Steps:
- Preheat oven to 400F (205C).
- Grease 10" pie plate.
- Sprinkle ham, cheese and onion in plate.
- Place remaining ingredients in blender and beat on HIGH until smooth (about 15 seconds).
- Pour into plate.
- Bake at 400F (205C) for 35 to 40 minutes, or until golden brown and knife inserted in center comes out clean.
- Allow to cool for 5 minutes.
- NOTE: High altitude adjust cooking time to 45 minutes.

'I am never without a batch of this mix in cupboard,' writes Martha Warner of Lacombe, Alberta. 'One of my favorite ways to use it is in a savory pie made with leftover meat and vegetables. But try it in any recipe that calls for biscuit mix.'

- In a large bowl, combine flour, baking powder and salt. Cut in shortening until crumbly. Stir in an airtight container in a cool dry place for up to 6 months.
- To prepare pie: In a bowl, combine the ham, cheese and onions. Trasher to a greased 9-in. pie plate. In a mixing bowl, combine the eggs, milk, mustard, pepper and 1 cup mix; beat just until blended. Pour over ham mixture. Bake at 400 degrees F for 30-35 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.

This recipe is easy to make. They call it impossible pie because it makes its own crust. Was really doubtful when I fixed it the first time. Have run across many more recipes that are like this and I just love it.

HAM 'N' CHEESE PIE
Steps:
- In a greased 10-in. quiche dish or pie plate, layer the ham, Swiss cheese, bacon, cheddar cheese, onion and green pepper. Place the remaining ingredients in blender in the order given; cover and process for 35-40 seconds. Pour over the meat, cheese and vegetables; do not stir. , Bake, uncovered at 350° for 30-35 minutes or until set and lightly browned. Let stand for 5 minutes before cutting.
