Easy Hamburger Macaroni Soup is a hearty soup recipe that takes just fifteen minutes from start to finish. This delicious soup is loaded with ground beef, diced tomatoes, mixed vegetables and macaroni noodles.

1 lb lean ground beef
1 tbsp dehydrated minced onions
1 tsp salt
1 tsp pepper
21 oz condensed beef broth
14.5 oz canned mixed vegetables
28 oz diced tomatoes
3 cups water
1 cup macaroni noodles, uncooked

Steps:

  • Heat a large pot on the stove over medium-high.
  • Add the ground beef to the pot along with a dab of butter or margarine.
  • While the ground beef is cooking season it with the minced onion, salt and pepper. Break the beef apart as it is cooking so that there won't be large chunks in your soup.
  • Once the beef is fully cooked and the beef broth, mixed vegetables, diced tomatoes, water and macaroni noodles to the pot and stir well.
  • Increase the heat and bring the soup to the boil.
  • Once the liquid is boiling reduce the heat to medium and leave the soup to simmer for four minutes stirring occasionally.
  • Remove the pot from the heat and serve.
  • Enjoy!

1 1/2 lbs lean ground beef
1 medium white onion diced
2 tsp minced garlic
1 28 oz can diced tomatoes
1 10.75 oz can condensed tomato soup
4 cups beef broth
1 tsp dried thyme
2 bay leaves
2 cups frozen vegetables
1 tsp white sugar if your tomatoes are too acidic
1/2 tsp black pepper
2 cups elbow macaroni cooked

Steps:

  • Fry the ground beef and onions together in the bottom of a large soup pot until the ground beef is cooked and the onions are translucent. Add in the garlic and fry until brown. Drain the fat and return the pot to the stove.
  • Stir in the tomatoes, tomato soup, beef broth, bay leaves, thyme, frozen vegetables and pepper.
  • Simmer the soup on low heat until the meat has softened and the vegetables are cooked, around 40 minutes.
  • Remove the bay leaves. Stir in the cooked macaroni and let it warm up. Ladle into bowls and serve.

1 lb lean ground beef
1 (19 ounce) can Italian stewed tomatoes (could use 28 oz. if you added more parm. cheese)
1 medium onion (chopped)
1 minced garlic clove (I actually use 2)
1/4-1/2 cup parmesan cheese (I probably use more but I am a cheese fiend)
3 cups macaroni (before cooked, you could probably mess around with that amount as I am just estimating, I just pour)

Steps:

  • Fry ground beef in large size frying pan until almost all red is gone.
  • Add chopped onion and garlic and continue frying until beef is completely cooked.
  • Add the tomatoes and parmesan cheese and stir completely.
  • Lower heat and simmer while you cook the macaroni (about 20 minutes).
  • When macaroni is done, just mix it all together and serve.
  • Have your spouse clean up the mess cuz really, who needs the grief.

1 lb low fat hamburger
1/2 Tbsp minced garlic
1/2 c chopped onion
1/2 c chopped celery
1/2 tsp salt
1/2 tsp pepper
1/2 tsp marjoram (optional)
1 can(s) 14.5 oz can diced tomatoes
1 can(s) 10.5 oz can condensed tomato soup
1/2 Tbsp chili powder (more depending on how spicy you want it, can also use hot sauce)
2 can(s) 15 oz cans kidney beans or white beans, or one of each
3 c cooked elbow macaroni

Steps:

  • 1. In a frying pan on med-high heat, cook and crumble hamburger until done.
  • 2. Add garlic, onion, celery, salt, pepper and marjoram. Lower heat to medium, cook 15 minutes or until onions are soft and transparent.
  • 3. While cooking hamburger mixture, turn a crock pot on medium-high heat and add tomatoes with juice and tomato soup (use a small amount of water to rinse can and add to crock pot), stirring occasionally, bring to a soft boil.
  • 4. Into tomato mixture, add chili powder, beans and hamburger mixture. Cover and return to a soft boil stirring occasionally. Reduce heat, cover and simmer for at least an hour, but the longer it simmers, the better the taste. I like to simmer for about 4 hours.
  • 5. Approximately ½ hour before serving, add 2 to 3 cups of cooked elbow macaroni to crock pot. Because the macaroni will soak up the juice, add water as necessary,depending on if you want more of a soup or stew consistency.

3 celery ribs, chopped
1/2 onion, diced
8 ounces pasta, cooked in salt (elbow or shell)
2 cans tomato soup (undiluted)

1 cup frozen green beans
1 cup frozen white corn
1 teaspoon salt, to taste
1/2 teaspoon pepper, to taste
1 teaspoon chili powder
