HAM-STUFFED BISCUITS WITH MUSTARD BUTTER
These ham-stuffed biscuits are enriched in flavor with brown mustard and butter mixture. Perfect bread recipe for fall.

Steps:
- Spray cookie sheets with cooking spray. In 4-cup glass measuring cup, mix yeast and warm water; let stand 5 minutes. Stir in buttermilk.
- In large bowl, mix flour, sugar, baking powder, salt and baking soda; cut in shortening with pastry blender or fork until mixture looks like coarse meal. Add buttermilk mixture, stirring with fork just until dry ingredients are moistened.
- On well-floured surface, knead dough 4 to 5 times. Roll dough to 1/2-inch thickness; cut with 2-inch round cutter. Place on cookie sheets. Cover loosely with plastic wrap and cloth towel. Let rise in warm place (80°F to 85°F) 1 hour or until doubled in size.
- Heat oven to 425°F. Uncover biscuits. Bake 10 to 12 minutes or until golden.
- In small bowl, stir butter, onion and mustard until blended. Split warm biscuits; spread cut sides with butter mixture. Fill biscuits with ham.

SUNNY'S HAM AND CHEESE BISCUITS WITH HONEY DIJON BUTTER
Steps:
- For the biscuits: Preheat the oven to 400 degrees F.
- Place the self-rising flour in a large bowl and toss with the cheese and ham. Grate the butter into the flour mixture. Pour in the buttermilk and mix gently with a wooden spoon. Once the dough comes together, turn it out onto a floured surface, divide it into 8 equal balls and pat them down lightly.
- Put the balls in a cast-iron pan or on a baking sheet sprayed with cooking spray. Bake until brown, 20 to 25 minutes.
- For the butter: In a bowl, mix together the butter, honey and mustard.
- When the biscuits are done, brush some of the butter over the tops. Serve the biscuits with the remaining butter and the preserves.

- Combine yeast and 1/2 cup warm water in a 4-cup liquid measuring cup, and let mixture stand 5 minutes. Stir in buttermilk.
- Combine flour and next 4 ingredients in a large bowl; cut in shortening with a pastry blender or fork until mixture resembles coarse meal. Add buttermilk mixture, stirring with a fork just until dry ingredients are moistened.

- To prepare the mustard butter, Stir together all ingredients until well blended.
QUICK POPPY SEED MUSTARD HAM BISCUITS
These are great for a quick main meal or as an appetizer. I just re-vamped a recipe that had a lot of steps and took a while to prepare. These are a very tasty fun food. These are requested at all our get-togethers and have made them for more then a few weddings :)

Steps:
- 1. Make biscuits from Mommoo's biscuit recipe that I have posted or use your favorite biscuit recipe. I use the medium cutter it is 2.25 inch cutter or use the 2 1/2 inch cutter for bigger biscuits and the smallest for party size biscuits
- 2. Once biscuits are done set to side to cool drop oven heat to 375 degrees and make the sauce: Combine all ingredients and bring to low boil then reduce heat to low simmer stir every few minutes to keep sauce combined while you are assembling biscuits
- 3. Cut cheese slices into 4's and cut ham slices in half. Put 1 slice of the cut ham on the biscuit folded in half and 1 slice of the cut cheese top with biscuit top and return to the pan they were baked in. If you want more meat add more as you assemble your biscuit.
- 4. Once all the biscuits have been stuffed and returned to the pan stir sauce well and spoon over each biscuit making sure to cover tops well with sauce. Sprinkle with Poppy seeds and return to oven at 375 degrees until cheese has melted 15 to 20 minutes.
BAKED HAM AND CHEESE PARTY SANDWICHES
These small, delicious sandwiches are perfect for any party. They are so good that even the pickiest of eaters will eat these.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- In a bowl, mix together butter, Dijon mustard, Worcestershire sauce, poppy seeds, and dried onion. Separate the tops from bottoms of the rolls, and place the bottom pieces into the prepared baking dish. Layer about half the ham onto the rolls. Arrange the Swiss cheese over the ham, and top with remaining ham slices in a layer. Place the tops of the rolls onto the sandwiches. Pour the mustard mixture evenly over the rolls.
- Bake in the preheated oven until the rolls are lightly browned and the cheese has melted, about 20 minutes. Slice into individual rolls through the ham and cheese layers to serve.

HAM-FILLED BISCUITS WITH HONEY-MUSTARD DIPPING SAUCE
This is another quick and easy snack, appetizer, side to soup and/or salad. Don't skip the sauce! It really makes these tiny little sandwiches. The biscuits can be baked, split and buttered up to 24 hours prior to serving, just store in an air-tight container.

- Heat oven to 400°F.
- Cut each biscuit in half crosswise (to make 2 half-moon shapes); place on ungreased cookie sheet.
- With back of teaspoon, spread 1 tablespoon mustard evenly over tops of biscuits.
- Bake for 10 to 14 minutes or until golden brown.
- Place on wire rack to cool.
- Meanwhile, in a small bowl, combine onions and butter, mix well.
- Split each cooled biscuit; spread both halves with about 1/4 teaspoon butter mixture.
- Roll ham slices loosely and place on bottom biscuit halves; cover with top halves to make sandwiches.
- In another bowl, combine dipping sauce ingredients; blend well.
