EASY HAMBURGER CORN CASSEROLE



Easy Hamburger Corn Casserole image

This can be a do ahead casserole just pour the ingredients into a casserole dish before you do the final 20 minute simmer and then pop it into a 350F oven 25-30 minutes before serving - put some buttered crumbs on top - I like to serve it over noodles or add cooked macaroni to it for the final simmer - I treat this as a good basic casserole that is tasty as is or even better with your creative touch

Number Of Ingredients 10

2 lbs lean ground beef
spray vegetable oil
1 1/2 cups onions, chopped
5 cloves garlic, chopped (or less)
1 tablespoon chili powder (or more)
1 teaspoon crushed red pepper flakes
2 (14 ounce) cans kernel corn or 4 ears fresh corn, cooked
1 (28 ounce) can diced tomatoes (Ilike to use Italian flavored)
1 cup beef broth
2 tablespoons cornstarch

Steps:

  • Brown the beef on the sprayed pan, add onions, garlic, chile powder& crushed red pepper flakes.
  • Stir until onions are softened and the burger is browned.
  • Mix cornstarch with the beef broth add to the pan.
  • Add tomatoes mix well& simmer until thickened add corn mix and continue simmering for approz 20 minutes Season with salt& pepper.

This is another recipe I used to use up all that excess frozen hamburger I suddenly had (don't ask). Needless to say, the guys got tired of hamburger recipes. I definitely modified as the original called for MSG - yuck. And 3/4 teaspoon salt! Not healthy now a days.

1 1/2 lb hamburger
1 c choppd onion
15 oz can whole kernel corn, drained
1 can(s) campbells cream of chicken soup
1 can(s) campbell's cream of mushroom soup
1 c sour cream
1/4 c chopped, jarred pimiento
1/4 tsp salt
1/2 tsp pepper
1 1/2 c raw elbow macaroni (3 cups cooked), cooked and drained
3-4 slice of your favorite bread, cubed
4 Tbsp butter

Steps:

  • 1. In a large skillet, cook hamburger and onion till meat is lightly browned and onion is tender. Stir in corn, soups, sour cream, pimiento, and seasonings. Mix well.
  • 2. Stir in cooked macaroni. Turn into 2 1/2 quart casserole. Mix bread cubes and 4 tablespoons melted butter; sprinkle atop. Bake at 350 for 45 minutes or till hot and bread crumbs are brown but not burned.

FILLING:
1 pound ground beef
1 can (11 ounces) Mexicorn, drained
1 can (8 ounces) tomato sauce
1 cup shredded cheddar cheese
1/2 cup hickory-flavored sauce
1/2 teaspoon salt
1/2 teaspoon chili powder
CRUST:
1 cup all-purpose flour
1/2 cup yellow cornmeal
2 tablespoons sugar
1 teaspoon salt
1 teaspoon baking powder
1 cup shredded cheddar cheese, divided
1/4 cup cold butter
1/2 cup whole milk
1 large egg, lightly beaten

Steps:

  • In a large skillet, cook beef over medium heat until meat is no longer pink; drain. Stir in the remaining filling ingredients; set aside. , For crust, in a large bowl, combine the flour, cornmeal, sugar, salt and baking powder. Fold in 1/2 cup cheese. Cut in butter until mixture resembles coarse crumbs. Stir in milk and egg. , Spread crust mixture over the bottom and up the sides of a greased 9-in. square baking dish. Pour filling into crust. Bake, uncovered, at 400° for 20-25 minutes or until bubbly. Sprinkle with remaining cheese; bake 5 minutes longer or until cheese is melted.

1 1/2 lbs ground beef
1 cup onion, chopped
1 (12 ounce) can whole kernel corn, drained (about 1 1/2 cups)
1 (10 ounce) can condensed cream of chicken soup
1 (10 ounce) can condensed cream of mushroom soup
1 cup dairy sour cream
1/4 cup pimento pepper, chopped
3/4 teaspoon salt
1 1/2 teaspoons pepper
3 cups medium noodles, cooked
1 cup soft breadcrumbs
2 tablespoons butter, melted

Steps:

  • Brown meat: add chopped onion. Cook until tender, but not brown.
  • Add next 7 ingredients; mix well. Stir in noodles. Pour into a 2 1/2 quart casserole.
  • Mix crumbs and butter. Sprinkle over top. Bake in a moderate 350F oven for approximately 1 hour. Snip parsley over top.

10-1/2oz can cream of chicken soup
10-1/2oz can cream of mushroom soup
1 c sour cream
3/4 t salt
1/4 t pepper
6 oz medium noodles, cooked and drained

Steps:

  • Brown ground beef and onion. Stir in next 6 ingredients. Mix well. Stir in noodles. Put into 2-1/2 qt casserole. Combine 1c soft bread crumbs and 2T melted butter; sprinkle on top. Bake at 350 for 45 minutes.
