Use Toupie Style ham for best results, it is cut about 1/4 inch thick. Personally I rinse the ham under cold water to begin with to remove the excess salt and any preservatives.

6 ounces fruit cocktail, Dole's Very Cherry
4 ounces pineapple chunks
4 ham steaks, Toupie Style
2 tablespoons margarine
2 tablespoons brown sugar
1 teaspoon curry powder, increase if desired (optional)

Steps:

  • Preheat oven to 350°F.
  • Drain all fruit; RESERVE all liquid.
  • Cut each ham slice in half and layer in baking pan.
  • Pour 1/2 of reserved fruit liquid over ham.
  • Bake in 350°F oven for 20 minutes, basting occasionally.
  • Meanwhile melt margarine in saucepan; stir in brown sugar, the remaining reserved fruit liquid and the curry powder.
  • Add fruit to mixture, cover and cook over very low heat for 15 minutes or until ham is ready, stirring occasionally.
  • Transfer ham to serving platter; spoon fruit mixture over ham.

"I make this often for birthdays, and it's delicious," she assures. "It can be reheated, but I never have leftovers. "For easy cleanup, I sometimes place the ham on a large piece of heavy-duty foil, put the fruit mixture on top, then pull up the corners of the foil and twist them to form a bundle," she explains. "I pop it in the oven to bake, and when it's done, there's no pan to wash."

1 can (21 ounces) apple pie filling
1 can (15-1/4 ounces) fruit cocktail, drained
1/4 cup packed brown sugar
1/4 cup butter, melted

Steps:

  • In a large skillet, cook ham in oil over medium heat for 3-4 minutes on each side or until lightly browned. , Meanwhile, in a large microwave-safe bowl, combine the pie filling, fruit cocktail, brown sugar and butter. Cook until heated through, stirring twice. Serve with ham.

1 16-pound bone-in fully cooked whole ham with rind
1/4 cup (about) whole cloves
2 cups mango nectar
1/4 cup apricot preserves
4 teaspoons minced peeled fresh ginger
1 tablespoon grated lemon peel
1 tablespoon grated lime peel
2 teaspoons ground coriander
1/2 teaspoon fresh lime juice
Curried PIneapple Chutney

Steps:

  • Roast ham:
  • Position rack in bottom third of oven and preheat to 350°F. Using sharp knife, cut parallel lines 1 inch apart in fat layer and rind on ham. Cut more lines in crosswise direction, making diamond pattern.
  • Stick 1 whole clove into center of each diamond. Place rack in roasting pan. Place ham on rack. Roast ham 2 hours. Reduce oven temperature to 300°F. Continue to roast ham until golden, about 1 hour.
  • Make glaze:
  • Meanwhile, combine mango nectar and next 6 ingredients in heavy medium saucepan. Bring to simmer over medium heat. Cook until glaze thickens and coats spoon, stirring often, about 14 minutes; set glaze aside.
  • Glaze ham:
  • Remove ham from oven. Maintain oven temperature. Using pastry brush, dab all of glaze over ham, being careful not to dislodge crisp diamonds of fat and rind.
  • Return ham to oven. Roast until ham is heated through and glaze is brown, about 35 minutes.
  • Transfer ham to platter; let stand 15 minutes. Spoon chutney into bowl. Slice ham and serve with chutney.

1 (16 ounce) can sliced peaches
1 (16 ounce) can sliced pears
1 1/2 cups sliced bananas
1 (17 ounce) jar of dark pitted cherries
2 tablespoons cornstarch
1 tablespoon curry powder
1 tablespoon cinnamon
1 cup brown sugar
1/2 cup butter, melted
1/4 cup brandy or 1/4 cup sherry wine

Steps:

  • Drain all fruits and placed them in a 2 qt.
  • buttered baking dish.
  • Combine cornstarch, curry powder, cinnamon, and sugar in small bowl.
  • Sprinkle the sugar mixture over fruit.
  • Combine melted butter and brandy and pour over fruit.
  • Gently toss to coat all the fruit.
  • Bake at 350 degrees for 30 minutes.
