250 ml milk (1 1/8 cups)
1 tablespoon butter
1 tablespoon flour (mixed to a paste mixed with the butter for a paste)
140 g button mushrooms, cut into quarters (5 oz)
1 tablespoon olive oil
140 g ham, chopped into small pieces (5 oz)
85 g leftover cheese, cut into small pieces (3 oz)
1 tablespoon chopped herbs, tarragon, parsley and chives all work well
500 g puff pastry (1 1/8 lbs)
1 egg, beaten

Steps:

  • The first thing to do is to make a thick white sauce that will be the base of the turnover filling. Bring the milk to a simmer, then add the butter and flour paste. Whisk the paste into the simmering milk and allow it to boil for 3-4 mins, whisking gently all the time to prevent it from scorching. You should now have a very thick white sauce. Cool the sauce in a bowl. Fry the mushrooms in the oil for 3-5 mins until golden, then leave to cool.
  • Place the ham, cheese and mushrooms into a bowl, then gradually add the white sauce until everything is well coated. Finally, add the herbs.
  • Roll out the pastry on a floured surface to about the thickness of a £1 coin (1/16 inch) and cut out 4 saucer-size rounds re-rolling the trimmings if you need to. Brush the edges of each round with beaten egg. Spoon the mixture onto 1 side of each round, then fold over and seal the edges well. The turnovers can now be frozen for up to 1 month. Brush the turnover with the remaining egg, then chill for 30 minutes.

  • Heat oven to 200C/ fan/gas 6. Place the turnovers on a baking sheet and bake for about 35 mins until puffed up and golden. Leave to cool slightly and enjoy warm.

1/4 pound thinly sliced black forest deli ham
1 medium pear, thinly sliced and divided
1/4 cup chopped walnuts, toasted
2 tablespoons crumbled blue cheese

  • Preheat air fryer to 400°. On a lightly floured surface, unroll pizza crust into a 12-in. square. Cut into 4 squares. Layer ham, half of pear slices, walnuts and blue cheese diagonally over half of each square to within 1/2 in. of edges. Fold 1 corner over filling to the opposite corner, forming a triangle; press edges with a fork to seal., In batches, arrange turnovers in a single layer on greased tray in air-fryer basket; spritz with cooking spray. 8 ounces deli ham, thinly sliced
4 ounces swiss cheese, thinly sliced
1/2 yellow onion, cut into thin rings

Steps:

  • Heat oven to 400 F.
  • Roll the pizza dough into a 14 inch circle and cute into 8 triangles.
  • Stack a piece of ham, cheese, and onion on the bottom of each triangle and roll the dough up around the filling. (Some of the filling will stick out the ends.).

Here's an easy veriation of Chicken Cordon Blue. When my daughter was a teenager I got her a cook book as a joke, this recipe was one that we have used many times from that book.

6 slice prosciutto ham
6 slice mozzarella cheese
6 skinless, boneless chicken breast halfes, pounded to 1/4 inch thickness
1 Tbsp vegaable oil
1/4 c dry white wine
2 Tbsp chopped parsley

Steps:

  • 1. Place 1 slice of prosciutto and 1 slice of cheese on each flattened chicken breast. Fold in half. Secure with wooded tooth pick or small skewers.
  • 2. In a large frying pan , heat oil over medium heat. Add chicken and cook 3-4 minutes on each side., until chicken is barly opaque throughout. Add wine and simmer 5 minutes. Remove to a serving platter, discard tooth picks, and garnish with parsley.

6 tablespoons pineapple preserves
1 teaspoon curry powder
3 ounces sliced ham
3/4 cup grated gruyere cheese
1 beaten egg

Steps:

  • On a floured surface roll 1 pastry sheet into a 16 inch square, and cut into 4 inch squares.
  • Mix the pineapple preserves with the curry power and spread in each square leaving a 1/4 inch border. Divide the cheese and ham over the spread in each square.
  • Brush the edges with the beaten egg and fold into triangles. Seal edges with a fork and brush with egg mixture.
  • Preheat oven.
  • Bake at 400 F on an ungreased baking sheet 10-12 minutes until golden brown.
  • Mine baked a bit faster so I would keep an eye on them after 8 minutes.
