HAM AND CHEESE OMELETTE
So easy and so good. I usually saute the ham before adding it to the omelette so it gets crispy and more flavorful.

- Heat oil in a skillet over medium heat. Add ham and cook until browned and crispy, stirring frequently, about 7 minutes.
- Beat eggs with 1 teaspoon chives, salt, and pepper in a small bowl and add to skillet, tilting skillet to distribute egg evenly on bottom of skillet. Cook until omelette has set at the edges. Sprinkle Cheddar cheese on top and fold omelette in half. Flip and cook until egg is entirely set and cheese inside has melted, 30 seconds to 1 minute. Slide onto a plate and sprinkle with remaining 1 teaspoon chives.

Steps:
- Beat eggs, add mushrooms and ham.
- Heat frying pan, and coat with cooking spray or oil.
- Add egg mixture to hot pan and cook until almost set. Flip over and when egg is set, top with cheese. Cook until cheese is melted.
- Serve with hashbrowns, toast, or rice.
- Sometimes I even add chopped green onion, or any color pepper we have on hand.

This omelette is easy to make when you are in a hurry. it does not need a lot of ingredients, but still tastes great, and is a great head start to the mornings!

- Wash and chop green onion.
- Wash and slice ham.
- In a mixing bowl, combine eggs, ham, milk, onion, salt and pepper. Beat well.
- Heat skillet on medium and melt margarine.
- Pour egg mixture into skillet. As the omelette begins to set, lift up edges with egg flipper so uncooked portion of egg can flow under the cooked portion.
- When eggs are set but the top is still moist, sprinkle ¾ of the cheese over it.
- Fold one edge of the omelette over the cheese, then sprinkle the remaining cheese over the top.
- Slide omelette onto the plate and cut into portions.

- Mix most of the cheese with the ham or gammon, egg yolks, mustard, herbs and some seasoning. Whisk egg whites until stiff. Using a rubber spatula, gently fold the whites into the yolk mixture until evenly mixed.
- Heat a splash of olive oil in a small non-stick frying pan. Pour mixture into the pan and cook for 4 mins until the underside is set and browned. Sprinkle over the remaining cheese and grill for 2 mins until cheese is bubbling and golden.

- Place the egg yolks in a bowl with the milk and combine. In a separate bowl, whisk the egg whites to medium soft peaks. Gently fold into the egg yolk mixture. Set aside (do not allow to sit for too long).
- Spray a small non-stick frying pan with oil spray and place over medium heat. Add the baby spinach and cook for 1-2 minutes or until wilted. Remove from pan and wipe pan clean. Spray pan again and return to the heat.
- Pour in the egg mixture and cook for 2-3 minutes or until surface is nearly firm. Place the ham, spinach and cheese over half the omelette, then fold over the other side to enclose the filling. Serve immediately. Repeat ingredients and method for additional omelettes.

HAM & CHEESE OMELETTE WITH SALSA
Steps:
- In a small bowl, whisk together first 3 ingredients. In a medium-sized pan, melt garlic butter over medium-high high. Add egg and cream mixture. Cook for 2-3 minutes until omelet is nearly cooked through. Add green onions, ham, and cheese to one side of the omelet. Fold omelet in half and cook for 1 minute until cheese is melted. Transfer to a plate and top with salsa. Enjoy!

- Gather and prep all ingredients (wash, dry and chop asparagus, beat eggs, mince ham, etc...)
- Melt butter in small nonstick skillet over medium heat; add chopped asparagus; sauté for 1 to 2 minutes, until tender.
- Mix salts into beaten eggs; pour into the skillet; evenly rearrange asparagus pieces in skillet. Cook over medium heat for one to two minutes, until eggs begin to firm on the bottom.
- Evenly sprinkle minced ham over eggs; cook and gently swirl the egg mixture around edge of pan, lifting edge of omelette to allow uncooked egg to come in contact with skillet and finish cooking, if necessary.

- 1. Preheat oven to 350 degrees F. Spray 12-cup muffin tin with nonstick spray. In a large bowl, whisk together the eggs, milk,salt & pepper. Equally divide ham and 1/2 cup of cheese between the muffin cups. Reserve the extra 2 tablespoons of cheese for later. Pour egg mixture on top of the cheese and ham, so that muffin cups are a little more than 1/2 full. (They will rise like a souffle as they bake, then deflate when you pull them out of the oven.) Bake for about 20 minutes until eggs are set, then remove from oven. Sprinkle remaining 2 tablespoons of cheese over the muffins, then bake for a few minutes longer until cheese is melted. Sprinkle with chives and serve warm, using a butter knife to remove the muffins from the cups.

- In a large bowl, whisk eggs and milk until combined. Stir in cheese and ham. Pour mixture into the prepared baking dish.
