So easy and so good. I usually saute the ham before adding it to the omelette so it gets crispy and more flavorful.

2 teaspoons vegetable oil
4 slices deli ham, chopped into small pieces
2 eggs
2 teaspoons chopped fresh chives, divided
¼ teaspoon salt
freshly ground black pepper to taste
¼ cup shredded Cheddar cheese

Steps:

  • Heat oil in a skillet over medium heat. Add ham and cook until browned and crispy, stirring frequently, about 7 minutes.
  • Beat eggs with 1 teaspoon chives, salt, and pepper in a small bowl and add to skillet, tilting skillet to distribute egg evenly on bottom of skillet. Cook until omelette has set at the edges. Sprinkle Cheddar cheese on top and fold omelette in half. Flip and cook until egg is entirely set and cheese inside has melted, 30 seconds to 1 minute. Slide onto a plate and sprinkle with remaining 1 teaspoon chives.

3 eggs, beaten
1/2 cup mushroom, sliced
1/4 cup ham, sliced
2 -4 tablespoons cheddar cheese, grated

Steps:

  • Beat eggs, add mushrooms and ham.
  • Heat frying pan, and coat with cooking spray or oil.
  • Add egg mixture to hot pan and cook until almost set. Flip over and when egg is set, top with cheese. Cook until cheese is melted.
  • Serve with hashbrowns, toast, or rice.
  • Sometimes I even add chopped green onion, or any color pepper we have on hand.

2 eggs, separated
1 tablespoon milk
1/2 cup baby spinach leaves
2 slices shaved ham, torn roughly
1/4 cup grated lowfat swiss cheese

Steps:

  • Place the egg yolks in a bowl with the milk and combine. In a separate bowl, whisk the egg whites to medium soft peaks. Gently fold into the egg yolk mixture. Set aside (do not allow to sit for too long).
  • Spray a small non-stick frying pan with oil spray and place over medium heat. Add the baby spinach and cook for 1-2 minutes or until wilted. Remove from pan and wipe pan clean. Spray pan again and return to the heat.
  • Pour in the egg mixture and cook for 2-3 minutes or until surface is nearly firm. Place the ham, spinach and cheese over half the omelette, then fold over the other side to enclose the filling. Serve immediately. Repeat ingredients and method for additional omelettes.

This recipe is from Cooking.com.When I saw it I knew it would be a great breakfast for Sunday breakfast at church. I added black pepper.You could add anything to these and I'm sure they would be good.

8 eggs
1/4 c milk
1/4 t salt
1/8 t. black pepper
3/4 c diced,cooked ham
1/2 c plus 2 t. shredded cheddar cheese
minced fresh chives for garnish

Steps:

  • 1. Preheat oven to 350 degrees F. Spray 12-cup muffin tin with nonstick spray. In a large bowl, whisk together the eggs, milk,salt & pepper. Equally divide ham and 1/2 cup of cheese between the muffin cups. Reserve the extra 2 tablespoons of cheese for later. Pour egg mixture on top of the cheese and ham, so that muffin cups are a little more than 1/2 full. (They will rise like a souffle as they bake, then deflate when you pull them out of the oven.) Bake for about 20 minutes until eggs are set, then remove from oven. Sprinkle remaining 2 tablespoons of cheese over the muffins, then bake for a few minutes longer until cheese is melted. Sprinkle with chives and serve warm, using a butter knife to remove the muffins from the cups.

1 cup shredded cheddar cheese
1 cup chopped ham
chopped chives, for garnish (optional)

Steps:

  • Preheat oven to 400° F. Spray a 9x9 inch baking dish with cooking spray.
  • In a large bowl, whisk eggs and milk until combined. Stir in cheese and ham. Pour mixture into the prepared baking dish.
  • Bake, uncovered, for 25 minutes or until golden brown and cooked through. Remove from oven. Let stand 5 minutes before slicing and serving. Serve with chives, if desired.
  • Notes
  • Yields: 4 to 6 servings.
  • This recipe easily doubles. Use a 9x13 inch baking dish when doubling.
