1 cup cubed ham
1 cup shredded cheddar cheese
Generous sprinkling of freshly ground pepper
2 cups prepared waffle batter
Cooking spray
Maple syrup, for serving

Steps:

  • Fold the ham, cheese and pepper into the prepared waffle batter in a large bowl.
  • Preheat a waffle iron and coat with cooking spray. Pour some batter into the waffle iron, spreading it into the corners. Close the lid and leave it closed until the waffles are cooked through and golden brown in spots, 6 to 8 minutes. Continue until all the batter has been used.
  • Cut the waffles into sticks, transfer to plates and serve with maple syrup.

1 slice ham, chopped
non-stick ooking spray

Steps:

  • 1. Plug in mini waffle maker to heat.
  • 2. Crack the egg into a small bowl and whisk with a fork. Add the cheese, chopped ham and stir to combine.
  • 3. Spray the waffle iron with non-stick cooking spray. Pour half the egg mixture into the heated waffle iron and cook for about 3 minutes or until lightly brown.
  • 4. Remove waffle carefully and place on a cooling rack. Cook the second waffle.

2 cups whole milk
1/3 cup vegetable oil
2-1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1-1/2 cup shredded part-skim mozzarella cheese
1/2 to 3/4 cup cubed fully cooked ham or Canadian bacon
Fried eggs, optional

Steps:

  • In a bowl, beat eggs, milk and oil. Combine flour, baking powder and salt; add to egg mixture and beat until smooth. Fold in cheese and ham or bacon. , Bake in a waffle iron according to manufacturer's directions until golden brown. Top each waffle with a fried egg if desired.

3 eggs
2 cups milk
1/4 cup vegetable oil
1/4 cup applesauce
1 cup whole wheat flour
1 cup all-purpose flour (or use all whole wheat if you have ww pastry flour)
1/2 cup quick-cooking grits (uncooked)
2 teaspoons baking powder
2 teaspoons sugar
1/4-1/2 teaspoon salt
1 1/2 cups part-skim mozzarella cheese, shredded (I'm sure cheddar would be delicious too)
1/2-3/4 cup cooked ham, cubed or finely chopped

Steps:

  • In a bowl, beat eggs, milk and oil, and applesauce. Combine flour, baking powder and salt and sugar; add to egg mixture stir gently until combined (a few lumps may remain). Fold in cheese and ham.
  • Bake in a waffle iron according to manufacturer's directions until golden brown. Top with a fried egg or butter and honey. Yield: about 11 large waffles.
