HAM & SWISS ON RYE STRATA
My favorite deli sandwich ingredients all whipped up into a cozy hot breakfast treat! This is easy enough for any occasion, and elegant enough to impress the pickiest brunch connoisseur!

- Preheat oven to 400 degrees. Spread bread cubes in a single layer on a baking sheet; bake 20 minutes, till slightly dried.
- While bread is baking, heat a large skillet over medium heat. Add ham and saute a few minutes. Add oil (if desired) and stir in onion, garlic, and mushrooms. Saute till onion and garlic are golden and soft and mushrooms have released their liquid. Remove from heat and set aside.
- Whisk together milk, egg, thyme, pepper, and salt.
- To assemble the strata, layer half the bread cubes in the bottom of a lightly greased 9 by 13 inch glass baking dish. Sprinkle with half the ham mixture and 1/3 of the swiss cheese. Repeat layers. Gently pour egg mixture over layers and top with remaining 1/3 swiss cheese. Cover tightly with aluminum foil and refrigerate* at least 4 hours, preferably overnight.
- To bake the strata, preheat oven to 350 degrees. Bake strata, still covered with foil, for 30 minutes. Remove foil and continue baking for 20-30 minutes, until cheese on top is melted and egg portion is set (check by inserting a knife in the center--if it comes back without egg on it, you're set!).
- Let strata rest 5 minutes before serving.
- *Refrigeration time not included in recipe prep/cooking time.

- In a greased 13x9-in. baking dish, layer half the noodles, ham and cheese. , In a large bowl, combine the soup, sour cream, green pepper and onion; spread half over the top. Repeat layers. Bake, uncovered, at 350° for 40-45 minutes or until heated through.

Steps:
- 1. Bring a large pot of water to a boil and add onion flakes and pasta; cook according to directions on package. Drain and return to pot.
- 2. Stir in ham, soup, milk and caraway seed. (Add more milk if needed to get consistency you want). Add salt and pepper, to taste.
- 3. Spoon half the mixture into a casserole dish that has been coated with non-stick cooking spray. Place 3 slices of cheese over this layer and top with remaining pasta mix. Top with remaining slices of cheese.
- 4. Cover with foil and bake in pre-heated 325F oven for 20 minutes. Remove foil and bake another 10 minutes.
- 5. Serve.
HAM & SWISS PARTY RYE BITES
My sister-in-law used to make these for her mother's Christmas party every year. One year I made them for my aunt's birthday party on New Year's Eve and although I made alot, they went fast. I bet they'll go fast at your house too!

- Lay the party rye out on baking sheets. Place a generous amount of ham on top. On top of ham, place a piece of swiss cheese.
- To make it easier I usually slice the ham and cheese after unwrapping it, into pieces large enough to fit each slice of the party rye.
- Preheat oven to 400 degrees. Bake until cheese melts.
- Have some mustards out in case your guests would like to put some on their party ryes.
- These may be made earlier in the day, and refrigerated up until an hour before placing in oven.
- Buy more or less depending on your party size.

- Preheat an oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. - Heat oven to 350°F. Lightly spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- In medium saucepan, heat water, whipping cream, butter, salt and pepper to boiling. Gradually stir in grits; reduce heat. Cover; simmer 5 to 7 minutes, stirring occasionally. Add 1/2 cup of the cheese and the garlic, stirring until cheese is melted. Cool 10 to 15 minutes. Stir in 2 of the eggs; pour into baking dish. Bake 20 minutes; remove from oven. Increase oven temperature to 400°F.
- Sprinkle remaining 1 1/2 cups cheese, the ham and onions over partially baked crust. In medium bowl, beat remaining 6 eggs and 1/2 cup of the milk with whisk; pour over ham mixture. Stir together remaining 1 1/2 cups milk and the Bisquick mix. Pour over egg mixture, spreading to edge of dish with back of spoon. Bake 35 minutes. Cool 10 minutes; cut into squares.
