I am cheap and won't buy a panini press. I fry these on a flat non-stick pan, flattening them with a cast iron frying pan (I just leave it on top of the sandwich while it cooks). I used a sweet Bavarian mustard from Aldi, you could use another mustard but I would try and stick to a sweeter brown if you have it. Ingredient amounts are estimated. Simple and good.

1 lb ham, shaved
1 loaf of good european-style bread, sliced
8 slices havarti cheese
1/4 red onion, sliced very thinly
sweet bavarian mustard
mayonnaise
butter for the bread

Steps:

  • Build sandwiches by spreading a slice of bread with mayo, another with mustard.
  • Stack ham, cheese and onion.
  • Butter both sides of sandwich.
  • Place in frying pan over medium-high heat. Flatten with a cast iron pan or something heavy (a plate and brick might work too).
  • Flip, slice in half and enjoy.

12 thin slices whole-grain bread
1/4 cup fig jam or 1/4 cup 100% fruit spread
1 tablespoon unsalted butter, at room temperature
1 1/2 teaspoons finely chopped fresh tarragon or 1 1/2 teaspoons fresh thyme
1/4 teaspoon sea salt, to taste
12 ounces sliced turkey ham (or Black Forest ham, smoked turkey breast)
12 ounces sliced havarti cheese
12 fresh tarragon leaves or 12 fresh thyme sprigs

Steps:

  • Preheat the oven to 400°.
  • Arrange the bread in a single layer on two large baking sheets.
  • Bake until lightly toasted, about 7 minutes.
  • Remove from the oven and immediately cut each slice into a round with a large (3 inch) biscuit or cookie cutter.
  • Stir together the jam, butter, tarragon, and salt in a small bowl until very well combined.
  • Spread the jam mixture on top of each toast piece.
  • Cut the ham and cheese slices into the same size rounds as the toast pieces.
  • Place one ham slice, then one cheese slice onto each toast.
  • Place crostini onto a large baking sheet and bake at 400° until the cheese is melted, about 6 minutes.
  • Remove from the oven, place crostini onto a large platter, top each with a tarragon leaf, and enjoy while warm.

16 frozen soft pretzels (such as SuperPretzel®), thawed

Steps:

  • Preheat an outdoor grill to medium heat (325 to 375 degrees F (160 to 190 degrees C). Lightly oil grill grate.
  • Divide ham and cheese among 8 pretzels arranged salt-sides down on a baking sheet. Top with remaining pretzels, salt-sides up.
