This hearty make-ahead breakfast is infused with Dijon mustard and bakes up to a fluffy, golden finish.

1 tablespoon unsalted butter, room temperature
10 large eggs
2 1/2 cups whole milk
1 tablespoon Dijon mustard
1 teaspoon smoked paprika
1 teaspoon salt
1 loaf bread, Pullman or sandwich style, cut into 1-inch pieces
1 pound boiled or baked deli ham, chopped
5 scallions, chopped (1/2 cup)
8 ounces sharp cheddar, shredded

Steps:

  • Butter a 2 1/2- to 3-quart baking dish. In a large bowl, whisk together the eggs, milk, mustard, paprika, and salt.
  • Place half of the bread in the bottom of a baking dish. Top with half each of the ham, scallions, and cheese. Repeat with a second layer of the remaining ham, scallions, and cheese, pressing down as necessary to fit in the baking pan.
  • Carefully pour the egg mixture over into the bread. Cover and refrigerate overnight.
  • Preheat the oven to 350 degrees Fahrenheit. Pull strata out of fridge and let come to room temperature for 15 minutes. Bake the strata, uncovered, until puffed and lightly golden brown, about 1 hour to 1 hour and 20 minutes. Let rest for 5 minutes before serving.

2 medium red bell peppers, cut into strips
1 cup leek, sliced
3 cups cooked ham, diced
2 cups cheddar cheese, shredded
1 loaf French bread, cut into 1-inch cubes (6 cups)
7 eggs
1 1/2 cups milk
1 tablespoon Dijon mustard
1/2 teaspoon pepper
2 cups Italian cheese blend, shredded

Steps:

  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 10-inch skillet, melt butter over medium-high heat. Add spinach, bell peppers and leeks; cook 4 to 5 minutes, stirring frequently, until crisp-tender. Remove from heat.
  • In baking dish, layer the ham, the spinach mixture, 1 cup of the Cheddar cheese and the bread. In large bowl, beat eggs, milk, mustard and pepper with wire whisk until blended and pour over bread. Sprinkle with remaining Cheddar cheese and the Italian cheese blend. Cover with foil; refrigerate at least 4 hours but no longer than 24 hours (overnight is great).
  • Heat oven to 325°F Bake loosely covered 40 minutes. Uncover; bake about 30 minutes longer or until top is golden brown and knife inserted in center comes out clean.

1 tablespoon butter, plus extra to grease the pan
½ tablespoon olive oil
½ cup yellow onion, diced
8 ounces ham, diced
1 ½ cups asparagus, cut into 1/2-inch pieces
12 eggs
1 ¾ cups milk
1 teaspoon smoked paprika
1 tablespoon Dijon mustard
2 teaspoons kosher salt
1 pinch cayenne pepper
1 loaf challah, cut into 1-inch pieces
8 ounces quality white cheddar cheese (such as Beecher's Flagship)
4 ounces crumbled goat cheese
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 300 degrees F. Lightly butter the inside of a 3-quart casserole dish. Set aside.
  • Heat a medium saute pan over medium-high heat; add butter, olive oil, and onion. Saute for 3 to 4 minutes until translucent, then add the ham. Saute for 1 minute, add the asparagus, and cook for 30 seconds more. Remove from heat and cool.
  • In a medium bowl, beat eggs well and then whisk in milk, smoked paprika, Dijon mustard, kosher salt, and cayenne pepper. Place the challah pieces in a large bowl and add the egg mixture. Let the mixture sit for 10 minutes, tossing occasionally.
  • Put 1/2 of the mixture in the bottom of the prepared casserole dish. Top with 1/2 of the asparagus-ham mixture, 1/2 of the Cheddar cheese, and all of the goat cheese. Cover with the rest of the bread mixture, asparagus-ham mixture, and cheese.
  • Bake in the preheated oven for about 45 minutes or until the internal temperature reads 165 degrees F. Let rest for 15 minutes before serving.

12 slices egg bread
2 cups smoked ham, cut into 1/2 inch cubes (Schneiders Country Naturals smoked ham)
1/4 cup chopped fresh chives
1 tablespoon chopped fresh rosemary
2 cups grated cheddar cheese
1 cup freshly grated parmesan cheese
6 eggs
2 1/2 cups milk
1 tablespoon Dijon mustard
1/4 teaspoon black pepper

Steps:

  • Cook asparagus in a small amount of boiling salted water until tender crisp, about 2 to 3 minutes; drain and set aside.
  • Place 6 slices of bread on the bottom of a greased 9x13-inch (3.5 L) baking dish, cutting the bread if necessary to fit the dish.
  • Sprinkle half of ham, asparagus, chives, rosemary and cheeses over bread. Repeat with second layer ending with cheese.

5 cups French bread cubes
2 cups shredded Gruyere or white Cheddar cheese, (8 oz.)
1/2 cup chopped onion
1/4 cup chopped chives or green onions
8 oz. cooked ham, diced
10 eggs, 4 to start then 6 on top
1-1/2 cups milk

Steps:

  • 1. Bring a large pot of salted water to boiling. Add asparagus; cook 5 minutes or until bright green. 2. In a greased 3-quart baking dish spread half the bread cubes. Top with cheese, onion, chives and half the ham and asparagus. Top with remaining bread. 3. In a bowl whisk together four of the eggs and the milk. Evenly pour over layers in dish. Press down bread pieces into the egg milk mixture with the back of a spoon. Top with remaining ham and asparagus. Cover; refrigerate until ready to bake. 4. Bake, uncovered, in a 325 degrees F oven 30 minutes. With the back of a wooden spoon, press 6 indentations in top of strata. Pour a whole egg into each indentation. Bake 20 to 25 minutes more or until an instant-read thermometer inserted In center of strata registers 170 degrees F and eggs are set. Let stand 15 minutes. 5. Cut into squares to serve. 18 slices of thin sandwich bread
12 slices American cheese
6 green onions, thinly sliced
1/2 lb finely chopped cooked ham (2 C. loosely packed)
6 eggs, slightly beaten
2 1/2 cups milk
1 teaspoon salt
1 teaspoon dry mustard
1 teaspoon paprika
1/2 teaspoon Worcestershire sauce
1/4 teaspoon pepper
6 slices tomatoes
2 tablespoons minced parsley

  • Place 6 slices of the bread in a 13"x9" inch baking pan or dish.
  • Top with 6 cheese slices, half of the onions, and half of the ham.

Pinch freshly grated nutmeg

1 cup Oven-Dried Tomatoes, chopped, recipe follows
1 tablespoon minced flat-leaf parsley
2 teaspoons thinly sliced fresh chives
2 cups shredded extra-sharp Cheddar cheese (about 8 ounces)
1 pound sourdough bread, crust trimmed, cut into 1-inch cubes
1 tablespoon unsalted butter, melted
2 pounds ripe plum tomatoes, cored and cut in half lengthwise
1 teaspoon kosher salt
3 tablespoons extra-virgin olive oil
4 to 5 sprigs fresh herbs, such as thyme, rosemary, oregano, or marjoram

Steps:

  • Butter a 3-quart gratin dish or casserole. Whisk eggs, milk, cream, 1 teaspoon salt, 1/4 teaspoon black pepper, nutmeg, and cayenne pepper in a large bowl. Toss ham, tomatoes, parsley, and chives together in a small bowl.
  • Scatter 1/2 cup of cheese into prepared dish. Layer with 1/3 of bread and half of ham mixture. Repeat. Top strata with a final layer of bread and remaining 1 cup cheese.

½ red pepper, chopped
4-6 oz fresh baby spinach, coarsely chopped
2 cups grated sharp cheddar
¾ cup diced ham
6 eggs
2½ cups milk or half-and-half
2 tsp Dijon mustard
¾ tsp salt
¼ tsp pepper
1 tsp dried basil
Handful cherry tomatoes, halved [optional

Steps:

  • Spray a 9 x 13 casserole with cooking spray. Melt butter in large skillet. Sauté onion and pepper and over medium-low heat until soft [about 5 minutes]. Add the spinach, cover pan, and cook until wilted, stirring occasionally. Scatter half the bread cubes in casserole. Spoon spinach mixture over bread, then sprinkle on half of the cheese and all of the ham. Scatter the rest of the bread cubes over layers and sprinkle with the rest of the cheese. Whisk together eggs, milk, mustard, salt, pepper, and basil. Pour liquid evenly over the casserole. Scatter tomatoes over top. Press down bread cubes slightly to moisten. Cover with plastic wrap and refrigerate for at least 2 hours or overnight. Remove plastic wrap and bake at 350° for 45 to 55 minutes until set. Allow to cool at least 10 minutes before serving.

I've served this both for breakfast/brunch, as well as for dinner with a salad. It's very versatile, and you can do it with chicken instead of the ham, if you prefer.

4 slice bread, cubed
2 oz cheese, cut in small cubes (i like to use swiss cheese, w/ the ham, but you can use any cheese that suits your tastebuds).
3/4 c ham, cubed
2 Tbsp butter
3 eggs
1 c milk
1/4 tsp dry mustard
1/4 tsp salt
1/2 tsp onion flakes
2 oz shredded cheddar cheese
paprika

Steps:

  • 1. Lightly grease a small baking dish, such as a 8x8" pan, or a small casserole dish. Layer half of the bread cubes on the bottom. Layer the cheese cubes and the ham over the bread. (Note: At this point, you can layer some chopped spinach over the ham/cheese, if desired ... but make SURE the spinach is well-drained, and squeezed VERY dry! Top with the remaining bread cubes. Dot with butter.)
  • 2. In a small bowl, beat together the eggs, milk, seasonings, and onion flakes.
  • 3. Pour the milk mixture over the entire bread mixture. Sprinkle shredded cheese on top. Sprinkle with paprika.
  • 4. Refrigerate overnight, or at least a couple of hours.
  • 5. Preheat oven to 375°. Bake for 45 minutes, until set. Serve hot, with a salad, if making for dinner. If you're using this for a brunch, some fresh fruit on the side is nice, like pineapple or a fresh fruit salad.
  • 6. Note: if you really like cheese, add extra. I do, and nothing's better than a "little extra cheese". :o)

8 slices whole wheat bread
4 slices swiss cheese or 4 slices cheddar cheese
4 slices good quality black forest ham
1/4 cup butter
6 eggs
1 cup skim milk
1/2 teaspoon seasoning salt
1/2 teaspoon white pepper
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
1 dash Tabasco sauce (generous sprinkle, to taste)
1 green onion, finely chopped

Steps:

  • Preheat .oven to 350°F.
  • Put 0ne slice each of Cheese & ham on 4 slices of bread.
  • top with remaining bread. (4 sandwiches).
  • Butter both sides of sandwich.
  • Using a serrated knife cut each sandwich into 12 cubes.
  • Lightly pack 4 cubes into each of 12 greased muffin cups.
  • Whisk together remaining ingredients.
  • Spoon over cubes. Let stande 15 minute.
  • Bake for 30 minutes.
  • After baked muffins have stood for 15 minutes remove from cups.

Sun-dried Tomato, Ham and Cheese Strata image

Gruyere, ham and sun-dried tomato mingle with bread and eggs and bake into a slightly puffed and golden-brown casserole.

1 tablespoon unsalted butter, melted, plus more for the baking dish
12 large eggs
2 cups half-and-half
Kosher salt and freshly ground black pepper
1 cup diced ham
1 cup sun-dried tomatoes (not packed in oil), chopped
2 tablespoons chopped fresh chives
2 cups grated Gruyere (about 8 ounces)
One 1-pound loaf white bread, crust trimmed, cut into 1-inch cubes
Coat a 3-quart baking dish with butter.

Steps:

  • Whisk together the eggs, half-and-half, 1 teaspoon salt and 1/4 teaspoon pepper in a large bowl. Toss together the ham, sun-dried tomatoes and chives in a small bowl.
  • Sprinkle 1/2 cup of the Gruyere into the bottom of the prepared dish. Layer with 1/3 of the bread cubes and half of the ham mixture. Repeat the Gruyere, bread and ham layers, ending with a third layer of bread cubes and then topping with the remaining 1 cup Gruyere.
  • Pour the egg mixture over the top and gently press with a spatula to moisten the bread layers. Drizzle with the melted butter, cover with plastic wrap and refrigerate for at least 1 hour or up to overnight.
  • Preheat the oven to 350 degrees F.
  • Remove the plastic wrap from the dish and bake the strata, uncovered, until slightly puffed and golden brown, about 45 minutes. Let stand at least 10 minutes before slicing.

This easy casserole strata recipe makes for a hearty Thanksgiving breakfast - an egg dish loaded with ham cheese and croissant.

6 croissants, split
6 slices (3/4 to 1 oz each) Swiss cheese
2 cups chopped cooked ham (from deli)
8 eggs
1 1/2 cups milk
2 teaspoons Dijon mustard
1/4 teaspoon salt
1/4 teaspoon pepper
4 oz Gruyère cheese, shredded (1 cup)
Chopped fresh chives, if desired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In baking dish, arrange croissant bottoms, cut sides up, in single layer. Top each with 1 slice Swiss cheese. Sprinkle with ham. Cover with croissant tops, cut sides down.
  • In large bowl, beat eggs, milk, mustard, salt and pepper with whisk. Pour over croissants. Sprinkle with Gruyère cheese.
  • Bake 35 minutes or until browned and set. Garnish with chives. Serve immediately.

  • Place bread cubes in a greased 13x9-in. baking dish. Layer with ham, green pepper and cheese. Beat eggs, milk, horseradish and mustard; pour over all. Cover and chill 8 hours or overnight. 2 cups shredded Italian cheese blend (8 oz)

Steps:

  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 10-inch skillet, melt butter over medium-high heat. Add spinach, bell peppers and leeks; cook 4 to 5 minutes, stirring frequently, until crisp-tender. Remove from heat.
  • In baking dish, layer ham, spinach mixture, 1 cup of the Cheddar cheese and the bread. In large bowl, beat eggs, milk, mustard and pepper with wire whisk until blended; pour over bread.
