2 teaspoons olive oil
1 onion, chopped
1 lb lean ground beef
2 tablespoons flour
2 tablespoons ketchup or 2 tablespoons sriracha sauce
1 cup beef broth or 1 cup vegetable broth
3 tablespoons Worcestershire sauce
salt and pepper, to taste
2 cups frozen mixed vegetables
1 (20 ounce) package refrigerated hash brown potatoes, thawed
1 cup cheddar cheese, shredded
1/4 cup butter, melted

Steps:

  • Preheat oven to 375 degrees F.
  • In a frying pan, cook onion in olive oil over medium high heat until translucent. Add in ground beef and cook until browned. Drain fat from ground beef. Return the mixture to medium heat.
  • Sprinkle flour over the ground beef and mix inches Cook for one minute, stirring constantly. Add in ketchup, broth, Worcestershire, salt and pepper and veggies. Cook for 5 minutes. Stir occasionally.
  • Spread mixture in bottom of greased 9"×13" baking pan.
  • In a medium bowl, mix together the potatoes, cheese and butter. Spread potato mixture over mixture in the pan.
  • Bake until hash browns are golden brown (45 minutes). Serve hot.
  • To reheat, microwave until hot then transfer to broiler to recrisp hash browns.

This makes a big batch. It's great as leftovers, but there's really no way to cut it down, so you could always make it in 2 pans and freeze the other one. I love to make it in the fall, it's a great, cheap way to warm the tummy.

1 lb ground beef
20 hash brown patties, you may need to cut some to fit the bottom of your dish
1 large onion, chopped
1 (15 ounce) can baby peas, drained
1 (10 3/4 ounce) can cream of mushroom soup
1 1/2 cups cheddar cheese, shredded
salt and pepper

Steps:

  • Preheat oven to 350 degrees.
  • Spray 11 x 15 casserole dish with cooking spray and set aside.
  • In large skillet, brown ground beef and onions until cooked through, drain.
  • Layer hashbrown patties in bottom of casserole dish and salt and pepper between the layers.
  • Layer beef and onion mixture over the hashbrowns and salt and pepper the top.
  • Sprinkle with can of peas.
  • Spread soup over the top of the peas and sprinkle with salt and pepper.
  • Top with cheese and bake until bubbly. About 30 minutes.

I made this recipe once and everyone LOVED it (even my two preschoolers)! I also have tried it with ground turkey (less than half the calories and fat) and it was still remarkably good. I love that you don't have to brown the ground beef first!

1 lb lean ground beef
1 cup chopped onion
1 (14 1/2 ounce) can diced fire-roasted tomatoes
2 teaspoons Worcestershire sauce
1 1/2 cups corn kernels
16 ounces frozen hash browns or 16 ounces to 4 cups diced or sliced raw potatoes
1/4 cup flour
1 green bell pepper, chopped
4 tablespoons margarine, melted
2 cups shredded cheddar cheese

Steps:

  • Combine beef, onion, tomatoes, Worcestershire sauce, and salt. In a separate bowl, combine corn, potatoes, flour, and chopped green bell pepper. Add the melted margarine.
  • Spray 13 X 9 X 2 inch pan with non stick spray. Pat the beef mixture into baking pan; top with the corn and potato mixture. Bake uncovered at 375°F for 45 minutes; sprinkle with the cheese and bake ground beef casserole 15 to 20 minutes longer, until potatoes seem done.
  • I usually drain the casserole of the fat two times during cooking, once at about 20 minutes and again before I add the cheese (if your using beef, turkey doesn't usually make much fat).
