Creole Hamburger and Rice image

A simple, affordable ground beef meal, that is perfect for adding protein and carbohydrates to your diet.

1 pound Ground Beef (85 / 15)
2 teaspoons Creole Seasoning
2 cups Water
1 cup Instant Rice
1 can Fire Roasted Diced Tomatoes
1 cup Shredded Cheddar Cheese (*optional)

Steps:

  • In a large skillet, brown the ground beef over medium heat. Drain excess grease.
  • Add the creole seasoning and stir well.
  • Add the water and bring it to a boil. Next, add the instant rice. Cover and cook recommended time. Usually about 5 minutes.
  • When the rice is done, add the tomatoes and stir well. Cook until heated thoroughly.
  • If you want to add cheese, add it in last and stir just until melted. Serve

Beef burgers get a big flavor boost here from Cajun seasoning, while the classic trinity of Creole cuisine (onions, bell peppers, and celery) makes an appearance as well. Our burger blend of choice is 80% lean ground beef-it has the perfect ratio of juiciness to flavor.

1 1/2 pounds 80% lean ground beef
2 teaspoons Cajun seasoning
3 scallions, sliced (white and green parts)
1/2 cup mayonnaise
2 teaspoons Dijon mustard
1 teaspoon hot sauce
1/4 cup loosely packed fresh flat-leaf parsley leaves, chopped
1 celery stalk, finely chopped (about 1/2 cup)
1 medium yellow onion, sliced into 1/4-inch rounds
1 medium green bell pepper, sliced into 1/4-inch rings
1 tablespoon vegetable oil
4 sesame seed hamburger buns, split

Steps:

  • SET UP: Prepare a grill or grill pan and heat to medium-high heat.
  • FORM THE PATTIES: Gently mix the ground beef, Cajun seasoning, and scallions. Form into four 1/2-inch-thick patties.
  • MIX THE REMOULADE: Combine the mayonnaise, mustard, hot sauce, parsley, and celery in a small bowl. Refrigerate until needed.
  • GRILL EVERYTHING: Grill the patties, flipping once, to desired doneness, about 4 minutes per side for medium. Brush the onion and green pepper with the oil and grill the vegetables until lightly charred and tender, about 5 minutes total.
  • SERVE: Toast the buns on the grill for a minute or so. Put a patty on the bottom bun and top with remoulade. Add some onion and bell pepper, then add the top bun.

This spicy meat sauce is equally delicious served over rice, mashed potatoes or pasta. It's quick and easy, and reheats well. I got the original recipe from another website and made several changes to it to suit our family.

1 lb ground beef
1/2 cup onion, diced
1 teaspoon garlic, minced
28 ounces stewed tomatoes
1 green pepper, diced
2 cups celery, diced
4 teaspoons paprika
2 teaspoons salt
1/8 teaspoon cayenne
1 tablespoon flour

Steps:

  • Brown and drain ground beef, onion and garlic.
  • Add liquid from canned tomatoes [reserve tomatoes].
  • Add green pepper, celery, paprika, salt and cayenne.
  • Heat to boil, then cover and simmer until vegetables are tender, about 20 minutes.
  • Blend flour with 1/4 cup cold water. Add to meat mixture gradually. Cook and stir until slightly thickened.
  • Add reserved tomatoes and heat through.
  • Serve over pasta, rice or potatoes.
  • Note -- this reheats well. It thickens with standing.

1/3 cup mayonnaise
3 tablespoons french zesty deli mustard
2 teaspoons creole seasoning, divided
1 lb ground beef
2 tablespoons Worcestershire sauce
4 hamburger buns, grilled or toasted
tomatoes, slices
onion, slices
lettuce leaf

Steps:

  • In a small bowl, mix together mayonnaise, mustard, and 1 teaspoon (more if you like things spicier) creole seasoning; set aside.
  • In a larger bowl, mix together the ground beef, worcestershire sauce and 1 teaspoon creole seasoning; combine well.
  • Shape beef mixture into 4 patties.
  • Grill or broil patties to desired degree of doneness, turning once.
  • Spread mustard mixture on split hamburger buns.
  • On bun bottom, add lettuce, tomato, onion, and patty; cover with bun top.
  • I dip each bite of my burger in ketchup, too--yummy.

4 cups frozen shredded hash brown potatoes
3 tablespoons canola oil
1/8 teaspoon pepper
1 pound ground beef
1 cup water
1 envelope brown gravy mix
1/2 teaspoon garlic salt
2 cups frozen mixed vegetables
1 can (2.8 ounces) french-fried onions, divided
1 cup shredded cheddar cheese, divided

Steps:

  • In a large bowl, combine the potatoes, oil and pepper. Press into a greased 8-in. square baking dish. Bake, uncovered, at 350° for 15-20 minutes or until potatoes are thawed and set., Meanwhile, in a large saucepan over medium heat, cook the beef until no longer pink; drain. Stir in the water, gravy mix and garlic salt. Bring to a boil; cook and stir for 2 minutes. Add vegetables; cook and stir for 5 minutes. Stir in half of the onions and cheese., Pour over potatoes. Bake for 5-10 minutes. Sprinkle with remaining onions and cheese; bake 5 minutes longer or until cheese is melted.
