ZESTY ITALIAN HAMBURGER HELPER SOUP



Zesty Italian Hamburger Helper Soup image

This hearty "delicious" ground beef soup was prepared using a box of Hamburger Helper, canned tomatoes (stewed and Rotel), beef broth, corn, green beans, carrots, zucchini, onion, garlic, Italian seasoning, and black pepper.

1 (7 1/4 ounce) box Betty Crocker's hamburger helper, Zesty Italian (or a 6.4 oz. box Hamburger Helper, Italian Lasagna)
1 lb ground beef
3/4 cup diced onion
2 large garlic cloves, minced
ground black pepper
4 1/2 cups canned beef broth
14 1/2 ounces stewed tomatoes
10 ounces rotel original diced tomatoes and green chilies
1 cup zucchini, cut into 1/4-inch pieces
1/2 cup thinly sliced carrot
1 cup whole kernel corn (frozen, or corn in a can, drained)
8 ounces frozen green beans
1/4 teaspoon italian seasoning

Steps:

  • Spray the inside of a Dutch oven or soup kettle, with a no-stick cooking spray.
  • In the Dutch oven or kettle, add the ground beef, and season beef with a bit of black pepper. (Do not add salt to this recipe!).
  • Brown the ground beef three quarters of the way, over medium heat; stirring to break up the meat.
  • Add the onions, and sprinkle onions with a bit of the pepper, then add the garlic.
  • Finish browning the beef and cooking the onions and garlic, this will just take a minute or two.
  • In the meantime, cook the frozen green beans in a microwave, till they are about three quarters of the way done; drain beans and set them aside. (Note: I sprinkled the green beans with a bit of black pepper, before microwaving them.).
  • Add the following ingredients to the kettle of cooked beef, the seasoning packet from the boxed hamburger helper, the beef broth, stewed tomatoes, the Rotel Tomatoes, zucchini, sliced baby carrots, whole kernel corn, the cooked green beans, and the Italian seasoning.
  • Bring soup to a boil, then reduce heat to a low simmer, cover, and simmer the soup for 10 minutes.
  • Uncover the kettle, stir the soup, and add the package of penne pasta, that's included in the box of hamburger helper.
  • Bring soup to a second boil, then reduce the heat to a low simmer, cover, and simmer the soup for 15 minutes.
  • Remove soup from heat, stir the soup, and serve.
  • Note: I noticed after making this soup and using the 6.4 oz. box of Italian Lasagna Hamburger Helper (with the mini lasagna noodles in the box) verses the Zesty Italian (which adds mini penne pasta to the box), the next day when I reheated the soup, I had to add a bit more liquid, as the soup had thickened, and it had the consistency of a goulash. Since the mini lasagna noodles seem to absorb the liquid, I added more broth (a 1/2 cup) plus I added some V-8 Spicy Hot Vegetable Juice.

This 'delicious' hearty soup is made with "seasoned" ground pork sausage. It's a nice change from the usual lasagna hamburger helper soup recipe, which is made with ground beef.

1 (6.4 oz.) box betty crocker lasagna hamburger helper
1 lb. "seasoned" ground pork sausage (*see note)
1 medium sized red onion, diced
2 medium size garlic cloves, minced
4 cups beef broth
1 (14.5 ounce) can stewed tomatoes
1 (10 oz.) can rotel original diced tomatoes and green chilies
1/2 of 1- (14.5 oz.) can whole kernel corn, drained
2 cups cut-up zucchini (cut into 4-inch pieces)
1/4 tsp. italian seasoning
garnish: kraft grated parmesan cheese

Steps:

  • 1. Spray the inside of a Dutch oven or soup kettle, with a no-stick cooking spray.
  • 2. In the Dutch oven or kettle, add the ground beef, and season beef with a bit of black pepper. (Do not add salt to this recipe!)

  • 10. Remove soup from heat, stir the soup, and serve.
  • 11. Top each bowl of soup, with a sprinkle of the grated parmesan cheese.
  • 12. *Note: For this recipe, I used "seasoned" ground pork sausage, which already has garlic, onion, ground sage, salt, and black pepper added to it, but you could substitute ground beef for the sausage. Also, any leftovers reheated, will have the consistency of a goulash, rather than a soup.

SPICY HAMBURGER HELPER LASAGNA SOUP

This is wonderfully easy for those fall evenings when you want something tasty, but don't want to spend much time in the kitchen. I sometimes use 1 can of green beans in place of the zucchini if I don't have it on hand. You can also adjust the heat with a different "strength" of Rotel. ENJOY!

1 medium onion, chopped
1 (7 ounce) box Hamburger Helper lasagna macaroni
5 cups hot water
1 (15 ounce) can stewed tomatoes, undrained
1 (15 ounce) can whole kernel corn
1 (10 ounce) can rotel, Extra Hot
1 small zucchini, chopped
1 tablespoon italian seasoning

Steps:

  • Brown hamburger meat and onions in a Dutch oven over medium-high heat. Drain.
  • Stir in hot water, Hamburger Helper sauce mix, stewed tomatoes, corn, and Rotel. Heat to boiling, stirring occasionally.
  • Reduce heat. Cover and simmer for 10 minutes, stirring occasionally.
  • Stir in uncooked Hamburger Helper noodles and zucchini.
  • Cover and cook for 10 additional minutes.
  • Sprinkle each serving with grated Parmesan cheese if desired.

This is a hearty meat, pasta, vegetable soup. Main ingredients are: "sweet Italian sausage" boxed Hamburger Helper "Italian Sausage Flavor", beef broth, water, stewed tomatoes, green beans, carrots, zucchini, onion, garlic, black pepper, Italian seasoning, and grated parmesan cheese.

1 (7 ounce) box betty crocker Hamburger Helper mix for beef pasta (I used Italian Sausage Flavor, one 6.9 oz. box)
1 lb sweet Italian sausage
3/4 cup diced onion
2 large garlic cloves, minced
2 -3 dashes ground black pepper
2 (10 1/2 ounce) cans campbell's beef broth
1.5 (10 1/2 ounce) soup cans water
1 (14 1/2 ounce) can stewed tomatoes
1/2 cup thinly sliced carrot (I used baby carrots)
1 (9 ounce) zucchini, cut into 1/4-inch pieces
8 ounces frozen green beans
1/4 teaspoon italian seasoning
grated parmesan cheese (optional)

Steps:

  • Spray the inside of a stockpot, with a no-stick cooking spray.
  • To the pot, add the sausage, and season it with a bit of black pepper, if desired. (Do not add salt to this recipe!).
  • Brown the sausage over medium heat; stirring to break up the meat.
  • While the sausage is browning, cook the frozen green beans in a microwave, till they are about three quarters of the way done; drain beans and set them aside. (I cooked the beans in an 850 watt microwave for 6 minutes, but stirring them after 3 minutes I also season the beans with a bit of black pepper).
  • When sausage is done browning, then drain it in a colander.
  • To the stockpot, lightly saute' the onions for a minute or two. (Add a bit of vegetable oil if need be).
  • Add garlic to the pot, and saute' the garlic for about 1 minute.
  • Place sausage back into the pot, then sprinkle the seasoning packet from the hamburger helper over all, and stir to coat the meat.
  • To the pot add the following ingredients: the beef broth, one and a half soup cans of water, the stewed tomatoes, sliced baby carrots, zucchini, green beans, the Italian seasoning, and the rotini pasta that's included in the boxed hamburger helper.
  • Bring soup to a boil, then lower the heat, and simmer the soup for about 14 minutes.
  • Remove soup from heat, stir the soup, and serve.
  • If desired, sprinkle each bowl of soup with a bit of the parmesan cheese.
  • Note: I noticed after cooking the soup, the carrots seemed to be slightly crisp. For those who'd prefer them to be a bit more cooked, I would do the following after adding the cooked meat, the seasoning packet, onion, garlic, broth, water, and just the carrots to the stockpot. Bring those ingredients to a boil, then lower the heat, and simmer it for 5 minutes. Then add the remaining ingredients, (the stewed tomatoes, zucchini, green beans and Italian seasoning) and bring the soup to a boil, then reduce the heat, and simmer the soup for about 14 minutes.

I created this soup back in 2009, using a box of Betty Crocker Zesty Italian Hamburger Helper. I've also made this soup using a box of Italian Lasagna Hamburger Helper as well. This soup is hearty and delicious!

Don't know where I got this recipe, but it is very good on a cold winter night. Simple to make and very good!

1 lb hamburger
1 box hamburger helper beef pasta
6 c water
1-2 can(s) diced tomatoes (i use the italian style)
2 - 4oz can(s) sliced mushrooms
1 large onion chopped
6 beef bouillon cubes
1 bay leaf
1 pkg mixed vegetables

Steps:

  • 1. Brown hamburger and onion (drain grease).
  • 2. Add seasoning mix from Hamburger Helper, water, tomatoes, mushrooms, bouillon cubes and bay leaf.
  • 3. Simmer on low for 4 hours. Add mixed vegetables and cook until vegetables are tender. Remove bay leaf.
  • 4. Just before serving, add noodles from Hamburger Helper and cook until done.
  • 5. Sprinkle parmesan cheese on top of each bowl of soup.

1 1/2 lbs ground beef
1/2 cup onion (chopped)
1 package Hamburger Helper mix for beef pasta (Cheeseburger & Macaroni flavor)
5 cups water
1 teaspoon dried basil
1 teaspoon salt
1/8 teaspoon pepper
1 (16 ounce) can diced tomatoes (undrained)
1 (16 ounce) can Veg-All (undrained)
2 tablespoons minced fresh parsley

Steps:

  • Brown ground beef and onion in Dutch oven until beef is no longer pink- drain.
  • Stir in cheese sauce mix from Hamburger Helper package.
  • Stir in water, basil, salt, pepper& tomatoes, and heat to boiling, stirring constantly.
  • Reduce heat, cover& simmer 10 minutes.
  • Stir in macaroni from the Hamburger Helper package, add Veg-All, cover& simmer until pasta is tender, about 15 minutes.
  • Stir in parsely& serve.
