2 cups cooked smoked ham, cut up
1 cup swiss cheese, shredded
1/3 cup green onions or 1/3 cup onion, chopped
4 eggs
2 cups milk
1 cup Bisquick baking mix
1/4 teaspoon salt
1/8 teaspoon ground black pepper

Steps:

  • Preheat oven to 400F (205C).
  • Grease 10" pie plate.
  • Sprinkle ham, cheese and onion in plate.
  • Place remaining ingredients in blender and beat on HIGH until smooth (about 15 seconds).
  • Pour into plate.
  • Bake at 400F (205C) for 35 to 40 minutes, or until golden brown and knife inserted in center comes out clean.
  • Allow to cool for 5 minutes.
  • NOTE: High altitude adjust cooking time to 45 minutes.

'I am never without a batch of this mix in cupboard,' writes Martha Warner of Lacombe, Alberta. 'One of my favorite ways to use it is in a savory pie made with leftover meat and vegetables. But try it in any recipe that calls for biscuit mix.'

4 ½ cups all-purpose flour
7 ½ teaspoons baking powder
1 ½ teaspoons salt
1 cup shortening
2 cups diced fully cooked ham
1 cup shredded Swiss cheese
2 medium (4-1/8" long)s green onions, chopped
3 large eggs eggs
1 ½ cups milk
¼ teaspoon ground mustard
1 dash Dash pepper

Steps:

  • In a large bowl, combine flour, baking powder and salt. Cut in shortening until crumbly. Stir in an airtight container in a cool dry place for up to 6 months.
  • To prepare pie: In a bowl, combine the ham, cheese and onions. Trasher to a greased 9-in. pie plate. In a mixing bowl, combine the eggs, milk, mustard, pepper and 1 cup mix; beat just until blended. Pour over ham mixture. Bake at 400 degrees F for 30-35 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.

This recipe is easy to make. They call it impossible pie because it makes its own crust. Was really doubtful when I fixed it the first time. Have run across many more recipes that are like this and I just love it.

1 c shredded natural swiss cheese (4oz.)
1/4 c chopped green onion or chopped onion
4 eggs
2 c milk
1 c baking mix ( i use bisquick)
1/4 tsp salt
1/8 tsp fresh ground pepper

Steps:

  • 1. Heat oven to 400 degrees. Grease a 10" pie plate. Sprinkle ham, cheese, and onion in the plate. Beat remaining ingredients until smooth, 15 seconds on high or 1 minute with mixer. Pour into plate over other ingredients. Bake until golden brown and knife inserted in center comes out clean. 35 to 40 minutes. Cool 5 minutes and serve.
