 cup crushed Corn Flakes cereal ((about 1 ¾ c. whole cereal before crushing))
2 tablespoons melted butter

Steps:

  • Preheat oven to 350 degrees F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
  • Cook beef and onion in a large skillet over medium-high heat until meat is no longer pink (about 5-7 minutes). Drain.
  • In a separate bowl, stir together condensed soups, milk, salt, chives, pepper and garlic powder.
  • Add cooked rice, soup mixture and vegetables to the cooked beef. Stir to combine. Transfer to prepared baking dish. Sprinkle cheese over top.
  • In a small bowl, toss together Corn Flakes crumbs and melted butter. Sprinkle over top of the casserole.
  • Bake, uncovered, at 350 degrees F for 30 minutes, or until hot and bubbly. Allow to rest for 5 minutes before serving.

This was one of the most popular lunches our school cooks made for us. My family also loves it. It's an easy weeknight dinner and also freezes well. I often make a double batch and freeze one pan for later.

1 lb ground beef
1/2 medium onion, diced
1 can(s) cream of chicken soup
1 can(s) cream of mushroom soup
1 c instant rice
1 c shredded cheddar cheese
1/2 c american cheese chunks
1 can(s) corn
salt & pepper to taste

Steps:

  • 1. Brown beef and diced onion. Season with salt and pepper. Drain well.
  • 2. Preheat oven to 375*. Have ready a 9x13 baking dish.
  • 3. In a medium bowl stir together rice, soups, corn, and American cheese chunks.
  • 4. Place browned meat into baking dish. Pour rice mixture over the top. Cover with foil and bake 30-45 minutes, or until bubbly.
  • 5. Remove cover and sprinkle with shredded cheese. Bake 5 minutes until cheese is melted.

1 tablespoon cooking oil
1 pound lean ground beef ((We used 93/7.))
½ cup white onion (finely chopped)
2 ¼ cups beef broth
½ cup white rice (uncooked (long grain, jasmine, or basmati))
¼ cup tomato paste
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon chili powder
½ teaspoon salt (or to taste)
¼ teaspoon cumin
¼ teaspoon oregano
¼ teaspoon pepper
1 ½ cups cheddar cheese (shredded)

Steps:

  • In a large skillet over medium heat, add the oil, ground beef, and onions. Cook the ground beef until no pinks remain. Drain excess grease, and return to the pan.
  • Stir in the broth, rice, tomato paste, onion powder, garlic powder, chili powder, salt, cumin, oregano, and pepper. Bring the ingredients to a boil, cover, and reduce the heat to simmer.
  • Continue to cook for 20 to 25 minutes or until the rice is tender and cooked to the desired consistency.
  • Remove from heat, uncover, and top with shredded cheese. Return the lid and all the residual heat to melt the cheese. Serve hot, and store leftovers in the refrigerator for up to 3 days.

1 head green cabbage, shredded
½ cup uncooked long-grain white rice
1 pound ground beef
1 small onion, chopped
1 ½ teaspoons dried oregano
½ teaspoon dried sweet basil
¼ teaspoon garlic powder
¼ teaspoon dried thyme
½ teaspoon salt
½ teaspoon white sugar
¼ teaspoon ground black pepper
1 (28 ounce) can whole tomatoes
10 slices American cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread cabbage in the bottom of a 9x13-inch baking dish; sprinkle rice on top.
  • Heat a large skillet over medium heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add onion, oregano, basil, garlic powder, and thyme; cook and stir until onion is transparent, about 5 minutes. Season with sugar, salt, and pepper.

2 lbs hamburger
2 (10 3/4 ounce) cans cream of chicken soup
2 (10 3/4 ounce) cans cream of mushroom soup
shredded cheese
2 1/2 cups rice
salt
pepper
garlic powder
onion powder

Steps:

  • Brown hamburger; season with salt, pepper, garlic powder, and onion powder.
  • Combine cream of chicken, cream of mushroom and rice in a bowl, mix together throughly.
  • Spread hamburger evenly over cake pan, then spread soup and rice mixture evenly over hamburger. The rice will needed to be pre-cooked, if it is not instant or quick cooking rice. The rice will need too specify that it cooks within 15 minutes or less, or quick cooking.
  • Bake at 400 degrees covered 30 to 45 minutes. Uncover and add shredded cheese to the top, bake again until cheese is melted.

I made this recipe quite a few years ago and it's still one of my husband and my favorites. My husband calls it heaven on a spoon!

1 cup white rice
1 cup water
1 pound ground beef
3 (10.75 ounce) cans condensed tomato soup
3 tablespoons chili powder
8 slices processed cheese food (such as Velveeta®)

Steps:

  • Bring the rice and water to a boil in a saucepan. Reduce heat to medium-low; cover, and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes.
  • Preheat an oven to 400 degrees F (200 degrees C). Grease a 1-quart baking dish.
  • While the rice is cooking, heat a large skillet over medium-high heat and stir in the ground beef. Cook and stir until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Stir in the condensed tomato soup and chili powder; cook until heated through.
  • Spread 1/3 of the rice into the bottom of the prepared baking dish and cover with 1/3 of the ground beef mixture. Place 2 slices of processed cheese over the meat, then cover with 2 more layers of rice and meat. Arrange the remaining 6 slices of cheese over the top.
  • Bake in the preheated oven until the casserole has heated through and the cheese is bubbly and browned, about 20 minutes.
