My family has enjoyed this hearty ham salad recipe for years. It came to be an unexpected leftover every time we had ham for a special dinner. Recently, I decided to measure the ingredients, write down the recipe and pass it on to my daughter and daughter-in-law. After my mom took a brief part-time job at a local grocery store deli and learned how the sandwich spread are made. I had to come up with a recipe so that I could make my own and know what went in it--and how old the ingredients were.

- Any type of lunch meat may be used for this spread. I use bologna, boiled ham or a combination of both.
- run meat through grinder with the fine blade, or use a food processor and process until very fine.
- Boil eggs in advance and allow to chill for at least 20 minutes.
- Combine mayonnaise (or Miracle Whip), relish, onion, salt, pepper and eggs.
- Stir in ground meat to combine.
- Chill for at least one hour prior to serving.
- (My mom tipped me off that the way that they were able to get the grocery store version of this dish to look so beautiful, pink and fresh is that they add beet juice to it! So I add a bit of red food coloring if I am serving it on a buffet so that it looks more appealing.
- Cooking time listed is chill time.

NAN'S POOR MAN " HAM" SALAD SPREAD
Growing up in the country yrs ago, we made this and loved it; I just made it again and found it is still as good as when I was a kid who didn't realize she was poor because she was happy on the farm....We couldn't afford the ham for it so we used our version of the poor man's steak and ham...good 'ole bologna....Brings back...

- 1. take the bologna and shredd it up; usually I use a food processor but this time I used my grater and it worked fine with less clean up...Shred it in a large mixing bowl
- 2. Shred the Cheese to the mix; or add the pkg. shredded cheese
- 3. Shred the eggs with the grater; i found this so quick and easy; I use to chop my eggs for egg salad or recipes for chopped eggs but this time they just slid right over the grater and was so fast and easy..shred this into the mix in the bowl
- 4. Shred the whole dills into mix as well...
- 5. Add Mayonnaise to the mixture and stir well to blend it all together....adjust the mayo to taste; more or less depending on desired consistency...
- 6. Taste test to make sure it is good;))) Put in container in fridge to chill and use it for sandwiches... So easy and so delicious....like I said earlier; it is my version of the poor man's ham salad and just as good;))))
INDIANA HAM SALAD SANDWICH SPREAD (NO HAM)
Its actually made from bologna but we always called it ham salad. This was very popular in the 1950's and 60's in Northern Indiana. - 1. Mix sweet pickle relish, prepared mustard, and mayonnaise to make dressing. Stir dressing into meat and eggs. Mix well. Cover and chill. Makes 1 quart of sandwich filling.

- Shred cheese in food processor and set aside. Use the chopping blade in the food processor to finely mince the celery, using pulse. Set aside. Finely mince the ham, using pulses. Add the cheese and pulse once or twice to mix.
- Add ham, cheese and celery to mixing bowl. Mix together the mayo and mustard, stir into the ham mixture and mix well.
- Spread on bread for sandwiches or serve with assorted crackers.

- 1. Use a food processor to pulse ham. Set aside.
- 2. Peel eggs, set aside yolks. Put coarsely chopped egg whites, celery, relish and onions into food processor. Pulse until finely chopped. Add to ham.
- 3. Mash egg yolks with a fork, mix with mayo and mustard. Add that to the ham and stir until well blended. Add the vinegar - more if it seems too dry.
- 4. Chill for ah hour or more until ready to serve. Can be frozen - thaw in fridge.
