CHEESY HAM CASSEROLE

This easy cheesy ham casserole is the perfect way to use up your leftover ham and stretch it to feed a crowd!

Number Of Ingredients 16

1 pound medium shells
⅓ cup butter
⅓ cup flour
1 ¾ cups milk
1 cup light cream (10-12% M.F.)
½ teaspoon dijon
1 teaspoon onion powder
¼ teaspoon thyme
salt & pepper to taste
3 cups sharp cheddar (divided)
1 cup gruyere cheese
2 tablespoons parmesan cheese
2 cups diced ham
2 tablespoons butter (melted)
½ cup Panko bread crumbs
1 tablespoon fresh parsley

Steps:

  • Preheat oven to 400°F. Mix together topping ingredients, set aside.
  • Cook shells al dente according to package directions. Drain well.
  • Meanwhile, melt butter, flour and seasonings in a saucepan. Allow to cook 1 minute.
  • Slowly add in cream and milk while whisking after each addition. The mixture will seem thick at first but will smooth out with each addition.
  • Once all of the cream/milk is added, whisk while bringing to a boil over medium heat. Allow to boil 1 minute.
  • Remove from heat and stir in 2 ½ cups cheddar, gruyere cheese, and parmesan until smooth.
  • Mix cheese sauce with cooked pasta and ham and place in a 9x13 pan. Add topping and remaining ½ cup of cheese.
  • Bake 22-26 minutes or until heated through and topping is browned. Cool 5 minutes before serving.

12 large eggs
1 cup 2% milk
1 teaspoon salt
1/2 teaspoon pepper
1 package (30 ounces) frozen shredded hash brown potatoes, thawed
2 cups cubed fully cooked ham (about 1 pound)
1 medium onion, chopped
4 cups shredded cheddar cheese

Steps:

  • Whisk together first 4 ingredients. Place a third of the potatoes in a greased 5- or 6-qt. slow cooker; layer with a third of each of the following: ham, onion and cheese. Repeat layers twice. Pour egg mixture over top. Refrigerate, covered, overnight., Cook, covered, on low 4-5 hours, until casserole is set and edges begin to brown. Turn off slow cooker. Remove insert; let stand, uncovered, 30 minutes before serving.

A healthy version of a baked ham and cheese pasta casserole with sage that is just as comforting as the original. Your entire family will love this dish, and it makes great leftovers too!

1 pound whole wheat penne
16 ounces diced ham
1/2 cup loosely packed fresh sage leaves (thinly sliced, dived)
3 tablespoons unsalted butter
1 small yellow onion chopped
3 teaspoons minced garlic
1/4 cup all-purpose flour
2 1/2 cups nonfat milk
1/4 cup half and half
3/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/2 cup plain full-fat Greek yogurt (do not use fat free or it may curdle)
1 cup freshly grated sharp white cheddar cheese
3/4 cup Panko breadcrumbs
3 tablespoons extra virgin olive oil

Steps:

  • Bring a large pot of salted water to boil. Add the pasta to the water and cook until al dente, according to package directions. Drain and set aside.
  • Preheat the oven to 350 degrees F, and lightly grease a 9x13 or similar baking dish.
  • Melt the butter in a Dutch oven or similar large, deep pot over medium heat. Add the onion and sauté until beginning to soften, about 6 minutes.
  • Sprinkle in the flour, then cook whisking often, until the flour is golden brown, about 2 minutes. Stir in the garlic and cook 30 seconds.
  • Gradually pour in milk, whisking constantly, then the half and half. Continue to cook until the sauce simmers and thickens, about 7 minutes.
  • Remove from heat, then stir in the salt and nutmeg, then the Greek yogurt, cheddar, and half of the sage.
  • Add the drained pasta and ham, toss gently to coat.
  • Transfer the mixture to the prepared baking dish.
  • Combine the breadcrumbs and olive oil in a small bowl and sprinkle over the top of the pasta. Cover the dish with foil, then bake for 10 minutes covered. Uncover and bake 10 additional minutes, until the crumbs are golden and the pasta is hot and bubbly. If desired, turn your broiler to high to finish browning the crumbs, watching them carefully so that they do not burn. Remove baked pasta from the oven, sprinkle with remaining sage, and serve.

3 cups frozen loose-pack diced hash brown potatoes, thawed
1 large red apple, cored and chopped
1 teaspoon dried sage, crushed
1 tablespoon butter
1 cup diced cooked ham
1 1/2 cups milk
4 eggs
3/4 cup shredded cheddar cheese (I like sharp)
1/4 teaspoon salt

Steps:

  • Press thawed potatoes between paper towels to remove moisture; set aside.

6 ounces thinly-sliced deli ham, torn into quarters
4 whole-wheat English muffins, split, toasted and halved
1/2 cup sundried tomatoes not in oil (about 14), sliced
4 scallions, trimmed and cut into 2-inch pieces
2/3 cup shredded extra-sharp Cheddar, divided
4 large eggs
3 large egg whites
3 cups reduced-fat milk (2 percent)
1 tablespoon Dijon mustard
Kosher salt and freshly ground black pepper

Steps:

  • Lightly mist a round 2-quart casserole dish with cooking spray. Alternately place the ham and muffins in the dish to make a shingled pattern. Sprinkle the sundried tomatoes, scallions and 1/3 cup cheddar over the casserole.

2 tablespoons grainy mustard
1 tablespoon thinly sliced fresh chives
1 teaspoon honey
1/2 to 1 crisp apple, such as Gala or Pink Lady
1 tablespoon lemon juice
12 Hawaiian sweet rolls, split
4 ounces sharp Cheddar, sliced
8 ounces thinly sliced Black Forest ham
1 1/2 cups baby arugula

Steps:

  • Stir the relish, mustard, chives and honey together in a small bowl.
  • Cut the apple off its core and thinly slice into half-moons. Toss the apples with the lemon juice to keep them from browning.
  • Spread the rolls on both sides with the relish mixture. Build sandwiches with the Cheddar, apples, ham and arugula.
