2 (16 ounce) packages frozen broccoli
2 pounds ground beef
1 (8 ounce) package fresh mushrooms
1 large onion, chopped
salt to taste
ground black pepper to taste
2 (10.75 ounce) cans condensed cream of celery soup
1 (16 ounce) container sour cream
1 (16 ounce) package shredded Monterey Jack cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare the broccoli according to package directions.
  • In a skillet over medium heat, mix the ground beef, mushrooms, and onion. Cook until beef is evenly brown; drain grease. Season with salt and pepper, and mix in cream of celery soup and sour cream. Continue cooking until heated through. Transfer to a medium baking dish, and evenly layer with broccoli. Top with cheese.
  • Bake 1 hour in the preheated oven, until bubbly and lightly brown.

1 pound ground beef
1/2 cup chopped onion
1 tablespoon Worcestershire sauce
1 teaspoon garlic salt
1 teaspoon Italian seasoning
1 cup uncooked instant rice
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 cup water
2 pounds fresh broccoli, chopped or 6 cups frozen chopped broccoli, cooked and drained
6 ounces sliced part-skim mozzarella cheese
Chopped fresh parsley, optional

Steps:

  • Preheat oven to 400°. In a skillet, cook beef and onion in oil until meat is no longer pink; drain. Stir in the Worcestershire sauce, garlic salt, Italian seasoning, rice, soup and water. , Place cooked broccoli in an 11x7-in. baking dish; spoon meat mixture over top. Sprinkle with mozzarella cheese. Bake, uncovered, until heated through, 15-20 minutes. Garnish with parsley if desired.

I make this casserole frequently for supper because it is cheap, fast, filling and great for kids. It's even good for very young kids who are just beginning to eat table foods. When I was a kid, we would have this as a side dish for holiday dinners, but I make it as a simple supper with crackers or dinner rolls and salad. You can substitute ingredients to fit what you have on hand.

1 -2 lb ground beef
16 ounces frozen chopped broccoli
2 cups Minute Rice (unprepared)
1 cup water
2 (10 ounce) cans cream of mushroom soup
15 ounces Cheese Whiz
salt, pepper

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 9x13 casserole dish with cooking spray. Set aside.
  • Brown ground beef until no longer pink, adding salt and pepper to taste.
  • Drain fat from cooked ground beef.
  • In a large bowl, stir ground beef together with all remaining ingredients.
  • Dump the entire mixture into the casserole dish.
  • Bake for 45 minutes (give or take) until casserole is bubbly and rice is tender.
