CHEESY HAM AND POTATO CASSEROLE
This Ham and Potato Casserole is a delicious and very simple dinner! Ham and potatoes smothered in a homemade cheesy sauce! It makes a big meal and it's not expensive to make!

Steps:
- Preheat oven to 400°F.
- Over medium heat, melt butter in a saucepan. Add onion and stir until softened, about 4 minutes. Add flour and cook an additional 2 while stirring.
- Pour in pour in chicken broth and milk all at once. Whisk over medium heat until thick and bubbly. Remove from heat and stir in cheese.
- Place ½ of the potatoes in a 9×13 pan. Sprinkle with ham and peas. Top with remaining potatoes. Pour sauce over top.
- Cover with foil and bake 45-50 minutes or until potatoes are fork tender. Remove foil (carefully, it will steam), top with remaining cheese and bake an additional 15-20 minutes or until potatoes are soft and cheese is lightly browned.

CREAMY HAM, PEA, & POTATO CASSEROLE

Steps:
- In a large skillet, over medium heat, melt 1/4 cup of butter. Using a whisk, add 1/2 cup of flour and whisk briskly to create a thick paste.
- Slowly add in 2 1/2 cups of milk, whisking continually, until thick and creamy. If sauce is too thick add in more milk until the creamy consistency of gravy.
- Add in 1/2 tsp. of salt and 1/2 tsp, coarse black pepper.
- Spray a deep, 4 quart, baking dish, with cooking spray.
- Place 1/3 of the sliced, drained potatoes in the bottom of the baking dish. Place 1/2 the ham slices or 1 1/2 cups of diced ham on top of the potatoes. Sprinkle half the can of drained peas over the ham.
- Pour 1/3 of the white cream sauce over the top of the layers.
- Repeat the layers again. 1/3 of sliced potatoes, other half of the ham, other half of the can of peas. 1/3 of the cream sauce.
- Top with last layer of potatoes and cream sauce. Ending with cream sauce.
- Sprinkle with Paprika.
- Cover and bake in a 350°F oven for one hour. Remove cover and brown for 10 minutes.
- Serve Immediately.

- In a large bowl, combine the potatoes, contents of sauce mix and water. Stir in the peas and carrots, ham, soup, mushrooms, milk, sour cream and pimientos. HAM, PEAS AND POTATO CASSEROLE RECIPE

Steps:
- Add chopped celery and salt to boiling water. Cook for 10 minutes. Add potatoes and cook 15 minutes longer. Drain and reserve liquid. Add enough milk to potato water to make 1 1/2 cups. In a large saucepan melt butter. Add onion and cook on low heat until it turns yellow. Add flour and blend well. Gradually add liquid, stirring constantly until sauce thickens. Boil for 1 minute. Remove from heat and add ham, parsley, celery, potatoes and peas. Spoon into greased 1 1/2 quart casserole dish and top with grated cheese. Bake Uncovered at 325 degrees for about 30 minutes or until hot and bubbly. If refrigerated before baking, bake at 350 degrees for 45 minutes.
CHEESY LEFTOVER HAM AND MASHED POTATO CASSEROLE
This is something I did one night when I had a bunch of leftovers that turned into one of my favorite comfort foods. You could switch out just about anything for anything of a similar type, chicken for the ham, different soups, etc. Make it as is or use your imagination.

- Preheat the oven to 375 degrees F (190 degrees C).
- Mix 1/2 of the Cheddar cheese and 1/2 of the onions into the mashed potatoes. Spread potato mixture over the bottom and up the sides of a 2-quart casserole dish to form a shell.
- Combine ham, frozen peas and carrots, mushroom soup, mustard, garlic, and pepper in a bowl; mix well. Spoon mixture into the mashed potato shell. Cover loosely with aluminum foil.
- Bake in preheated oven for 45 minutes. Remove from oven and sprinkle remaining Cheddar cheese and onions over the top. Bake uncovered until cheese is melted, about 5 minutes. Remove and let rest for 5 to 10 minutes before serving.

- Peel and slice potatoes, carrots, and onion.
- Mix ham cubes with vegetables.
- spray 11x14 baking dish with Pam.
- Put vegetables in dish.
- Mix soups and milk with a wire whisk.
- When smooth add to vegetables and ham.
- Mix well then sprinkle with salt& pepper.
- You may cover the top with sliced Velveeta cheese if you prefer.
- Cover with aluminum foil and bake 1 hour at 350 or until vegetables are tender.
- Note: When ham prices are low, usually at Christmas& Easter I always buy 2 hams, cube it, then can it into pint jars.
- This way the ham is always tender and has it's own natural juices. I mix the juices with the soups.

- Preheat oven to 350°F (175°C).
- Lightly grease a 9x13 inch baking dish.
- Place potatoes in a large pot of water, and bring to a boil.
- Boil until slightly tender, about 12 minutes.
- Drain, and transfer to a large bowl.
- Mix sour cream, milk, cream of chicken soup, Cheddar cheese, green onions, ham, salt and pepper with the potatoes.
- Spread mixture in the prepared baking dish. Sprinkle with bread crumbs, and drizzle with butter.
