10 ounces spaghetti
6 ounces frozen peas
1 ounce butter
1 large leek, chopped
4 eggs
1/8 teaspoon salt
1/8 teaspoon pepper
5 ounces ham, thick slice,cut into cubes
3 ounces cheddar cheese, grated

Steps:

  • Bring a large pot of salted water to a boil.
  • Add pasta and cook for 6 minutes.
  • Add frozen peas and continue to boil for 3 additional minutes.
  • while pasta is cooking, heat butter in a small pan, add leek and cook over medium heat for 3 minutes.
  • beat eggs in a bowl and season with salt and pepper.
  • drain pasta and peas and return to the pot.
  • add leeks, eggs, ham and half of the cheese mix well heat on low for 2-3 minutes to make sure cheese is melted.
  • transfer to serving dish and top with remaining cheese.

ORECCHIETTE WITH HAM AND LEEKS

3/4 cup fine semolina flour
1 scant cup all-purpose flour, plus more for dusting
Kosher salt
2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
2 leeks (white and light green parts only), halved lengthwise and sliced
1 cup diced ham
2 cloves garlic, finely chopped
1 tablespoon fresh thyme
1 cup fresh or thawed frozen peas
1/2 cup low-sodium chicken broth
1/2 cup heavy cream
Juice of 1/2 lemon
Freshly ground pepper
1/2 cup grated parmesan cheese (about 1 ounce)

Steps:

  • Make the dough: Whisk the semolina and all-purpose flour in a large bowl. Mound on a work surface and make a well in the center. Pour 1/2 cup cold water into the well. Using a fork and working your way around the well, gradually mix the flour into the water. Continue mixing until the dough is crumbly. If the dough is too dry to come together, add up to 1/4 cup more water, a little at a time.
  • Knead the dough until smooth and elastic, about 6 minutes. Wrap in plastic wrap and let rest at room temperature,30 minutes. (The dough can be made a day ahead and refrigerated; bring it to room temperature before rolling.)
  • Divide the dough into 4 pieces. Working with 1 piece at a time (and keeping the other pieces wrapped), roll the dough on the counter with your hands into a 1/2-inch-thick log. With a knife or bench scraper, cut the log into 1/2-inch pieces; roll each piece into a small ball. With floured hands, press your thumb into a dough ball and drag it toward you to form a bowl shape; put the dough on the tip of your index finger and turn it inside out. Repeat to form the remaining orecchiette; transfer to a floured baking sheet as you go.
  • Bring a large pot of salted water to a boil. Meanwhile, melt the butter with the olive oil in a large skillet over medium heat. Add the leeks and cook, stirring occasionally, until softened but not browned, 7 to 8 minutes. Add the ham and cook until heated through, about 3 minutes. Stir in the garlic and thyme and cook1 minute. Add the peas and broth and bring to a simmer. Stir in the heavy cream and lemon juice, season with salt and pepper and simmer until the peas are tender, about 5 minutes for frozen, 10 minutes for fresh.
  • Transfer the orecchiette to a colander and shake over the baking sheet to remove the excess flour. Add the orecchiette to the boiling water and cook until al dente, about 8 minutes. Remove with a strainer or slotted spoon and add directly to the skillet with the ham and peas. Toss, adding spoonfuls of the pasta cooking water to loosen, if necessary. Remove from the heat and stir in the parmesan.

1 package (16 ounces) penne pasta
1/4 cup olive oil
3 tablespoons butter
3 cups cubed fully cooked ham
1 large sweet red pepper, finely chopped
1 medium onion, chopped
2 garlic cloves, minced
1/4 cup minced fresh parsley
1-1/2 teaspoons minced fresh basil or 1/2 teaspoon dried basil
1-1/2 teaspoons minced fresh oregano or 1/2 teaspoon dried oregano
1 can (14-1/2 ounces) chicken broth
1 tablespoon lemon juice
1/2 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions; drain. Meanwhile, in a large skillet, heat oil and butter over medium-high heat. Add ham, red pepper and onion; cook and stir 4-6 minutes or until ham is browned and vegetables are tender. Add garlic and herbs; cook 1-2 minutes longer., Stir in broth and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, 10-15 minutes or until liquid is reduced by half. Add pasta; toss to combine. Sprinkle with cheese.

3 tablespoons unsalted butter
4 small leeks (white and light green parts only), thinly sliced
2 tablespoons fresh thyme
Kosher salt and freshly ground pepper
8 ounces ham steak (or leftover ham), cut into 1/2-inch pieces (about 1 1/2 cups)
3 tablespoons all-purpose flour
1 2/3 cups half-and-half
2 cups shredded fontina cheese (about 6 ounces)
6 ounces bow-tie pasta (about 2 1/2 cups)
2 cups frozen peas
1/4 cup grated parmesan cheese

Steps:

  • Melt the butter in a large ovenproof skillet over medium-high heat. Add the leeks, thyme, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring, until the leeks are tender, 8 to 10 minutes. Add the ham and cook until warmed through, about 2 minutes. Add the flour and cook, stirring, until moistened, 1 minute. Add the half-and-half and bring to a boil, then reduce to a simmer and cook until slightly thickened, about 2 minutes. Stir in 1 cup fontina until melted.
  • Meanwhile, preheat the broiler and bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente, adding the peas in the last 2 minutes of cooking. Reserve 1/2 cup cooking water, then drain the pasta and peas.
  • Add the pasta and peas to the skillet and toss to coat, adding the reserved cooking water as needed to loosen; season with salt and pepper. Top with the remaining 1 cup fontina and the parmesan. Broil until lightly browned, 4 to 5 minutes.

3 leeks , sliced into 1cm chunks
300ml vegetable stock
85g wafer-thin ham , roughly torn
8 fresh lasagne sheets
200g tub half-fat crème fraîche
1 tbsp wholegrain mustard
50g strong cheddar , grated
85g breadcrumb

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Simmer the sliced leeks with the stock in a covered pan for 5 mins until tender. Drain the leeks, reserving the stock, then mix them with the ham and some seasoning. Divide the mixture into 8, spoon along the middle of each lasagne sheet, roll up, then tuck into an ovenproof dish, joined sides down.
  • Mix 300ml of the reserved stock with the crème fraîche, mustard and most of the grated cheese. Season, then pour over the cannelloni. Sprinkle with the breadcrumbs and remaining cheese, then bake for 20 mins until the top is golden and crisp, and the leek filling is piping hot. Great with a green salad.
